HONEYED FRUIT SLAW



Honeyed Fruit Slaw image

Number Of Ingredients 13

3 apples unpeeled Red Delicious, chopped
2 tablespoons lemon juice fresh
1 cabbage small, coarsely shredded
1 cup green seedless grape cut in half
1 (8-ounce) can pineapple tidbit drained
1/3 cup honey
1 tablespoon red wine vinegar
1 teaspoon horseradish prepared
1/2 teaspoon salt
dash hot pepper sauce
lettuce leaves
1 cup cashew nuts broken
Unpeeled Red Delicious apple, thinly sliced

Steps:

  • In a large bowl, toss chopped apple with lemon juice combine with cabbage, grapes and pineapple. Combine honey, vinegar, horseradish, salt and hot pepper sauce until well blended. Pour over salad mixture and toss until coated. Serve on lettuce and sprinkle with cashews. Garnish with sliced apple.

Honeyed Fruit image

A delightful side dish to a brunch dish or a good summer dessert. It must sit for several hours after preparation before serving.

4 cups fresh fruit, cubed (melon, peaches, blueberries, strawberries, etc. , your choice)
1 cup white wine
1/4 cup lavender honey or 1/4 cup other flavored honey
3 sprigs of fresh mint
1 lemon, juice of
lemon zest
1 cinnamon stick

Steps:

  • In a medium boiler, bring the wine, honey, mint, lemon juice and zest of one lemon to boil along with the cinnamon stick.
  • Once this begins to boil, remove the mixture from the heat and allow it to cool slightly (about 15 minutes).
  • Remove the cinnamon stick and pour the liquid over the fruit mixture.
  • Stir well to coat and place the fruit mixture in the refrigerator.
  • Allow this to sit for several hours, or overnight before serving.

3 tablespoons honey
1/2 teaspoon paprika
1/2 teaspoon dry mustard
1/8 teaspoon salt
2 tablespoons red wine vinegar
1/4 cup vegetable oil
2 teaspoons sesame seeds toasted
5 cups fresh fruit in season

Steps:

  • In a small mixer bowl, combine honey, paprika, mustard and salt. Stir in vinegar add oil in a slow, steady stream, beating constantly about 3 minutes until thickened. Stir in 1 1/2 teaspoons sesame seed. Fold in fresh fruit. Cover and refrigerate several hours. Just before serving, sprinkle with remaining 1/2 teaspoon sesame seed.Note: A nice combination of fruits would be 1 1/2 cups fresh pineapple, 1 1/2 cups chopped Red Delicious apples, 1 cup red grapes, seeded and halved, and 1 cup sliced bananas.
