FILIPINO SPAGHETTI (W/ SWEET SPAGHETTI SAUCE)
Use this traditionally sweet spaghetti recipe from the Philippines that's filled with rich, umami flavored meat sauce and topped with sliced hot dogs and melted cheese for your next dinner.

Steps:
- In a large pan over medium heat, add the vegetable oil and the onion. Saute the onion for 3-5 minutes or until translucent.
- Add the garlic and saute until fragrant or about 30 seconds.
- Add the ground pork and cook for about 5-7 minutes or until the meat is completely browned.
- Add the tomato sauce, banana ketchup, fish sauce, and the dark brown sugar and stir until combined with the meat mixture. Bring the mixture to a boil and then lower to medium low heat and continue to cook for 5 minutes to slightly thicken the sauce.
- Add the hot dogs and continue to cook for another 5 minutes.
- Taste test the sauce and add salt and black pepper, adjust to your preference.
- You have the option of adding cheese on top too.
- Add the spaghetti on a plate and ladle on the sauce. Serve immediately.
- In a large pot, add the water and bring to a boil over medium high heat. Add the salt and stir until dissolved. Add the dried spaghetti and follow instructions on the box to cook. This could take anywhere between 8-15 minutes depending on the pasta brand.
- Test your spaghetti by tasting one strand, it should be cooked throughout without any opaqueness in the center, but still slightly firm.
- Strain the pasta from the boiling water, reserving some of this water in case you need it to thin the sauce, and set the pasta aside. Do not rinse the pasta.

RESTAURANT STYLE SPAGHETTI SAUCE WITH SAUSAGE
It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

- In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
- When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
- Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
- add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
- After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

- In a saucepan, combine olive oil, garlic, salt, pepper and red peppers and lightly saute over high heat.

- In a large saute pan or pot, cook the sausage over medium-high heat until the fat is rendered and the sausages start to brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Remove all but 2 tablespoons of fat from the pan.
- To the fat remaining in the pan, add the onions and garlic and cook, stirring, over medium-high heat until soft, about 3 minutes. Add the fennel seeds, salt, and red pepper, and cook, stirring, until fragrant, 20 to 30 seconds. Add the tomatoes and their juice, the tomato paste, oregano, and cooked sausage and cook, stirring, until thick and fragrant, 20 to 25 minutes. Remove from the heat and adjust the seasoning, to taste.
- Meanwhile, in a pot of salted water, cook the pasta until al dente. Drain and toss in the pot with the sauce. Stir in the ricotta salata and basil. Serve immediately and garnish with Parmesan cheese at the table.
SWEET AND SPICY SPAGHETTI SAUCE
This is more of a semi homemade recipe as I start with premade spaghetti sauce and embellish it. It's sweet and spicy and full of flavor but my whole family loves it and we make it just about once a week. Hope you enjoy!! :)

- Brown Ground Chuck, drain.
- Add onions and cook until onions are transparent.
- Add tomatoes (juice and all), garlic, fresh parsley, basil, salt and pepper.
- Simmer until most of the juice is gone.
- Add tomato sauce and sugar. (may have to adjust sugar amount to taste).
- Simmer an hour or until the consistency you like.
- Serve over spaghetti noodles, or we prefer angel hair pasta.
SPAGHETTI SAUCE WITH HOT ITALIAN SAUSAGE
Inspired by my Dad's somewhat tamer spaghetti sauce, this is my spiced up twist on an old classic. It is easy to make, SMELLS great and makes enough for dinner plus 2 frozen dinners for two (for those nights you just don't have time to cook from scratch). This sauce comes out THICK and CHUNKY, so adjust if you like a thinner sauce. I also make this a day in advance of when I want to eat it as I like the flavor after it has been refrigerated over night and then reheated.

- Preheat oven to 500 degrees, line baking sheet or glass casserole with foil for easy clean up.
- Chop onion, pepper and garlic while oven is preheating.
- Put whole sausages on foil lined pan/casserole, bake 20- 30 minutes or until golden brown and expelling some juices, remove and let cool slightly.
- While sausage is cooking, in a pan large enough for all ingredients, over medium heat, saute onions and peppers in olive oil 5-7 minutes until onions are almost translucent, add garlic and saute for 2 more minutes (DO NOT allow garlic to get brown or it will be bitter), reduce heat to simmer.
- To pan of onions/peppers/garlic add jar of pre-made sauce (fill empty jar with a splash of water or beer :) , close lid, shake to rinse, open and add to sauce), fire roasted tomatoes, bay leaves, italian seasoning, sugar, and smoked paprika.
- Slice sausage into bite sized pieces on a steep angle, add to sauce. Simmer 30 minutes, stirring occasionally. Add salt and pepper to your taste during the last 30 minutes.
- Serve over your favorite pasta with some grated cheese.
- ENJOY!

HOT AND SWEET SPAGHETTI SAUCE
One of the first things I made when I went out on my own at 18 and was always a favorite with my friends. Have always used this recipe with the exception of the brown sugar which my late friend Lilli suggested I add a few years later and I loved it! Always have a good memory of her when I add the brown sugar.

- 1. With the Italian sausage still in the casing, squeeze out some of the sausage so it resembles a ball about half the size of a golf ball. Do this will all the sausage. Brown ground beef and sausage in large skillet until done. Drain off fat in a colander and return to skillet.
- 2. In a large stockpot with lid, heat 2 tbs olive oil over medium heat. Add green pepper, onion and mushrooms. Cook until slightly tender with a little crunch left in the onion and peppers. Add minced garlic and cook for 2 more minutes.
- 3. Add jars of spaghetti sauce, diced tomatoes and tomato paste to cooked vegetables in stockpot. Mix well. Add cooked hamburger and sausage to sauce in stockpot. Mix well.
- 4. Add brown sugar, pepper, salt, Italian seasoning and a few shakes of garlic powder to sauce. Mix well.
- 5. Reduce heat to low and cover pan with lid. Simmer over low heat,stirring occasionally, for at least 30 minutes, but I do mine for a few hours to let the flavors do their thing.
- 6. I use this sauce over spaghetti and for making manicotti and stuffed shells. Enjoy!!
