Steps:
- Cook cubed potatoes about 15 minutes.
- Dice cooked ham.
- Layer potatoes in a 9x13-inch baking dish, pepper and salt to taste.
- Layer ham over potatoes.
- Blend whipping cream, cheese and horseradish then spread mixture over the ham layer.
- Bake 30 minutes at 350.

HORSERADISH SCALLOPED POTATOES
If there's a horseradish lover in your family, this tasty sidedish is for you. These potatoes are wonderful along side roasted beef or pork.

- Preheat oven to 400 degrees. Lightly butter 13 x 9 x 2 glass baking dish.
- Mix cheddar cheese and Parmesan in small bowl. Arrange half of potatoes in prepared baking dish, overlapping slightly. Sprinkle with 1 teaspoons of salt and 1/4 teaspoons pepper. Sprinkle onion over, then flour. Dot with 2 tablespoons butter. Sprinkle half of cheese mixture over top. Top with remaining potatoes, 1 teaspoons salt, 1/4 teaspoons pepper and 2 tablespoons butter. Reserve remaining cheese.
- Pour milk into medium saucepan. Stir in horseradish and simmer for 5 minutes. Pour milk mixture over potatoes.Cover baking dish tightly with foil. Bake 45 minutes.
- Uncover dish. Sprinkle potatoes with reserved cheese mixture. Bake uncovered until potatoes are tender and cheese is deep golden brown, about 45 minutes longer.
- Remove from oven; let stand 15 minutes before serving.

- In a large bowl, combine ham and onion. Shred potatoes and add to ham mixture. Stir in the butter, Parmesan cheese, mustard, Worcestershire sauce, horseradish and pepper. , Spoon into a greased 11x7-in. baking dish, pressing down firmly. Combine cheeses; sprinkle over top. Bake, uncovered, at 350° for 35-40 minutes or until bubbly and cheese is melted.

HORSERADISH HAM POTATO BAKE
A different take on the ubiquitous hash brown potatoes.

- 1. Coat a 3 quart baking dish with cooking spray. Spread frozen potatoes evenly in the bottom of the prepared baking dish. Sprinkle with ham, cheese and onion
- 2. In medium bowl, mix eggs, milk, mustard, salt and black pepper. Pour egg mixture evenly over layers in baking dish. Cover and chill for at least 2 to 24 hours.
- 3. Preheat oven to3 50. Bake uncovered, for 55 to 60 minutes or til a knife inserted near center comes out clean. Sprinkle with green onions. Let stand for minutes before serving. Serve with horseradish sour cream. Serves 8
- 4. Horseradish Sour cream: in small bowl, stir together 1/2 cup sour cream, 1 to 2 Tbsp. horseradish mustard and 1 Tbsp. snipped fresh chives.
HORSEY HAM CASSEROLE
It's not what you think! The "horsey" in this recipe is horseradish. When I was young, my mom would make this maybe twice a year, mostly for potlucks and family gatherings, and it was always (and still is) one of my favorite foods. I RECOMMEND CUTTING THIS RECIPE IN HALF! As it is written here, it makes about 20 servings, but it CAN BE FROZEN. So, if you don't halve it, you can at least freeze half of the finished product and save it for a couple weeks later.

Steps:
- Cook noodles according to package directions.
- Cook butter, milk and flour in large saucepan on low until thick.
- Add Velveeta, horseradish, mustard and pepper to white sauce and cook until creamy.
- Add ham and cooked noodles to white sauce, mix thoroughly.
- Pour into 9x13 inch glass or metal baking pan.
- Cook uncovered at 350°F for 45 minutes.

- Mix patty ingredients in a medium bowl.
- Form into 8 1/2-inch thick patties.
- Heat 1 teaspoon oil in each of two medium nonstick skillets (or cook 1 batch at a time in 1 pan).
- Add 4 patties to each pan and cook over medium heat, turning over patties 2-3 times until golden brown, about 5 minutes.
- Meanwhile, stir sauce ingredients together in a small bowl until blended. Serve with patties.
