1/4 cup butter, cubed
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon white pepper
1 cup 2% milk
1/2 cup chicken broth
1/2 cup sherry or additional chicken broth
1 cup shredded Parmesan cheese, divided
1/3 cup shredded sharp cheddar cheese
12 slices pumpernickel bread, toasted
1-1/2 pounds sliced cooked turkey
4 medium tomatoes, halved and sliced
12 cooked bacon strips, crumbled

Steps:

  • In a large saucepan, melt butter over low heat. Stir in the flour, salt and pepper until smooth; gradually add the milk, broth and sherry. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in 1/3 cup Parmesan cheese and cheddar cheese until melted. Remove from the heat., Place toast slices on a baking sheet. Top each with turkey, sauce mixture, tomatoes and bacon. Sprinkle with remaining Parmesan cheese. Broil 3-4 in. from the heat for 3-4 minutes or until cheese is melted.

Egg-battered Bread, recipe follows
Maple-Bourbon Roast Turkey Breast, recipe follows, sliced into 1/4-inch thick slices
Cheese Sauce, recipe follows
1 cup grated sharp white Cheddar
1/4 cup freshly grated Parmesan
8 (1/4-inch) thick slices ripe tomato (from 2 tomatoes), sauteed until lightly browned
8 slices bacon, cooked until crisp
Finely chopped fresh flat-leaf parsley, for garnish

Steps:

  • Preheat broiler.
  • Place the egg bread on a baking sheet, place under the broiler, and heat on both sides for 20 seconds just to warm through.
  • Top each slice of bread with 2 to 3 slices of turkey, ladle sauce over the top, and divide the Cheddar and Parmesan over the top of each slice. Place under the broiler and cook until bubbly and the top is golden brown. Remove from the oven and top each slice with 2 slices tomato and 2 slices of bacon. Sprinkle each slice with parsley and serve immediately, 2 open-face sandwiches per person.
  • 4 large eggs
  • 1/4 cup milk
  • Salt
  • 8 (1/2-inch thick) slices 1 day-old white bread, such as Pullman or Pain de mie
  • 4 tablespoons butter
  • 4 tablespoons vegetable oil
  • Whisk together the eggs, milk, and salt in a medium bowl. Dip each slice of bread in the mixture and let sit about 30 seconds, or until completely soaked through.
  • Heat 2 tablespoons of butter and 2 tablespoons of oil in a large nonstick saute pan over medium-high heat. Cook 4 slices of the bread at a time until golden brown on both sides. Remove and place on a baking sheet. Repeat with the remaining butter, oil, and bread.
  • 1/4 cup pure maple syrup
  • 1 teaspoon Dijon mustard
  • 2 tablespoons bourbon
  • Salt and freshly ground black pepper
  • 1 (4 to 5-pound) turkey breast
  • 2 tablespoons unsalted butter, softened
  • Preheat oven to 425 degrees F.
  • Whisk together syrup, mustard, and bourbon in a small bowl and season with salt and lots of freshly ground black pepper. Set glaze aside.
  • Rub entire turkey breast with butter and season with salt and pepper. Place in a small roasting pan and roast for 15 minutes. Reduce the heat to 350 degrees F and continue roasting until a thermometer inserted into the center registers 155 degrees F, about 1 to 1 1/2 hours. During the last 15 minutes of roasting, brush the breast with the glaze. Remove from the oven, loosely tent with foil and let rest 10 minutes before slicing.
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • 3/4 cup grated sharp white Cheddar
  • 1/4 cup grated Parmesan
  • Pinch freshly grated nutmeg
  • Salt and freshly ground black pepper
  • Melt butter over medium heat in a medium saucepan. Whisk in the flour and cook for 1 minute. Whisk in the milk, bring to a boil and cook, whisking constantly, until thickened and the flour has cooked out, about 4 to 5 minutes. Whisk in cheese and cook until melted. Season with nutmeg, salt, and pepper, to taste.

