POTATO CHIP-CRUSTED CHICKEN STRIPS WITH HONEY MUSTARD DIPPING SAUCE



Potato Chip-Crusted Chicken Strips with Honey Mustard Dipping Sauce image

1 cup all-purpose flour
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon paprika
1 teaspoon ground mustard
Kosher salt and freshly ground black pepper
3 large eggs
16 to 20 ounces your favorite BBQ or salt and vinegar potato chips (I like Zapp's Voodoo)
2 pounds boneless chicken breast, cut into strips
1/2 cup honey
5 tablespoons mayonnaise
1/4 cup Dijon mustard
1 tablespoon yellow mustard
1 tablespoon whole-grain mustard
1/4 teaspoon garlic powder
Kosher salt

Steps:

  • For the chicken: Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
  • In a bowl or baking dish, add the flour, garlic powder, onion powder, paprika, ground mustard and 2 teaspoons each salt and pepper and stir to combine. Beat the eggs in a separate baking dish. Finely crush the potato chips in their bag or in a separate resealable bag. Pour into a bowl or baking dish.
  • Sprinkle the chicken with 2 teaspoons salt. Dip the chicken in the seasoned flour and coat completely, then into the egg mixture until completely coated. Finally, dip the chicken into the potato chips, making sure the chips stick to the whole surface. Transfer the chicken to the prepared baking sheet.
  • Bake, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165 degrees F, about 20 minutes.
  • For the honey mustard sauce: While the chicken is baking, mix together the honey, mayonnaise, Dijon, yellow mustard, whole-grain mustard and garlic powder in a small bowl. Season with salt as desired. Serve with the chicken.

1 tablespoon Worcestershire sauce
2 ounces Southern Comfort
1 lime juice
3 ounces balsamic vinegar
1 cup chinese sweet chili sauce
2 ounces Southern Comfort
2 sprigs cilantro, chopped
1 lime, juice of
1 tablespoon hot sauce
3 ounces honey
1 ounce sesame oil
2 boneless skinless chicken breasts, sliced into long strips

Steps:

  • Begin by mixing all of the ingredients for the marinade together in a bowl and set aside.
  • Place the breasts in marinade and let stand 1 hour. Grill the chicken until done or lightly browned on each side. Remove from the grill and serve with the Southern Comfort dipping sauce.

1 1/4 lbs uncooked penne pasta
3 tablespoons unsalted butter
1 cup minced onion
1 tablespoon minced garlic
3 tablespoons cajun seasoning
2 1/2 cups crushed canned tomatoes
2 cups whipping cream (35%)
salt and pepper, to taste
6 boneless chicken breasts
1 tablespoon cajun seasoning

Steps:

  • Cook pasta until all dente.
  • Melt butter; add onion and garlic; cook 1 minute; add Cajun seasoning and cook 1 minute.
  • Stir in tomatoes and simmer, uncovered, until reduced by half; add cream and simmer until reduced by half; add drained pasta; season with salt and pepper to taste.
  • To prepare Cajun chicken topping for pasta: brush chicken breasts lightly with oil, then generously season with Cajun seasoning mix; grilled until cooked, then slice and arrange on top of pasta.

4 chicken pieces (light or dark, your choice)
4 tablespoons butter
2 cloves garlic, minced
1 1/2 teaspoons black pepper
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon oregano
1/2 teaspoon parsley
1/2 teaspoon garlic powder
1/2 bay leaf, crushed (don't use the "spine"!)
1/4-1/2 dried chili, crushed (or more)
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce (or hot sauce of choice)
2 teaspoons brown sugar
3 ounces cans tomato paste

Steps:

  • Saute chicken pieces in a skillet with butter and garlic until chicken and garlic are nicely browned.
  • In the meantime, preheat oven to 350 degrees F and prepare the voodoo rub: Combine black pepper, paprika, thyme, oregano, parsley, garlic powder, crushed bay leaf, crushed dried chile, salt, Tabasco, brown sugar and tomato paste in a small bowl.
  • Remove chicken from skillet and coat with voodoo rub (tomato paste mixture).
  • Test your heat tolerance first!
  • Bake covered at 350 degrees for 45 minutes to an hour (depending on which chicken pieces you're using).
  • Alternatively, after sauteeing with garlic, this chicken can be grilled with the voodoo rub.
  • I like to serve with plain white rice spiked with sliced scallions.
  • Oh, and remember not to rub your eyes after handling that chile- or wear gloves while crushing!

GRILL "BLACKENED VOODOO" CHICKEN

4 lbs chicken wings, sections
1 cup Italian dressing
1/4 cup cajun seasoning (recipe follows)
1/3 cup butter
1/4 cup sweet and sour sauce
1/4 cup sweet smoked paprika
3 tablespoons kosher salt
2 tablespoons fresh coarse ground black pepper
1 1/2 tablespoons dried sweet basil leaves
1 1/2 tablespoons file powder
1 1/2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon cayenne pepper
1 tablespoon white pepper
1 tablespoon dried thyme

Steps:

  • 1. Marinate chicken wings in Italian dressing for at least 2 hours but up to 8 hours.
  • 2. Remove the chicken from the marinade and shake off the excess. Sprinkle with the Cajun dynamite dust to evenly coat each wing. Allow to sit till dust appears "wet".
  • 3. Preheat grill set up for indirect medium heat (300 degrees). Add apple wood chips soaked in water for 1 hour to create smoke. Arrange Chicken wings over drip pan and smoke for 40 minutes.
  • 4. In aluminum foil pan over direct heat, melt butter, coat wings with butter. Cook chicken over direct heat 10 minutes. Just before serving, dip wings in sweet & sour sauce and cook 10 more minutes to "set" (to stick the sauce to them).
  • 5. You may have to move the chicken wings around if you have hot spots in your grill, when grilling direct, just leave over coals long enough to char "Blacken" them with a bit of char. Do not burn. You are looking for a nice mahogany color. These wings are a little on the hot side, but my family tears them up!

Dipping Sauce
DIPPING SAUCE:
1 cup Chinese sweet chili sauce
1/4 cup Southern Comfort bourbon whiskey
2 sprigs cilantro, chopped
1 lime, juiced
1 tablespoon hot pepper sauce
1/3 cup agave
2 tablespoons sesame oil
1 tablespoon cayenne pepper

Steps:

  • Mix all of the ingredients for the marinade together in a bowl and set aside. Place breast strips in the marinade and let stand for 1 hour. Grill chicken strips until done or lightly browned on each side. Remove from heat and serve with dipping sauce.DIPPING SAUCE:Stir chili sauce, Southern Comfort, cilantro, lime juice, hot sauce, agave, sesame oil and cayenne pepper together in a small bowl. Mix well before serving.
