HONEY WHITE BREAD

Steps:
- Place the water in the bowl of an electric mixer fitted with a dough hook attachment. If the bowl is cold, be sure the water temperature doesn't drop below 110 degrees F. Add the yeast and sugar; stir and allow them to dissolve for 5 minutes.
- Add the milk, butter, and honey. Mix on medium speed until blended. Add the egg yolks, 3 cups of the flour, and the salt. Mix on low speed for about 5 minutes. With the mixer still on low speed, add 2 more cups of flour. Raise the speed to medium and slowly add just enough of the remaining flour so the dough doesn't stick to the bowl. Add the flour slowly; you can always add more but you can't take it out. Knead on medium speed for about 8 minutes, adding flour as necessary.
- Dump the dough out onto a floured surface and knead by hand for a minute, until the dough is smooth and elastic. Grease a bowl with butter, put the dough in the bowl, then turn it over so the top is lightly buttered. Cover the bowl with a damp towel and allow it to rise for one hour, until doubled in volume.
- Grease two 9 x 5-inch loaf pans with butter. Divide the dough in half, roll each half into a loaf shape and place each in a prepared pan. Cover again with the damp towel, and allow to rise again for an hour, until doubled in volume.
- Meanwhile, preheat the oven to 350 degrees F. When the dough is ready, brush the tops with the egg white and bake the breads for 40 to 45 minutes, until they sound hollow when tapped. Turn them out of the pans and cool completely on a wire rack before slicing.

- In a large bowl, dissolve yeast in warm milk. Add honey, butter, salt and 5 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured board; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down and shape into 2 loaves. Place in greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 30-35 minutes or until golden brown. Cover loosely with foil if top browns too quickly. Remove from pans and cool on wire racks.

This recipe makes a loaf of bread that is high rising, soft textured, slices well, and keeps well too. All the qualities we get in store bought bread but, warm and fresh out of the bread machine, at a fraction of the cost too. I make this recipe 3 to 4 times a week. You will love this!!!

- Place ingredients in bread pan in order specified by your manual.
- Use the white bread and light crust setting.
- Press start.
- Your dough should be slightly tacky to the touch and soft when you press down on it, like playdoe when you first open it. If too dry add warm milk 1 teaspoon at a time. If too wet add white flour 1 Tablespoon at a time.

- In a saucepan or microwave-safe bowl, combine milk, honey and butter. Heat just until the butter is melted. Cool for 10 minutes. In a bowl, combine the remaining ingredients; stir in milk mixture just until combined.

- 1. In a large mixing bowl, whisk together warm water and honey until honey is dissolved. Add yeast, and cover with a towel.
- 2. In about 10-20 minutes, your mixture should look like the picture above. (I would describe it as delightfully frothy.) Mix in your salt, and then add the bread flour one cup at a time. (I use the whisk for the first three cups and then switch to a wooden spoon or silicone spatula for the last three cups. For the very last cup, I don't even stir.).
- (Take any rings off between Steps 2 and 3. I learned this the hard way. Keep them on the counter that is farthest away from the garbage disposal. I also learned this the hard way.).
- 3. Add a little extra flour to your hands and knead the dough, about 5 minutes. (Maybe this will get me in trouble with the baking police, but I knead the dough right in the large mixing bowl. It keeps my counter cleaner.) Place kneaded dough in a large, greased bowl and cover with towel.
- 4. After an hour, your dough should have risen significantly. (Here comes the best part!) Punch the dough (Don't hold back! Get out all your frustration!) and then knead again for a couple of minutes. Divide into two lightly-greased loaf pans and cover with your towel once more.
- 5. After allowing the dough to rise for 30 minutes in the loaf pans, bake in a preheated oven at 325 for 30-35 minutes. (For my oven, it's about 33 minutes. A lot of bread recipes use an oven at 350. I find 325 works better for honey.).

MILK-N-HONEY WHITE BREAD

- To shape into loaves, roll dough sections into rectangles and beginning at the short end roll each rectangle firmly (but not too loose/tight) and pinch seam on top and sides.
- Bake at 375°F for 30-35 minuets or until golden brown. ( cover loosely with foil if top browns too quickly).
- After baking remove from pans immediately and cool on a wire rack.
