HORSERADISH JELLY



Horseradish jelly image

Yield: 5 x quarter-litre (1/2 US pint / 8 oz / 250 ml) jars

Number Of Ingredients 6

500 ml apple juice ((2 cups / 16 oz))
375 ml water ((1 1/2 cups / 12 oz))
1 box Ball or Bernardin No Sugar Needed Pectin
75 ml cider vinegar ((5% or higher. 1/3 cup / 2.5 oz))
200 g sugar ((1 cup / 8 oz) )
125 ml prepared horseradish ((partially drained. 1/2 cup / 4 oz))

Steps:

  • Combine apple juice and water in a large sauce pan.
  • Sprinkle the pectin over this liquid, whisk it in.
  • Stir in sugar.
  • Put pan on heat and bring to a boil, and let it boil hard for 3 minutes.
  • Add vinegar, boil 1 more minute.
  • Remove from heat, stir in drained horseradish.
  • Ladle into 125 ml (4 oz) or quarter-litre (1/2 US pint) jars
  • Leave 1 cm (1/4 inch) headspace for either size jar.
  • Debubble, adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process either size jars for 10 minutes; increase time as needed for your altitude.

Typically called a Jezebel Sauce, this sweet, fruity topping has an underlying bite from horseradish. The sauce, from Rita Reifenstein of Evans City, Pennsylvania is also great over pork or chicken.

1 package (8 ounces) fat-free cream cheese
1/3 cup apple jelly, warmed
1 tablespoon prepared horseradish
1-1/2 teaspoons ground mustard
1/3 cup apricot spreadable fruit
Assorted crackers

Steps:

  • Place cream cheese on a serving plate. In a small microwave-safe bowl, heat jelly until warmed. Stir in horseradish and mustard until blended. Stir in spreadable fruit; spoon over cream cheese. Serve with crackers. Refrigerate leftovers.

This sauce is a sweet surprise to the palate. It is an unusual combination, but my guests have raved about it. Served over crackers with cream cheese, it makes a wonderful appetizer.

1 (10 ounce) jar apple jelly
1 (10 ounce) jar pineapple fruit preserves
1 (8 ounce) jar prepared horseradish
1 tablespoon ground dry mustard
1 teaspoon cracked black pepper

Steps:

  • In a small bowl, mix together apple jelly, pineapple fruit preserves, prepared horseradish, ground dry mustard and cracked black pepper. Cover and refrigerate 8 hours, or overnight, before serving.

This is a wonderful hot-sweet appetizer that guests always love -- much to their surprise! It's great for all occasions, winter and summer. You can adjust the ingredients based on whether you like it more hot or more sweet, and you can make sugar free, fat free versions, too! I got this recipe from my mother, and it's been a family favorite for years! If you do not have time to let the apricot mixture chill overnight, it will still taste delicious served immediately. Serve with your favorite crackers.

1 (12 ounce) jar apricot preserves
2 teaspoons prepared horseradish
2 tablespoons Dijon-style prepared mustard
ground black pepper to taste
1 (8 ounce) package cream cheese, softened

Steps:

  • In a medium-size bowl, combine apricot preserves, horseradish, mustard and black pepper. Taste the mixture and add more horseradish, mustard, and pepper to taste. Cover and chill this mixture overnight.
  • When ready to serve, place the cream cheese on a serving plate and pour the apricot mixture over the cream cheese. Serve with a basket of your favorite crackers.
