SUNNY'S HOT CHICKEN WINGS

20 whole chicken wings, washed well and patted dry
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper
1 teaspoon cayenne pepper
1 recipe Sunny's Sauce, recipe follows
Blue Cheese Dipping Sauce, recipe follows, for serving
1 cup hot sauce (recommended: Frank's Red Hot original cayenne pepper sauce)
1 cup (2 sticks) melted butter, at room temperature
1 teaspoon freshly squeezed lemon juice
2 teaspoons dried basil leaves
1 cup crumbled blue cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/2 cup buttermilk
1 teaspoon fresh lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
Freshly ground black pepper

Steps:

  • Separate the chicken wings into drummettes and wings, discarding the wing tip joint. Place chicken wings and drummettes into a large, zip-top plastic bag or large brown paper bag. In a small bowl, combine the flour, salt, pepper, and cayenne. Add the seasoned flour to the plastic bag and toss to coat well.
  • Pour the chicken pieces and excess flour onto a baking sheet and spread evenly. Allow the chicken to sit on the floured baking sheet to dry out for about 1 hour.
  • Preheat fryer or a large stockpot filled halfway with vegetable oil to 350 degrees F.
  • Add chicken to hot oil and fry until cooked through and crispy, about 10 to 13 minutes.
  • Place the wings in a large bowl and drizzle with half of Sunny's Sauce. Toss to coat well. Serve hot with the remaining Sunny's Sauce and Blue Cheese Dipping Sauce.
  • Combine all ingredients in a large bowl and set aside until ready to use.
  • Combine all ingredients in a small bowl and stir to combine. Serve immediately or store, covered and refrigerated, for up to 1 week before serving.

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

4 pounds chicken wings
1 teaspoon garlic powder
½ teaspoon ground black pepper
1 cup tomato-based hot pepper sauce
2 tablespoons vinegar-based hot pepper sauce
1 teaspoon garlic powder
¼ cup grated Parmesan cheese
3 tablespoons butter, melted

Steps:

  • Preheat an outdoor or indoor grill to a high heat. Lightly grease the grill.
  • Season wings with garlic powder and ground black pepper. Cook wings on the preheated grill until they are very crispy. Turn the wings frequently as they will burn easily.
  • While the wings are grilling, in a large bowl, combine both hot sauces with garlic powder, Parmesan cheese and melted butter.
  • When the wings are finished cooking, place them in the large bowl of hot sauce mixture and stir until they are coated.

These certainly turn out spicy - be sure to warn any guests! I love the ease of chicken wings, and had these at a recent bbq. Be sure to serve with blue cheese dressing, or sour cream for those who find them a bit hot. There are a few ingredients listed, so if you enjoy these it's a great idea to combine all the dry spices in larger amounts then just add the lime rind and garlic when you want to make them again, and you're all set. (prep time is marinating time.)

12 chicken wings
3/4 cup olive oil
1 tablespoon hot paprika
1 tablespoon ground cumin
1 tablespoon ground turmeric
1 tablespoon ground coriander
2 teaspoons chili powder
2 teaspoons curry powder, hot
1 tablespoon lime rind, grated
2 garlic cloves, crushed

Steps:

  • Cut off wing tips and discard.
  • Combine all ingredients, except wings, in a small bowl and mix to combine.
  • Add chicken to a large zip lock bag and pour in marinade. Use fingers outside bag to ensure chicken wings are all coated with mixture.
  • Marinade overnight, if time, or for a few hours.
  • Cook wings on bbq over medium heat, until browned on both sides and nice and tender.

4 pounds chicken wings, tips removed and sections separated
2 tablespoons Cajun seasoning, or to taste
½ cup cold water
nonstick cooking spray
½ cup hot pepper sauce (such as Frank's RedHot®)
¼ cup barbeque sauce
¼ cup melted butter

Steps:

  • Pat wings dry and place in a medium bowl. Sprinkle with Cajun seasoning and toss until covered.
  • Place a trivet in a multi-functional pressure cooker (such as Instant Pot®). Place the seasoned wings in the cooker, on the trivet. Pour 1/2 cup cold water around the wings in the pot.
  • Secure and lock the lid and turn the pressure to Sealing function. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Meanwhile, set your oven to broil on high and place the oven rack one level higher than the center position. Cover a baking sheet with aluminum foil and place a cooling rack on top of the foil-lined sheet. Spray the cooling rack with nonstick cooking spray. Set the sheet aside while the wings cook.
  • Once the wings have finished cooking in the pressure cooker, let pressure release naturally for 10 minutes, then turn the knob to the Venting position to release any additional steam. Unlock and remove the lid.
  • Combine hot sauce, barbeque sauce, and melted butter in a bowl. Place the wings in a large bowl and pour half of the sauce over the wings. Using a large spoon, toss the wings until all are covered with sauce. Arrange the wings on the wire rack and place in the oven.
  • Vent the oven door and broil on each side until desired crispness is reached, 5 to 10 minutes. You may want to rotate the sheet halfway when turning the wings on second side.
  • Transfer wings to a bowl, pour remaining sauce over top, and toss to coat. Serve immediately.

It took us a long time to find the perfect hot sauce for our chicken wings but everyone loves these in our family, even the kids!

1 package chicken wings
1 bottle Durkee's sauce

Steps:

  • Prepare the chicken wings by by splitting them in half at the knuckle.
  • Fill the deep fryer with peanut oil (It is best to do this outside because it can get messy).
  • Let the oil heat up.
  • Once the oil is hot, put the chicken wings in the basket and lower them in.
  • The wings should be cooked long enough to be crispy on the outside but not too long so as to make them overcooked on the inside.
  • Once the wings are done, put the bottle of red hot sauce in a large freezer bag and shake the wings in the sauce.
  • That's all there is to it.
  • This is a great weekend dish.
  • Either a snack or you can add some side dishes to make it a dinner.
  • This is better than any restaurant's hot wings!