1 skin-on, bone-in turkey breast half (about 2 pounds)
4 teaspoons vegetable oil
Kosher salt and freshly ground pepper
4 ounces slab bacon, chopped
1 pint grape tomatoes, halved
4 tablespoons unsalted butter
2 1/2 cups whole milk
3 tablespoons all-purpose flour
1 cup shredded sharp cheddar cheese (about 4 ounces)
1/4 cup chopped roasted red peppers
2 slices stale sourdough bread, cut into 1-inch cubes (2 heaping cups)
1/2 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 350 degrees F. Rub the turkey with 2 teaspoons vegetable oil; sprinkle both sides with salt and pepper. Place on a baking sheet and roast until a thermometer inserted into the thickest part registers 160 degrees F, 45 to 55 minutes. Remove from the oven and let rest 15 minutes before chopping; the internal temperature will rise to 165 degrees F.
  • Meanwhile, place the bacon on a baking sheet and bake until crisp, about 20 minutes. Transfer to a paper towel-lined plate to drain.
  • Reduce the oven temperature to 250 degrees F. Coat the tomatoes with the remaining 2 teaspoons vegetable oil and season with salt and pepper. Place the tomatoes cut-side up on a separate parchment-lined baking sheet and bake until they start to dehydrate and wrinkle, about 45 minutes.
  • While the tomatoes are cooking, start the Mornay sauce: Melt the butter in a medium saucepan over medium heat. Heat the milk in a small saucepan over medium heat. When the butter is melted, add the flour and stir continuously so the roux doesn't scorch, about 2 minutes. When the milk starts to simmer, slowly add it to the roux, stirring continuously so lumps don't form. Increase the heat and bring to a boil, then reduce to a simmer and cook until the sauce is thick enough to coat the back of a spoon, 6 to 8 minutes. Add the cheddar and roasted peppers and stir until smooth. Remove from the heat and season with salt and pepper.
  • Preheat the broiler. Distribute the bread cubes evenly among four 6-inch cast-iron gratin pans (or use disposable pie plates or other small pans). Cut the turkey into 1/2-inch pieces; discard the skin and bones. Divide the turkey evenly among the pans. Spoon the Mornay sauce over the turkey, then top with the tomatoes. Sprinkle with the parmesan and bacon and broil until golden and bubbling, about 5 minutes. Serve immediately.

3 1/2 cups whole milk

8 slices thick white sandwich bread, toasted, crusts removed
1 pound leftover roast turkey, sliced
1 ripe tomato, sliced
Chopped fresh parsley, for garnish

Steps:

  • Preheat the broiler. Cook the bacon in a skillet over medium-high heat until crisp, then drain on paper towels.
  • Meanwhile, make the cheese sauce: Melt the butter in a saucepan over medium-low heat. Add the flour and stir with a wooden spoon to make a thick roux. Add the milk and bring to a simmer. Cook, stirring, until the sauce thickens, about 5 minutes. Stir in the parmesan, reduce the heat to low and whisk in the egg until the sauce is thick (do not boil). Remove from the heat and season with salt and pepper.
  • For each Hot Brown, place 2 bread slices side by side in a small flameproof baking dish. Cover the bread with about 1/4 pound turkey and place 1 or 2 tomato slices alongside. Pour 1/2 to 3/4 cup cheese sauce over the turkey and bread. Sprinkle with more parmesan and broil until the sauce is bubbly and speckled brown, 2 to 3 minutes. Remove from the broiler, cross 2 strips of bacon on top and sprinkle with parsley and more parmesan. Serve immediately.

12 slices firm white sandwich bread
unsalted butter, softened, for spreading on toast if desired
1 pound sliced roast turkey breast
For sauce
1/2 stick (1/4 cup) unsalted butter
1/2 cup all-purpose flour
2 1/2 cups milk
1 large egg yolk
1 cup freshly grated Parmesan (about 3 ounces)
freshly ground white pepper
2 tablespoons well-chilled heavy cream

Steps:

  • In a large heavy skillet cook bacon in batches over moderate heat, turning it, until golden brown and crisp. Transfer bacon as cooked to paper towels to drain.
  • Toast bread and if desired discard crusts and lightly butter toast. Arrange toast on 6 flameproof plates and divide turkey among toasts.
  • Preheat broiler.
  • Make sauce:
  • In a 2- to 3-quart heavy saucepan melt butter over moderately low heat and whisk in flour. Cook roux, whisking constantly, 3 minutes. Add 2 cups milk in a stream, whisking, and bring sauce to a boil, whisking. Simmer sauce, whisking occasionally, 5 minutes.
  • While sauce is simmering, in a bowl whisk together yolk and remaining cup of milk. Whisk about 1 cup sauce into yolk mixture. Remove pan from heat and whisk yolk mixture into sauce with Parmesan. Cook sauce over moderately low heat, whisking constantly, until a thermometer registers 160°F. Remove pan from heat and season sauce with white pepper and salt. In a small bowl whisk cream until it just holds stiff peaks and stir into sauce.
  • Spoon sauce evenly over turkey and sprinkle Parmesan evenly over sauce. Broil sandwiches in batches about 2 to 3 inches from heat until sauce is lightly browned, about 2 minutes.
  • Arrange 2 bacon slices in an X on each serving.

