HOT FUDGE FROSTING

This fudgy frosting will keep for two weeks in the refrigerator.

3 (1 ounce) squares unsweetened chocolate
2 tablespoons butter
½ cup light corn syrup
½ cup white sugar
¼ cup milk
1 teaspoon vanilla extract

Steps:

  • In a saucepan on very low heat, carefully melt the chocolate and butter, stirring constantly. Add the corn syrup, sugar, and milk. Increase heat to medium-high, bring to a boil, and cook for 5-8 minutes, stirring only occasionally, until the mixture becomes a candy-like, gooey fudge. Remove from heat and stir in vanilla. Let chill to spreadable consistency.

Originally the recipe was used as frosting for my grandma's chocolate mayonnaise cake, but also works well as a hot fudge sauce for ice cream. It's not overpowering in sweetness or flavor and I love the smooth texture. You decide or do what I did and try both. Cooking, prep, and yield is approximate.

1 1/2 cups sugar
4 tablespoons cocoa
5 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
1 teaspoon vanilla
2 tablespoons butter

Steps:

  • Stir first five ingredients over medium low heat until thick, when it just starts to bubble.
  • Remove from heat.
  • Stir in vanilla and butter.
  • If using as frosting let cool.
