EASY CHICKEN AND WILD RICE HOT DISH
The original recipe was prepared by Amy Thielen, in the October issue of Food Network magazine. I have substituted some ingredients due to unavailability and high cost. Green onions for leeks, evaporated milk and water for whole milk, sour cream for fresh cream and Rice a Roni Long Grain & Wild Rice for natural wild rice. This substitution saves time.

- Empty contents of Rice a Roni box, 2 tblsps. butter, seasoning packet,.
- 1 2/3 cup water, bay leaf and chicken broth base into large frying pan. Bring to a boil, stir and cover. Turn heat to low. Cook 25 minutes.
- Remove bay leaf.
- Pour into large bowl and cover. Set aside.
- Preheat oven 375*.
- In frying pan, heat 2 tblsp. butter. Add chopped green onions, celery, salt and pepper. Saute until slightly golden.
- Stir in flour, evaporated milk, water. Wisk until mixed and creamy, about five minutes. Take off heat.
- Add sour cream, thyme, nutmeg. Mix.
- Add vegetable cream, chicken, half of the cheese to bowl.
- Coat 9 X 13 pan with remaining butter. Pour rice chicken cheese mix into.
- pan. Top with remaining cheese. Bake 25 minutes.
- Shake crackers in bag with olive oil.rack.
- Take out of oven, add crackers to the top. Bake 15 minutes until golden.
- Note: This dish can be baked without crackers. Then reheated with crackers on top, until hot and browned.

CREAMY CHICKEN & BUTTERNUT SQUASH HOT DISH
Cream of chicken soup bring this dish together fast and saves the extra step of making a sauce for this dish. Use the remaining chicken poaching liquid just like you would stock in any of your favorite dishes. Refrigerate for up to 3 days or freeze for up to a month until ready to use.

- In a medium pot, cover the chicken thighs and drumsticks with the stock and bring to a boil over medium-high. Reduce to medium and simmer until the chicken is cooked through, about 15 minutes. Using tongs or a slotted spoon, remove chicken to a plate and let cool slightly. Reserve the poaching liquid. Discard skin and bones and shred chicken meat.
- Preheat the oven to 425. In a large pot, melt butter over medium-high. Add leeks, butternut squash, celery, and fennel, and cook over medium-high, stirring occasionally, until lightly browned, about 5 minutes.
- Stir picked chicken, Cream of Chicken soup, 1 cup of the reserved poaching liquid (save remaining stock for another use), peas, and parsley into the cooked vegetables. Season with salt and pepper. Scrape chicken mixtures into a 9-by-13-inch baking dish.
- Spread the tots over chicken mixture. Bake until bubbling and tots are golden, about 45 minutes. Serve with hot sauce.

- 1. Prepare the homemade cream of mushroom soup. OR Whisk together the canned soup with 3/4 soup can of milk very well. Set aside.
- 2. Spray a 9x13 pan, dump the beans into the pan, sprinkle lightly with sea salt and pepper, if desired. Scatter prepared chicken over the green beans, then sprinkle 1/2-1c cheese over the chicken, combine the two rices and spoon over the cheese, then pour soup over rice, sprinkle remaining cheese over top. It will seem very soupy, it will come together very nicely. :) Just look at my photo :o) Cover with foil and bake at 350 for 30 minutes, remove foil and bake another 10-15 min.

CHEESY CHICKEN HOT DISH
Great for a winter all in one dish meal. I tend to make this when I have leftover Chicken. Although Cheddar is my favorite cheese I would like to try a swiss with this. You could add some crumbled bacon to enhance the flavor of the Cheese. You can experiment with this changing cheeses and or soups. Anyhow I made this tonight...

- 1. Put water on to cook noodles. and cook them according to package directions. Drain.
- 2. Cook carrots in pan with just enough water to cover them. Put lid on pot and simmer on low until almost done. about 15 minutes.
- 3. Add celery cook about 5 minutes, then add peas. Simmer all for another 5 minutes. Do not drain.
- 4. Dump the veggie mix into a very large bowl. Add the soups undiluted and the sour cream. Stir to combine.
- 5. Add NOODLES, Chicken, bacon and cheese. Stir to combine.
- 6. Pour into a 9x13 in pan. Cover with tin foil and set in the fridge for 1 hour or overnight.
- 7. Heat oven to 350. Bake covered at 350 for 35 minutes
- 8. Mix the topping together and at 35 minutes remove the casserole and sprinkle the mix evenly over the the casserole. I like to sprinkle shredded parmesan to top of this
- 9. Bake uncovered at 350 for another 30 minutes or until browned on top and heated evenly.
CHICKEN HOT DISH GIADA DE LAURENTIIS
Steps:
- Sprinkle the chicken with salt and pepper. Heat the oil in a heavy large skillet over high heat. Add the chicken and cook just until brown, about 4 minutes per side. Transfer the chicken to a plate and cool slightly. While the chicken cools, melt 2 tablespoons of butter to the same skillet over medium-high heat, then add the onion and saute until tender, about 2 minutes. Add the mushrooms and garlic and saute until the mushrooms are tender and the juices evaporate, about 12 minutes. Add the wine and simmer until it is reduced by half, about 4 minutes. Stir in the mascarpone and mustard. Cut the chicken breasts crosswise into 1/3-inch-thick slices. Return the chicken and any accumulated juices to the skillet. Simmer, uncovered, over medium-low heat until the chicken is just cooked through and the sauce thickens slightly, about 2 minutes. Stir in the chopped parsley. Season the sauce, to taste, with salt and pepper. Meanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, stirring occasionally, about 8 minutes. Drain. Toss the fettuccine with 3 tablespoons of butter and season, to taste, with salt and pepper. Swirl the fettuccine onto serving plates. Spoon the chicken mixture over top. Garnish with parsley sprigs and serve.

- In bowl, combine cooked and shredded chicken, Rotel tomato/green chilies, soups and onion. Set aside.
- Layer bottom of greased 9x13 baking dish with tortillas (however many it takes). You may need to cut tortillas, but they don't have to fit perfectly.
- Spread half the chicken mixture on top of tortillas.
- Cover with 1 cup cheddar cheese.