4 ounces slow roasted turkey breast, thinly sliced
4 toast points, made from toasted Italian white bread
1 ounce Cheddar, shredded
2 strips applewood smoked bacon, cooked
2 slices vine-ripe beefsteak tomatoes, cut into half moons
1 pinch paprika
1 pinch freshly chopped parsley
8 ounces unsalted butter
1/2 small onion, finely diced
1 cup all-purpose flour, plus more if needed
8 cups whole milk
1 cup chicken broth
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1 teaspoon powdered chicken stock base
1/4 teaspoon poultry seasoning
1 pinch garlic salt
1 pinch ground nutmeg
1 pinch ground white pepper
1 bay leaf
1/2 cup cornstarch
8 ounces cheese mix, equal parts shredded Cheddar, Swiss and American cheese
1/2 cup shredded Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • Ladle 3 ounces of the Mornay Sauce in the center of an oven-proof dinner plate. Place the turkey on top of the sauce, and cover with the remaining 3 ounces of Mornay Sauce. Garnish with toast points at four corners of the plate, meeting the edge of the sauce. Sprinkle with the cheese to cover the sauce and lay the bacon as an "X" across the top in the middle.
  • Place in the oven until hot and bubbling, 8 to 10 minutes. Remove from the oven and place the tomato slices between the toast points. Sprinkle with the paprika and chopped parsley and serve.
  • In a large saute pan set over medium-low heat, melt the butter and add the onions, saute until translucent. Slowly add the flour and continue to cook, being careful not to thicken it too much. Once the mixture reaches a very light golden brown, remove from the heat and set aside until ready to add to the sauce.
  • In a separate large saucepan set over low heat, add the milk, broth, mustard, Worcestershire, stock, poultry seasoning, garlic salt, nutmeg, white pepper and bay leaf. Cook until the mixture comes to a gentle simmer. Add the roux slowly, one spoonful at a time, while whisking continually until you achieve the desired consistency.
  • In separate container, add 1/2 to 3/4 cup water to the cornstarch to make a slurry. Add the slurry to the sauce mixture and whisk. Add the cheese mix and the Parmesan to the sauce and stir until smooth and thick.

I looked at all the other Hot Brown recipes on the site, and while I am sure they are all good, why go to such trouble. This is a 4 ingredient (one of which is water) quick recipe that I got from my mother. In over thirty years I have never met anyone who tried this recipe and did not like it.

1 small onion
1/4 cup unsalted butter
4 tablespoons all-purpose flour
2 cups whole milk
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 cup cheddar cheese, coarsely grated
1/4 cup parmesan cheese, grated
1/4 lb mushroom
1/2 tablespoon vegetable oil
8 slices toast, trimmed
8 ounces turkey slices, thinly sliced
4 slices bacon, crisp

Steps:

  • Preheat broiler.
  • Chop onion.
  • In a heavy saucepan heat butter over moderate heat until foam subsides and cook onion about 3 minutes, or until glassy.
  • Add flour, stirring until smooth.
  • Add milk, salt, and pepper and simmer, whisking constantly, until thickened and smooth.
  • Add cheese and remove pan from heat.
  • Whisk sauce until cheeses are melted.
  • Thinly slice mushrooms.
  • In a skillet heat oil over moderately high heat until hot but not smoking and saute mushrooms, stirring occasionally, until golden and any liquid given off by mushrooms is evaporated.
  • Season mushrooms with salt.
  • In each of 4 ovenproof individual serving dishes top 1 slice of toast with 2 slices turkey or chicken.
  • Diagonally halve remaining slices of toast and "bracket" each sandwich with 2 halves.
  • Ladle cheese sauce over sandwiches and broil 4 to 5-inches from heat until sauce begins to bubble and brown, about 2 to 3 minutes.
  • Crumble bacon.
  • Top each sandwich with bacon and mushrooms.
  • Serve sandwiches immediately.

