Hot and Sour Soup with Crab image

1 ounce dried shiitake mushrooms
6 cups chicken stock
3 tablespoons peeled and finely julienned ginger
1 teaspoon chopped garlic
2 teaspoons Chinese chili paste with garlic
1/4 cup rice wine vinegar
1/4 cup soy sauce
1 cup canned slivered bamboo shoots, drained
1 tablespoon fresh lime juice
2 teaspoons sugar
Kosher salt
1 tablespoon plus 2 teaspoons cornstarch
2 tablespoons cold water
1 large egg, beaten
4 ounces fresh cooked crabmeat
1/4 cup green onions or scallions, white and green parts, cut on the bias into thin strips or julienned

Steps:

  • Place the dried shiitake mushrooms in a small heatproof bowl and cover with boiling water. Allow to soak for 30 minutes. Drain, rinse, and cut into thin slices. Set aside.
  • In a large saucepan, heat the chicken stock. Add the ginger, garlic, chile paste, vinegar, soy sauce, reconstituted shiitake mushrooms, and bamboo shoots. Simmer for 10 minutes. Add the lime juice and sugar and season to taste with salt.
  • Make a cornstarch slurry by mixing together the cornstarch and water. Add the slurry to the soup and simmer for a few minutes until the soup thickens. Bring the soup to a boil and slowly pour in the beaten egg, stirring gently a few times with a spoon or with chopsticks. Don't whisk or stir too vigorously--you want nice long shreds of egg. The egg will cook almost instantly. Remove the soup from the heat.
  • On the plate: Ladle the soup into 4 bowls. Top each bowl with an ounce of crabmeat and garnish with the green onions.

1 (10.75 ounce) can condensed cream of celery soup
⅔ cup mayonnaise
¼ cup chopped onion
1 medium green bell pepper, diced
2 stalks celery, diced
1 tablespoon seafood seasoning (such as Old Bay®)
1 dash Worcestershire sauce, or more to taste
1 dash hot pepper sauce (such as Tabasco®), or to taste
salt and ground black pepper to taste
1 quart half-and-half

Steps:

  • Combine imitation crab, both condensed soups, mayonnaise, onion, bell pepper, celery, seafood seasoning, Worcestershire sauce, hot sauce, salt, and pepper in a stock pot. Slowly add half-and-half and bring to a simmer. Simmer until hot, about 30 minutes.

3/4 pound pork tenderloin, cut into 1-1/2-inch x 1/4-inch strips
1 tablespoon olive oil
1/2 pound sliced fresh mushrooms
6 cups chicken broth
1/4 cup soy sauce
2 tablespoons chili garlic sauce
3/4 teaspoon pepper
1 package (14 ounces) extra-firm tofu, drained and cut into 1/4-inch cubes
1 can (8 ounces) bamboo shoots, drained
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup white vinegar
1/3 cup cornstarch
1/3 cup cold water
2 teaspoons sesame oil
Finely chopped green onions

Steps:

  • In a Dutch oven, brown pork in oil until no longer pink; remove meat and keep warm. Add mushrooms; saute until tender. Set aside and keep warm. , Add the broth, soy sauce, chili garlic sauce and pepper to the pan. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Return the meat and mushrooms to the pan. Stir in the tofu, bamboo shoots, water chestnuts and vinegar. Simmer, uncovered, for 10 minutes., In a small bowl, combine cornstarch and water until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in sesame oil. Garnish servings with onions.
