I found this recipe ages ago in a magazine, and didn't try it until I was requested to bring a coffee cake to Easter brunch. Oh my gosh, the cake was amazing! The recipe was great as is, and I think you'll all enjoy it. I know the guests at the brunch did! (Tip: Now that I've made the recipe once, I do think that it could use more filling. Of course, that's just me, but if you have want an extra sweet coffee cake, I would double the filling recipe, then pour only 1/3 of the batter in the pan when you sprinkle the filling on it. Only sprinkle 1/2 the filling on the batter, pour in another 1/3 of the batter, sprinkle the rest of the filling on it, than pour the remaining cake batter on it. I think that will make the cake turn out even better! Just a suggestion... I'll let you know how it turns out after I try it!)

1/2 cup brown sugar, firmly packed
1/2 cup pecans, finely chopped
1/3 cup quick-cooking oats
1 1/2 teaspoons cinnamon
1 cup sugar
3/4 cup butter, softened
3 eggs
1 teaspoon almond extract
3 cups all-purpose flour
1 cup low-fat vanilla yogurt
1/2 cup traditional half-and-half cream or 1/2 cup fat free half-and-half cream
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 cup brown sugar, firmly packed
1/4 cup butter
1/4 cup half-and-half cream
1/2 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Heat oven to 350 degrees Fahrenheit. Grease and flour one 12-cup Bundt pan or 10-inch tube pan; set aside.
  • FILLING: Combine all filling ingredients in small bowl; mix well and set aside.
  • CAKE: Combine sugar, butter, eggs, and almond extract in large mixer bowl. Beat at medium speed, scraping sides of the bowl often, until well mixed. Add all remaining cake ingredients while beating on low continually. Mix well.
  • Spread half of batter into prepared pan. Sprinkle filling over batter. Spoon remaining batter over filling.
  • Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Place cake on wire rack.
  • GLAZE: Combine all glaze ingredients in 2-quart saucepan. Cook over medium-high heat until mixture begins to boil.
  • Reduce heat to medium; cook, stirring constantly, for 1 minute.
  • (If using Fat Free Half and Half, remove from heat and let cool for 30 minutes to thicken or until desired glazing consistency.).
  • Drizzle glaze over cake. Serve cake warm or at room temperature.

1 package yellow cake mix (regular size)
1 package (3.4 ounces) instant vanilla pudding mix
1 cup sour cream
4 large eggs, room temperature
1/3 cup canola oil
2 teaspoons vanilla extract
2/3 cup chopped pecans
1/3 cup sugar
2 teaspoons ground cinnamon
1/2 cup confectioners' sugar
2 tablespoons orange juice

Steps:

  • In a large bowl, beat the first six ingredients on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into a greased 13x9-in. baking pan. Combine pecans, sugar and cinnamon; sprinkle over batter. Cut through batter with a knife to swirl pecan mixture. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Meanwhile, in a small bowl, combine confectioners' sugar and orange juice until smooth; drizzle over warm coffee cake. Cool on a wire rack.

2 cups all-purpose flour
¼ teaspoon salt
1 tablespoon baking powder
1 cup butter, softened
1 cup sour cream
1 ½ cups white sugar
2 eggs
1 tablespoon vanilla extract
½ cup brown sugar
1 cup chopped pecans
1 teaspoon ground cinnamon
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with aluminum foil, and lightly grease with vegetable oil or cooking spray. Sift together the flour, baking powder, and salt; set aside.
  • In a large bowl, cream the butter until light and fluffy. Gradually beat in sour cream, then beat in sugar. Beat in the eggs one at a time, then stir in the vanilla. By hand, fold in the flour mixture, mixing just until incorporated. Spread batter into prepared pan.
  • To make the Pecan Topping: In a medium bowl, mix together brown sugar, pecans and cinnamon. Stir in melted butter until crumbly. Sprinkle over cake batter in pan.

1 box yellow cake mix
8 ounce tub sour cream
4 eggs
3/4 c. vegetable oil
1 c brown sugar
1 Tbsp ground cinnamon
2 c. powdered sugar
4 Tbsp. milk
1 Tbsp. vanilla

  • Preheat oven to 325. Prepare 9 x 13 pan. In large mixing bowl, combine cake mix, eggs, oil, and sour cream. Stir by hand until large lumps are gone. There will still be some lumps but that's ok. Pour half the batter into the pan. Now, in a medium bowl. Take your brown sugar and cinnamon and combine. Mix up your brown sugar and cinnamon really well. Sprinkle the brown sugar mixture all over the batter in the cake pan. Now carefully spread the other half of the batter on top. Don't be afraid, it's gonna get really uncomfortable. All the batter and stuff is gonna get all mixed together and you're gonna think you are doing it all wrong. But don't worry how it looks. Trust me. Once it's all spread around, take a butter knife and twirl it all through the batter, so it gets all swirly and stuff. Bake for 40 minutes or until a toothpick comes out clean. Just when it's about done baking, mix together your powdered sugar, vanilla and milk. I always use a fork to be sure all the little clumps get broken up Once the cake comes out of the oven, waste no time at all. Pour this powdered sugar mixture over the warm cake. Now sit back and wait for the wonderful crackle to appear

I came up with this coffee cake because, I was in a hurry. I did not feel like waiting for yeast dough to rise. It makes for a beautiful presentation. I made this with frozen bread dough. This would be a great cake for guests, holidays or anytime. It consists of honey buns all stacked up on top of each other. It was a big hit in my home. It is absolutely delicious. I filled the cake With honey, pecans, orange zest and raisins. I topped it off with an orange zest icing. It came out beautiful. The family loves it! I hope you all enjoy my creation.

2 - frozen bread dough's
4 tablespoon(s) melted butter
FILLING
2/3 cup(s) honey
1/2 cup(s) brown sugar packed
1 tablespoon(s) cinnamon
1 cup(s) raisins
1 cup(s) chopped pecans or walnuts
1 tablespoon(s) orange zest
4-5 tablespoon(s) fresh orange juice from orange
GLAZE
1 1/2 cup(s) powdered sugar
2 tablespoon(s) softened butter
4 tablespoon(s) milk
1 teaspoon(s) vanilla
2 teaspoon(s) orange zest

Steps:

  • Thaw 2 loafs of bread dough covered overnight in refrigerator.
  • Mix ingredients together in a bowl for filling. Add enough orange juice so it is spreadable.
  • Roll each dough on floured surface in to a rectangle about 6"x18" long.
  • Spread 1/2 the butter over each rectangle. Spread each rectangle with 1/2 the filling. Leave 1" of dough on one long end with no filling.
  • Roll dough with filling starting on long end like a jelly roll. Wet ends with water. Pinch together to make a seam. Slice in to 1 inch slices.
  • Grease Angel food cake pan. Place rolls in the angel food pan with sides touching. Cover entire bottom of pan. Place more slices on top for 2nd layer. Make sure to leave no spaces. If you have extra slices. Place them scattered on top of 2nd layer.
  • Cover pan and set in a warm place until dough rises and doubles in size. Note: quick rise my method. Heat oven to 170 degree's. Place covered coffee cake in oven. Shut oven heat off. This will shorten the rise time. When risen remove from oven. Heat oven to 350 degree's
  • Place cake in oven. Bake 20 minutes. Loosely cover with foil. Continue baking for about another 25 -30 minutes.
  • Make icing. Place powdered sugar, butter, vanilla, and orange zest in bowl. Mix until smooth. Set aside.
  • Remove cake from pan while still warm. Place upright on platter. Drizzle with icing.