This is my favourite hot dish. I have substituted a small roast cut into cubes for the ground beef. I have also used shredded potatoes or potato cubes for the hash brown patties. So good!

1 pkg hash brown patties
1 large onion, chopped
2 lb lean ground beef
1/2 c water
1 pkg brown gravy mix
1 c frozen peas (or a can of peas, drained)
1 c milk
1 can(s) cream of mushroom soup
1 1/2 c shredded cheddar cheese
1 can(s) french-fried onions

Steps:

  • 1. Preheat oven to 350 F. Spray a 9 x 13" pan with cooking spray. Layer the bottom of the pan with hash brown patties, overlapping as necessary. I also break some of the patties into pieces to fill the holes.
  • 2. In a large skillet, brown the ground beef. Add the onion and cook til the onion pieces are soft. Add 1/2 cup water and the brown gravy mix. Stir until thickened.
  • 3. Pour the ground beef mixture over the hash brown patties. Sprinkle the peas on top. Mix together the soup and the milk. Pour that over the peas. Sprinkle the cheddar cheese over top.
  • 4. Cover and bake for 45 minutes. Uncover and add the French-fried onions. Bake another 15 minutes, uncovered.

2 c chicken broth
2 c scalded milk
salt and pepper to taste
1/2 c grated romano cheese
4 slice toast
8 slice bacon
12 slice turkey breast
8 slice tomatoes

Steps:

  • 1. In a saucepan melt butter and blend in flour, but do not let brown.
  • 2. Remove sauce pan from heat and chill.
  • 3. Heat broth and milk to boiling point.
  • 4. Add hot milk to the flour mixture while beating vigorously with a wire whisk until sauce thickens.
  • 5. Season with salt, pepper and cheese. Simmer until cheese melts.
  • 6. To assemble hot browns, trim toast and place on 4 individual ovenproof platters.

8 turkey slices (or enough to cover 4 bread slices)

Steps:

  • Preheat oven to 450 degrees.
  • Melt butter in a medium saucepan.
  • Add flour, stirring, to make a smooth paste. Cook for several minutes.
  • Whisk in milk gradually, stirring constantly.
  • Add a small amount of the hot milk mixture to the beaten yolk and whisk until smooth.
  • Return the yolk-milk mixture to the saucepan and simmer until thickened, stirring constantly.
  • Add cheeses and Tabasco and cook until cheese is melted and sauce is thick and smooth.
  • Place the toasted bread slices in individual ovenproof dishes.
  • Warm the turkey slices (the microwave works well) and place turkey on the toasted bread.

1 Tablespoon whole butter
1 Tablespoon all-purpose flour
1/2 cup heavy cream
2 Tablespoons shredded Pecorino Romano cheese
Salt and pepper
For the tarts:
12 mini phyllo tart shells
1/2 cup cold Mornay sauce (see recipe below)
1/2 cup roasted turkey breast, chopped fine
1/4 cup diced tomatoes
1 slice cooked bacon, chopped fine
1 teaspoon paprika
1/4 cup grated Romano cheese
1 teaspoon chopped parsley

Steps:

  • Make the Mornay sauce: Melt the butter in a saucepan and slowly whisk in the flour until combined to form a thick paste or roux. Continue to cook the roux for 2 minutes over medium-low heat, stirring frequently. Whisk the heavy cream into the roux and cook over medium heat until the cream begins to simmer, 2 to 3 minutes. Remove the sauce from the heat and slowly whisk in the Pecorino Romano cheese until the sauce is smooth. Add salt and pepper to taste. Chill. Assemble the tarts: Heat the oven to 325°F. Place the tart shells 1/2-inch apart on a baking sheet lined with parchment paper. In a mixing bowl, mix together the cold Mornay sauce, turkey and tomato. Fill a pastry bag with the mix, and then carefully fill each tart shell to the top. Sprinkle each with bacon, paprika, and Romano cheese. HOT BROWNS WITH PIMENTO CHEESE MORNAY

