1/2 cup buffalo sauce (or 1/3 cup hot sauce + 2 tablespoons melted butter)
1 cup shredded lettuce
1/4 cup ranch or blue cheese dressing
4 medium flour tortillas
Optional fillings: tomato (onion, shredded cheese)

Steps:

  • In a large bowl, combine the cooked chicken and buffalo sauce until the chicken is fully coated with the sauce.
  • Lay out the flour tortillas and divide the chicken evenly among the tortillas. Top the chicken with lettuce, and ranch dressing. Fold in the sides of the tortilla and roll the wrap burrito-style. Enjoy warm or cold!

½ cup mayonnaise
¼ cup finely chopped seedless cucumber
1 tablespoon honey
½ teaspoon cayenne pepper
ground black pepper to taste
2 tablespoons olive oil
1 ½ pounds skinless, boneless chicken breast halves - cut into thin strips
1 cup thick and chunky salsa
1 tablespoon honey
½ teaspoon cayenne pepper
8 (10 inch) flour tortillas
1 (10 ounce) bag baby spinach leaves

Steps:

  • Mix together the mayonnaise, cucumber, 1 tablespoon of honey, 1/2 teaspoon of cayenne pepper, and black pepper in a bowl until smooth. Cover and refrigerate until needed.
  • Heat the olive oil in a skillet on medium-high heat, and cook and stir the chicken breast strips until they are beginning to turn golden and are no longer pink in the middle, about 8 minutes. Stir in the salsa, 1 tablespoon of honey, and 1/2 teaspoon of cayenne pepper. Reduce the heat to medium-low and simmer, stirring occasionally, until the flavors have blended, about 5 minutes.
  • Stack the tortillas, 4 at a time, in a microwave oven and heat until warm and pliable, 20 to 30 seconds per batch.
  • Spread each tortilla with 1 tablespoon of the mayonnaise-cucumber mixture, top with a layer of baby spinach leaves, and arrange about 1/2 cup of chicken mixture on the spinach leaves.
  • Fold the bottom of each tortilla up about 2 inches, and start rolling the burrito from the right side. When the burrito is half-rolled, fold the top of the tortilla down, enclosing the filling, and continue rolling to make a tight, compact cylinder.

There are so many wraps but I think you will find this one a bit different, very hearty and tasty. It can be a "Do ahead" recipe by preparing all the ingredients ahead of time, place them in the fridge, assemble just before lunch. I like to use a Spring mix Lettuce that has Arugula in it but Iceberg lettuce is fine. The eggs are optional but they do add flavor.

4 1/2 cups cold cooked chicken, shredded
6 cups lettuce, shredded
1 cup pecans, cut in half -not chopped
9 tablespoons reduced-fat mayonnaise
3 tablespoons Dijon mustard
6 tablespoons red onions, chopped quite fine
15 cherry tomatoes, diced
6 hard-boiled eggs, cold, chopped (optional)
2 jalapenos, seeded, membrane removed, finely minced (use more if you like hot & spicy)
salt & pepper
6 large whole wheat tortillas (sun dried tomato or flour)

Steps:

  • Mix together the mayo, Dijon, tomato, onion, eggs and jalapeño.
  • Season with salt & pepper.
  • Divide the mixture evenly and spread it on the 6 tortillas covering the whole surface.
  • Sprinkle on the lettuce and pecans evenly on each tortilla.
  • Place your shredded chicken on the edge closest to you and roll the tortilla.
  • Use a toothpick or two to hold together if you find it necessary.
  • Cut in half and arrange nicely on a platter.

2 tbsp vegetable oil
6 boneless, skinless chicken thighs, cut into bite-sized pieces
1 large onion, thinly sliced into half-moons
2 garlic cloves, finely chopped
3cm piece ginger, peeled and finely chopped
½ tsp ground cumin
½ tsp garam masala
1 tbsp tomato purée
1 red chilli, thinly sliced into rings
juice ½ lemon
4 rotis, warmed
½ small red onion, chopped
4 tbsp mango chutney or lime pickle
4 handfuls mint or coriander
4 tbsp yogurt

Steps:

  • Heat the oil in a large frying pan over a medium heat. Add the chicken, brown on all sides, then remove. Add the onion, garlic, ginger and a pinch of salt. Cook for 5 mins or until softened.
  • Increase the heat to high. Return the chicken to the pan with the spices, tomato purée, chilli and lemon juice. Season well and cook for 10 mins or until the chicken is tender.
  • Divide the chicken, red onion, chutney, herbs and yogurt between the four warm rotis. Roll up and serve with plenty of napkins

1 aubergine, trimmed and sliced into 5mm rounds
½ red onion, thinly sliced
1 tbsp olive oil
½ tbsp cider vinegar
2 tbsp natural yogurt
1 tbsp tahini
1 small garlic clove, crushed
1½ tsp cumin powder
½ tsp ground coriander
1 tsp paprika
2 chicken breasts
1 tbsp vegetable oil
4 flour tortilla wraps
4 tomatoes, thinly sliced
1 avocado, stoned, peeled and sliced

Steps:

  • Heat a dry griddle pan over a medium-high heat, and fry the aubergine rounds for 2 mins on each side until lightly coloured and char lines appear (you may need to do this in batches). Transfer to a bowl with the onions, then toss with the olive oil and vinegar.
  • Combine the yogurt, tahini and garlic in a bowl with 1 tbsp water to loosen. Mix the cumin, coriander, paprika and some salt and pepper in a small bowl. Put the chicken on a board, cover with baking parchment and bash with a rolling pin to an even 1½cm thickness. Rub all over with the spice mix, leave for 10 mins, then fry in the oil for 12 mins, flipping after 8 mins. Transfer to a board, rest briefly, then slice.
  • Warm the wraps in a dry frying pan, then fill with the tomatoes, aubergine and onion mix, avocado, chicken and tahini dressing.
