4 cups light chocolate soymilk
2 oz semisweet baking chocolate, chopped
2 teaspoons vanilla
1 teaspoon ground cinnamon
Frozen fat-free whipped topping, thawed, if desired

Steps:

  • In 2-quart saucepan, heat soymilk, chocolate, vanilla and cinnamon over low heat, stirring constantly, until chocolate is melted and mixture is smooth.
  • Heat to boiling over medium-high heat, stirring constantly; reduce heat to low. Simmer 4 minutes, stirring frequently, to blend flavors.
  • Garnish each serving with whipped topping.

2 1/2 cups whole milk
2 cups half-and-half
4 ounces bittersweet chocolate, chopped
4 ounces milk chocolate, chopped
1 tablespoon sugar
1 teaspoon pure vanilla extract
1 teaspoon instant espresso or coffee powder
4 to 5 vanilla beans or cinnamon sticks, for garnish

Steps:

  • Heat the milk and half-and-half in a saucepan on medium heat to just below the simmering point. Remove the pan from the heat and add both chocolates. When the chocolates are melted, add the sugar, vanilla extract, and espresso and whisk vigorously. Reheat gently and serve immediately. Use a vanilla bean or cinnamon stick to garnish each serving.

Mini marshmallows, for garnish

Steps:

  • In a medium saucepan, bring the milk to a simmer over medium heat. Reduce the heat to medium low and add the cinnamon sticks and Mexican chocolate. Simmer until fragrant and the chocolate is melted, about 5 minutes; remove the cinnamon sticks. Serve in mugs topped with mini marshmallows.

3/4 cup hot milk

An ancho chile lends just a touch of mild heat to hot chocolate.

4 cups milk
1 ancho chile, cut into 4 pieces, seeds removed
2 cinnamon sticks, plus 4 for garnish
4 ounces semisweet chocolate, roughly chopped

Steps:

  • In a medium saucepan over medium heat, combine milk, ancho chile, and cinnamon; heat just until milk begins to steam, 5 to 6 minutes. Remove from heat; let steep, covered, 10 minutes.
  • Place chocolate in a medium bowl; strain milk mixture into bowl, whisking to combine thoroughly. Discard cinnamon sticks. Return mixture to saucepan; continue whisking until chocolate has completely melted. Divide among four mugs, and serve immediately, garnished with remaining cinnamon sticks.

Cinnamon lends warming complexity to this comforting, creamy cold-weather drink. For a little pick-me-up, a splash of rum certainly wouldn't hurt.

4 (3") cinnamon sticks
1/8 teaspoon kosher salt
2 1/2 cups whole milk, divided
2 teaspoons cornstarch
2 ounces high-quality white chocolate, chopped or white chocolate chips (about 1/3 cup)
1/2 teaspoon vanilla extract
Unsweetened whipped cream and ground cinnamon (for serving)

Steps:

  • Toast cinnamon sticks in a medium dry saucepan over medium heat until fragrant, about 1 minute. Add salt and 2 cups milk and bring to a simmer. Remove from heat and let steep 10 minutes.
  • Whisk cornstarch and remaining 1/2 cup milk in a small bowl. Add to warm milk mixture and heat over medium. Bring to a simmer and cook, stirring constantly, until warmed through, about 1 minute. Remove from heat and add chocolate and vanilla. Let sit until chocolate is melted, about 30 seconds, then stir to combine. Discard cinnamon sticks.
  • Divide hot chocolate between mugs. Top with whipped cream and dust with ground cinnamon.
