This IS my favorite meal! I love this! My mother would make this and so this is her version. I know others would add all kinds of things to this casserole but my mother made simple meals for seven and so I also like it simple as well as I like the dogs to soak up the kraut taste. I always eat this with boiled potatoes, green...

1 package 6 to 8 hotdogs, i use all beef ( i figure 2 each person)
2 (14 oz) cans sauerkraut, use more if feeding more

Steps:

  • 1. Place half of the saurkraut with juice in a baking dish. Add hotdogs, as many as you will feed, on top of sauerkraut. No need to grease pan.
  • 2. Add second half of sauerkraut with juice on top of placed hotdogs. Baking dish size depends on how many people you are serving and dogs being used. If 6-8 dogs, use a 13x9. Make sure to have enough kraut to cover. Use a smaller baking dish if only making for one or two.
  • 3. Bake at 350 degrees for 35-40 mins. I like to see little tinges of browning on the tops of the sauerkraut. If the dogs split open a little, no worries.
  • 4. I do highly recomend pairing this with boiled potaoes with butter on top, green beans and applesauce as they just go so well together! You will not believe the flavor of the hotdogs! Sometimes I will put a little mustard on the hotdogs.
  • 5. You can also use sausages instead of hotdogs. You can also put the dogs and the kraut in a bun with mustard on top and it is delicous with frys also. The flavor of the dog cooked in the kraut juice...its just to die for, if you love sauerkraut as I do!

Pork Sauerkraut and Dumplings was always on my Grandmother's list for New Years Day. This traditional recipes uses the Pigs Knuckles instead. You can also use Hot Dogs. Put Hot Dogs into hot sauerkraut. If using Vegetarian Hot Dogs put in when you put the dumplings in. This recipes is NOT my Grandmothers. It is from: Pennsylvania Dutch Cook Book Fine Old Recipes, Culinary Arts Press, 1936.

1 egg, well beaten
1 cup flour
1 1/2 tablespoons butter, melted
1/2 cup water
1/2 teaspoon salt
2 lbs pork roast or 8 -12 hot dogs
2 1/2 lbs sauerkraut
1 teaspoon nutmeg (optional)
1 teaspoon baking powder (optional)

Steps:

  • Make sure the pigs knuckles if using is clean and scraped. Pork can also be used. Add to taste. 2 to 3 pounds if using pork.
  • Combine with the sauerkraut and cover with cold water.
  • Cook slowly until the knuckles [or pork] are tender and well done.
  • To the beaten egg, add the melted butter and water. Then sift the flour, salt and nutmeg [we did NOT use this. I am not sure how it will taste] together and combine with egg mixture. If using the baking powder put it in the dumpling mix.
  • Beat thoroughly. If necessary, add more flour to make batter stiff enough to drop from spoon. You want sticky drop cookie consistency. You will need to PUSH it off the spoon but it should come off easily.
  • Fifteen minutes before serving, drop the batter by spoonfuls into the hot sauerkraut. Cover pot tightly and serve as soon as dumplings are cooked. DO NOT PEEK. DO NOT OPEN THE POT. If you do you will have flat rocks.
  • Rule of thumb use 1 tsp baking powder for each egg. Use water to stiffen. You might want to add it a tbsp at a time until dough is right consistency.
  • Make sure the pork is cooked before adding the dumplings. IF is shreds when you cook it? It's done.

Seafood Hot Dogs with Sweet Mustard Sauerkraut image

3 egg whites
1/2 pound scallops, chopped
Salt and freshly ground black pepper
2 cups heavy cream
1/2 pound cleaned and deveined shrimp, chopped
1 pound sea bass fillet, cut into 1/4-inch cubes
1 pound salmon fillet, cut into 1/4-inch cubes
Cayenne pepper, to taste
Pork casings, cleaned and soaked
Fish stock or water, for poaching
1/4 cup canola oil
1 medium red onion, diced
2 cups well drained sauerkraut
4 tablespoons sweet mustard
4 teaspoons chopped fresh tarragon leaves

Steps:

  • Cook's Note: all ingredients should be as cold as possible.
  • In a blender combine the egg whites, scallops, and salt and pepper, to taste. Blend until a puree is formed, then slowly add the heavy cream. When thoroughly mixed, pour into a metal bowl and put over a bowl of ice water.
  • Add the shrimp, sea bass and salmon to the scallop mixture and gently fold to combine.
  • Cook's Note: At this point you can do a test with the finished mixture by bringing a small saucepan of water to a boil over medium heat and adding a small amount of the mixture. Reduce the heat and simmer until the mixture floats to the top. Cool it in a bowl of ice water and taste. This will tell you if you've seasoned it correctly before you stuff the mixture into the casings.
  • Stuff the seafood mixture into the pork casing, and tie into 4-inch links. In a medium saucepan, bring the fish stock or water to a simmer over low heat. Add the links and poach gently until cooked through.
  • In a large skillet, over medium heat, heat the oil, then add the red onion and cook until translucent. Add the sauerkraut and mustard and cook for 4 minutes, then add the chopped tarragon.
  • To serve, add a little sauerkraut to each plate and top with 2 seafood hot dogs.

24 -30 ounces fresh sauerkraut, in a bag
1/2-1 cup water
1 package of refrigerator biscuit

Steps:

  • Empty the bag of fresh sauerkraut into a deep pan. Add water and hot dogs. Top this off with the tube of refrigerator bisquits. Bring to a boil. Reduce heat to medium and cover. Cook for about 15 minutes. Bisquits are now fluffy like dumplings. Serve with mashed potatoes. Enjoy!

2 tablespoons vegetable oil
1 pound hot dogs
14 ounce can sauerkraut (drained)
3/4 teaspoon Koshor salt
1/4 teaspoon black pepper (freshly ground)
dash red pepper flakes (optional)

Steps:

  • Heat oil over medium high heat.
  • Turn down to medium and add drained sauerkraut and hotdogs in a single layer.
  • Sprinkle brown sugar, salt and peppers over the top of the sauerkraut. Cover and cook for 5 minutes.
  • Use tongs to stir sauerkraut together and rotate hot dogs.
  • Cook another 3 - 5 minutes until sauerkraut is lightly browned and hot dogs are heated through.

This is so simple to make but tastes so good! My mom made this for us when we were younger and still a favorite of mine. Smoked sausage could also be used but I prefer the hot dogs. Serve this over mashed potatoes for total comfort food.
