The best chocolate lava cake recipe I've ever had. Serve topped with powdered sugar or vanilla ice cream.

½ cup butter, cut into 8 pieces
6 ½ (1 ounce) squares semisweet chocolate, finely chopped
3 eggs, room temperature
⅓ cup white sugar
4 teaspoons unsweetened cocoa powder
2 tablespoons all-purpose flour
1 pinch salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease and flour four 6-ounce ramekins.
  • Place chocolate and butter in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Combine eggs and sugar in a large bowl; beat with an electric mixer until pale and thick, about 5 minutes. Mix in melted chocolate, cocoa powder, and flour until combined. Pour batter into the prepared ramekins and place on a baking tray.
  • Bake in the preheated oven until the sides are set but the middle is still jiggly, 10 to 13 minutes. Let cool for 5 minutes before serving.

Chocolate lava cakes are delicious single portioned chocolate cakes filled with gooey melted chocolate! Ready in just 15 minutes, these molten lava cakes happen to be vegan and gluten free!

1/2 cup all purpose flour (gluten free, if necessary)
1/2 cup sugar of choice (white, brown, or sugar free sub)
1/4 cup cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup oil (vegetable, canola, etc. * See notes)
1 teaspoon vanilla extract
3/4 cup + 2 tablespoons milk of choice (I used unsweetened almond milk)
4 pieces chocolate (scant 1/4 cup of chopped chocolate)

Steps:

  • Preheat the oven to 180C/350F. Grease 4 aluminum muffin molds or 4 parts of a 12-count muffin tin generously. Set aside.
  • In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, and baking soda. Whisk in the oil and vanilla extract. Slowly add the milk until the batter is smooth.
  • Divide the batter amongst the molds/ramekins. Place one piece of chocolate in the center of each mold.
  • Bake for 20 minutes, before removing from the oven and letting sit for 15 minutes. Using a sharp knife, run it around the inside edge of the molds, before flipping onto a plate and serving.

Use recipe for Recipe #373592 I use Ghirardelli Dark & Raspberry or Ghirardelli 72% Twilight Dark Chocolate for the Lava Centers. 1 bar is 3.50 ounces (8 squares). 2 5/8 ounces (6 squares) The recipe says 2 5/8 ounces but I use all 3.50 ounces.

1 (2 5/8 ounce) bar finely chopped dark chocolate (71% cocoa or darker)
1/4 cup heavy whipping cream

Steps:

  • Heat whipping cream in double broiler. Break chocolate into smaller pieces and melt in cream. Use a whisk to mix chocolate and cream.
  • Divide into a small Ice Cube tray (10 - 12 cubes) and freeze for 2 hours or until firm.
  • Follow recipe for Hot Chocolate Fudge Cake. Replace Step 3. Divide 1/2 batter evenly among 10 (4-ounce) ramekins; place 1 chocolate ice cube in the center of each and top with remaining batter. Arrange ramekins on a jelly-roll pan. Cover and refrigerate 4 hours or up to 2 days. (You can refrigerate longer than 2 days.).
