3 lbs chicken wings
2 cups mango nectar
1 tablespoon light corn syrup
3 tablespoons red monkey mango habanera seasoning
1/4 cup cayenne, hot wing sauce
1/3 cup melted butter
celery and carrot sticks

Steps:

  • Sauce: heat and let it simmer, stir occasionally and reduce to about 1/4 cup volume. Add cayenne sauce and melted butter. Mix.
  • deep fry wings until fully cooked. Toss in sauce, serve Hot with celery and carrot sticks.

14~16 chicken wings
2 habaneros, deseeded (alter for spiciness)
1 cup soy sauce
3 garlic cloves
1 small piece (or 1 tsp) ginger
1/2 pear or apple (or 2 tbsp brown sugar)
1/2 small onion
2 tbsp honey
salt & pepper (pre-rub)
scallions slices (garnish)
sesame seeds (garnish)

Steps:

  • 1. Apply the salt and pepper on the chicken wings for the pre-rub. Let sit at room temperature for 15 minutes and preheat oven to 375 degrees. 2. Meanwhile, prepare the marinade/glaze by adding all ingredients (minus the honey) to a food processor. Pulse until smooth and completely mixed through. Transfer to a saucepan and add the 2 tbsp honey. Bring to a boil until thickened, 5 minutes. Keep ready until basting. 3. Bake the wings for about 30 minutes while basting them frequently every 10 minutes or so. 4. After 30 minutes, set to broil and let cook for another 15~20 minutes while basting with remaining glaze. Broiling near the end creates crispier and crunchier wings that we personally enjoy. 5. When wings are charred and slightly burned, transfer to a serving plate. Let cool for several minutes and garnish with thinly sliced scallion and/or toasted sesame seeds. Enjoy!!

2 lbs chicken wings
1 (18 ounce) bottle honey teriyaki barbecue sauce
1/4 cup fresh honey
2 tablespoons liquid smoke
1 1/2-2 inches fresh ginger, grated
6 cloves garlic, crushed
8 habanero peppers, chopped
4 chili peppers, your choice,chopped
3 tablespoons fresh horseradish

Steps:

  • Cut wings into thirds, and discard the tips.
  • There should be about 36 pieces.
  • In a medium saucepan combine barbecue sauce, Worcestershire sauce, honey, Liquid Smoke seasoning, ginger, garlic, habanero peppers, chile peppers and horseradish.
  • Stir all together, and simmer over low heat for 1 hour.
  • Put chicken wings in a large glass bowl, and cover with 3/4 of the sauce.
  • Cover, and refrigerate for at least 6 hours.
  • Preheat grill for low heat.
  • Lightly oil grate.
  • Remove chicken from marinade, and place on grill.
  • Cook over low heat for 45 minutes to 1 hour, turning occasionally.
  • *WARNING: Wear gloves, and do not let the oil get anywhere near your eyes.
