1 tablespoon canola oil
1 small onion, chopped
1 teaspoon minced garlic (can use more or less)
1 (10 ounce) can rotel diced tomatoes and green chilies, undrained
1 teaspoon sugar
4 cups sliced cabbage (I used from premade packaged coleslaw mix)
fresh ground pepper
sea salt
1/8 teaspoon hot sauce (optional, can use more or less, we used Franks)

Steps:

  • Heat oil in large skillet over medium heat. Add onion and garlic. Cook and stir until crisp tender.
  • Add tomatoes, undrained, and sugar. Bring to boil and simmer 3 minutes.
  • Add cabbage, pepper, salt and hot sauce.
  • Simmer 15 minutes, stirring occasionally. Serve immediately.

I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

1 teaspoon chili powder
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon onion powder
1 teaspoon salt
2 tablespoons butter
1 small onion, sliced
3 cloves garlic, minced
1 small head cabbage, finely shredded

Steps:

  • Combine chili powder, thyme, smoked paprika, oregano, cayenne pepper, cumin, onion powder, and salt in a bowl.
  • Melt butter in a large skillet over medium heat; cook and stir onion in hot butter until translucent, about 5 minutes. Add garlic and cook until soft, about 2 minutes; stir shredded cabbage into onion and garlic. Cook and stir cabbage mixture until cabbage starts to soften, about 5 more minutes.
  • Stir spices into cabbage mixture and cook, stirring often, until spices are evenly mixed in and cabbage is tender, 3 more minutes.

½ pound bacon, cut into 1/2 inch pieces
½ onion, chopped
2 cloves garlic, chopped
2 quarts low-sodium chicken broth
salt and ground black pepper to taste
¼ teaspoon cayenne pepper, or to taste
½ medium head cabbage, cored and coarsely chopped
1 (14.5 ounce) can Italian-style stewed tomatoes, undrained, cut up

Steps:

  • Heat a stockpot over medium heat and add bacon. Cook until bacon begins to brown, 3 to 5 minutes. Stir in onion and garlic. Cook until onion is transparent, 5 to 7 minutes, stirring occasionally. Stir in broth, salt, black pepper, and cayenne pepper. Bring to a boil, about 5 minutes.
  • Stir cabbage into stockpot. Simmer until cabbage has wilted, 10 to 15 minutes. Stir in stewed tomatoes and liquid. Return soup to a boil, about 5 minutes. Cover and simmer, 15 to 30 minutes, stirring often.

1 lb head of cabbage, chopped
1/4 c vegetable oil
2 c water
salt and pepper
1/2 c italian style hot peppers in sauce, pureed or well mashed (i like delallo's or oliverio's)
red chili flakes, if needed

Steps:

  • 1. Heat oil in a frying pan over medium heat. Add cabbage and salt & pepper. When it starts really popping, add water and cover. Simmer about 20 minutes, add pepper puree and mix throughly. Cover and simmer another 15 minutes with lid tilted so liquid reduces by half. Taste and if it's not hot enough, add pepper flakes and simmer a few more minutes. When finished it should still have a little bit of liquid but not soupy and it will look orange and sparkley due to tiny oil beads on top of it. That's when it's perfect.

2 oz center-cut smoked ham ( sliced into bite size pieces )
1/2 c chopped onions
1/2 c chopped bell pepper
olive oil cooking spray
1 can(s) chopped rotel tomatoes ( 10 oz. )
1/2 tsp sugar
4 c chopped cabbage
1/2 tsp black pepper

Steps:

  • 1. In a Large Skillet or Wok, stir fry Ham, onions and Bell Pepper in cooking spray over Medium High heat, Add Rotel Tomatoes and the sugar, turn down heat to a simmer and cook 2 or 3 minutes, then add the cabbage and Black Pepper, Simmer for 15 minutes.

This is a vegetarian version of a classic Chinese stir-fry. The authentic versions I've encountered include some pork or bacon, but the chilies, ginger, garlic, star anise and the cabbage are flavorful enough without meat. I've added carrots for color.

4 garlic cloves, minced
2 teaspoons minced ginger
1/2 teaspoon red pepper flakes
1 star anise, broken in half
2 teaspoons soy sauce (more to taste)
2 tablespoons Shao Hsing rice wine or dry sherry
2 tablespoons peanut or canola oil
1 small cabbage, 1 to 1 1/2 pounds, quartered, cored and cut crosswise into 1/8-inch shreds
1 medium carrot, cut into julienne
Salt to taste
2 tablespoons minced chives, Chinese chives or cilantro

Steps:

  • Combine the garlic, ginger, red pepper flakes and star anise in a small bowl. Combine the soy sauce and wine or sherry in another small bowl.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic, ginger, pepper flakes and star anise. Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Cover and cook over high heat for one minute until just wilted. Uncover and stir-fry for another 30 seconds, then stir in the chives or cilantro and remove from the heat. The cabbage should be crisp-tender. Serve with rice or noodles.

1 large head cabbage
2 cups cooked barley
2 garlic cloves, minced
1-1/2 cups chopped onion
2 tablespoons reduced-sodium soy sauce
2 tablespoons ketchup
1 tablespoon brown sugar
2 to 3 teaspoons ground ginger
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds ground pork
SAUCE:
1 can (15 ounces) tomato sauce
1/2 cup chili sauce
1 teaspoon reduced-sodium soy sauce
1/8 teaspoon cayenne pepper

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 10 large leaves for rolls. (Refrigerate remaining cabbage for another use.) Meanwhile, in a large bowl, combine the barley, garlic, onion, soy sauce, ketchup, brown sugar, ginger, salt and pepper. Crumble pork over mixture and mix well. , Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/2 cup pork mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat. Place rolls, seam side down in a greased 13-in. x 9-in. baking dish. , In a small saucepan over medium heat, combine the sauce ingredients; cook and stir until smooth. Pour over rolls. Cover and bake at 350° for 80-90 minutes or a thermometer reads 160°.
