BACON AND CHEDDAR TOASTS

Steps:
- Put oven rack in middle position and preheat oven to 375°F.
- Stir together cheese, bacon, onion, horseradish, salt, and pepper in a bowl with a rubber spatula until blended well.
- Spread about 1 1/2 tablespoons mixture evenly to edges of each slice of bread with a small offset spatula or butter knife. Arrange slices in 1 layer on a large baking sheet and freeze, covered with wax paper, until firm, about 15 minutes.
- Trim crusts off bread and reserve for another use (see cooks' note, below), then cut each slice into 4 squares. Bake toasts on baking sheet until beginning to brown on edges, about 20 minutes.
HORSERADISH MAC 'N' CHEDDAR WITH BACON
From Everyday with Rachel Ray. This Mac 'n' cheese has a twist to it with the added horseradish and of course you can make this dish in 30 minutes, perfect for a busy weekday dinner.

- Bring a large pot of water to a boil, salt it, add the pasta and cook until just shy of al dente.
- Heat the oven to 350 degrees F. Bake the bacon on a broiler pan until crisp, 25 to 30 minutes (I just use the ready cooked bacon and microwave it until it is crispy). Chop the bacon Preheat the broiler.
- Meanwhile, in a medium saucepan, melt the butter over medium heat. Whisk in the flour for 1 minute, then wisk in the milk; season with salt, pepper and nutmeg. Cook until reduced, about 5 minutes. Stir in 2 cups of cheese until melted, then remove the sauce from the heat and stir in the horseradish and teh bacon.
- In a casserole dish, combine the pasta with the sauce and top with parsley, scallions and remaining 1/2 cup cheese Broil until browned, 3 to 4 minutes. Serve with a few pickles.

- Mix the first 7 ingredients.
- Combine with cream cheese and fold in cheddar cheese and bacon forming into balls. Roll in nuts. Refrigerate a couple hours or over night.
- Serve with crackers or vegetables.
- Optional Decorations:.
- Pine-cone - Shape into a pine cone and layer almonds slices up.
- Wreath - Mound into a circle forming a wreath, by placing a drinking glass in center of serving platter. Drop rounded tablespoonfuls of cheese mixture around glass, just touching outer edge of glass, to form ring; smooth with spatula. Remove glass. Garnish with additional parsley by pressing dried parsley into the cheese. Arrange pieces of red bell peppers in sets of three for the berries and add fresh parsley for the bow.
- Snowman - Make 2 balls one slightly smaller then the other. Wrap in plastic and chill till firm. Spread with softened whipped cream cheese using your hand to smooth out and fluff like snow. Decorate as you would a snow man. Dill or rosemary for arms, capers for button and eyes, carrot cut to make a nose and red pepper cut for mouth, scallions for the scarf or use your imagination. Most of all HAVE FUN! And enjoy your guests responses.

- In a small bowl, beat cream cheese and cream until smooth. Beat in bacon, cheddar cheese, horseradish, green onion, lemon juice Worcestershire sauce and pepper. Refrigerate, covered, 2 hours. Serve with dippers.

HORSERADISH GRILL MAC AND CHEESE

- PREPARATION: Preheat oven to 350. Lightly butter 9x13x2-inch glass baking dish. Cook macaroni in large saucepan of boiling salted water until just tender but still firm to bite. Drain pasta. Transfer to prepared dish. Mix in cubed cheese. Whisk flour, salt, mustard, black pepper, cayenne pepper and nutmeg in medium bowl until no lumps remain. Gradually whisk in half and half, then whipping cream and sour cream. Add eggs and Worcestershire sauce; whisk to blend. Pour over macaroni mixture; stir to blend. Sprinkle grated cheese over. Bake macaroni and cheese until just set around edges but sauce is still liquid in center, about 25 mins. Remove from oven; let stand 10 mins to thicken slightly (sauce will be creamy).