1 bone-in turkey breast half (about 2 pounds)
4 teaspoons vegetable oil
Kosher salt and freshly ground black pepper
4 ounces bacon, cut into lardons
20 grape tomatoes, halved lengthwise
4 tablespoons unsalted butter
2 1/2 cups whole milk
1/4 cup all-purpose flour
1 cup shredded sharp Cheddar
1/4 cup chopped roasted red peppers
2 slices stale sourdough bread, cut into 1-inch cubes (a heaping 2 cups total)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • Rub the turkey breast with 2 teaspoons of the oil; sprinkle both sides with salt and pepper. Place on a baking sheet and roast until a thermometer inserted into the thickest part reads 160 degrees F, about 55 minutes. Remove from the oven and let rest 15 minutes; the turkey will continue to cook and the internal temperature should reach 165 degrees F.
  • Place the bacon lardons on a baking sheet and bake until crisp, about 20 minutes. Transfer the bacon to a paper towel-lined plate; drain and reserve the fat for another use.
  • Lower the oven temperature to 250 degrees F. Coat the tomatoes with the remaining 2 teaspoons of oil and season with salt and pepper. Place the tomatoes cut-sides up on a parchment paper-lined baking sheet and bake until they start to dehydrate and wrinkle, about 45 minutes.
  • While the tomatoes are cooking, start the Mornay sauce. Add the butter to a medium saucepan and melt over medium heat. Add the milk to a small saucepan and heat over medim heat. When the butter is melted, add the flour and stir continuously so the roux doesn't scorch, about 2 minutes. When the milk starts to simmer, slowly add it to the roux, stirring continuously so lumps don't form. Increase the heat and bring to a boil, reduce to a simmer and cook until the sauce is thick enough to coat the back of a spoon, 6 to 8 minutes. Add the Cheddar and red peppers and stir until smooth. Remove the sauce from the heat and season with salt and pepper.
  • You are now ready to assemble the dish. Heat the broiler. Distribute the bread cubes evenly among four 6-inch round cast-iron gratin pans. Cut the turkey into bite-size pieces, about 1/2 inch each, and divide evenly among the gratin pans. Spoon the Mornay sauce over the pans, and top each with 10 tomato halves. Sprinkle each pan with the Parmesan and bacon and place under the broiler on the bottom rack of the oven until golden and bubbly, 5 to 10 minutes. Serve immediately.

1 small onion
1/2 stick unsalted butter
4 Tbsp all purpose flour
2 c whole milk
1/2 tsp salt

1/4 c cheddar cheese, coarsely grated

1/4 lb mushrooms
1/2 Tbsp vegetable oil
8 slice toast, trimmed
8 oz turkey slices, thinly sliced
4 slice bacon, crisp

Steps:

  • 1. Preheat broiler.
  • 2. Chop onion. In a heavy saucepan heat butter over moderate heat until foam subsides and cook onion about 3 minutes, or until glassy. Add flour, stirring until smooth. Add milk, salt, and pepper and simmer, whisking constantly, until thickened and smooth. Add cheese and remove pan from heat. Whisk sauce until cheeses are melted.
  • 3. Thinly slice mushrooms. In a skillet heat oil over moderately high heat until hot but not smoking and saute mushrooms, stirring occasionally, until golden and any liquid given off by mushrooms is evaporated. Season mushrooms with salt.
  • 4. In each of 4 ovenproof individual serving dishes top 1 slice of toast with 2 slices turkey or chicken. Diagonally halve remaining slices of toast and "bracket" each sandwich with 2 halves.
  • 5. Ladle cheese sauce over sandwiches and broil 4 to 5-inches from heat until sauce begins to bubble and brown, about 2 to 3 minutes. Crumble bacon.
  • 6. Top each sandwich with bacon and mushrooms. Serve sandwiches immediately.

1/4 cup boiling water
3 tablespoons butter
2 tablespoons King Arthur Unbleached All-Purpose Flour
3/4 cup half-and-half cream

18 slices snack rye bread
6 ounces sliced deli turkey
1 small onion, thinly sliced and separated into rings
5 bacon strips, cooked and crumbled
2 tablespoons minced fresh parsley

Steps:

  • In a small bowl, dissolve bouillon in water; set aside. In a small saucepan, melt butter over medium heat. Stir in flour until smooth; stir in cream and bouillon. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in cheese until melted. Remove from the heat.
