- Heat the oven to 180C/160C fan/gas 4. Put the feta in the centre of a baking dish, about 25cm x 20cm, and scatter the cherry tomatoes and red onion around the cheese.
- In a jug, whisk the olive oil with the garlic, chopped herbs, honey and some seasoning, then drizzle over the tomatoes and feta. Bake for 35-40 mins until the tomatoes have burst, and the feta is soft and lightly golden. Drizzle with a little extra chilli fusion honey and olive oil to serve, alongside some crusty bread and a green salad.

- Preheat the oven to 375°F/190°C. Lightly oil a roasting pan. Halve the tomatoes and place them, cut side up, in the dish. They should fit snugly with little or no space between them.
- Crush the garlic with a pinch of salt, then beat it with the honey, olive oil, and a good grinding of pepper. Spoon this sticky, garlicky mixture over the cherry tomatoes. Roast for about 30 minutes, until golden, juicy, and bubbling.

- In a bowl, combine harissa, honey and lime juice. Stir together until combined and season to taste with salt.
- In large cast-iron skillet, heat 1 tablespoon of the grapeseed oil and the olive oil over medium-high heat. Add green beans and cook undisturbed until they began to char in spots, about 3 minutes. Continue to cook, tossing frequently, until beans are just cooked through and slightly blistered and browned in spots, about 5 to 6 minutes more. Some beans will be more cooked than others - that's O.K. Season with salt and place beans in a bowl.
- Heat remaining 1 tablespoon grapeseed oil in the skillet. Add tomatoes and cook undisturbed until they also begin to char in spots, about 1 minute. Stir tomatoes frequently until they are just cooked through and some begin to burst, about 2 minutes more. They do not need to be totally cooked through. Season with salt.
- Remove skillet from heat and add green beans. Add harissa mixture and butter and toss until everything is combined and butter is melted. Add in half of the mint and stir again. Spoon into a large bowl and scatter with remaining mint. Garnish with flaky salt, if using.

- Preheat oven to 425 degrees Fahrenheit. In a medium bowl, combine the balsamic vinegar, honey, a tablespoon of olive oil, garlic, thyme, rosemary, chili flakes, salt and pepper. Stir well to mix. Place chicken breast in a resealable plastic bag and pour the marinade over the top (from step above). Seal and toss the chicken to evenly coat. Marinate for at least 30 minutes if chicken is thawed. Overnight is better. Next place the potatoes and cherry tomatoes in a casserole dish, drizzle the remaining olive oil over potatoes, season with salt and pepper and stir to coat. Put the green beans on top of the potatoes and the chicken on top of the green beans evenly spaced in the dished. Pour the marinade over the casserole dish. Place in 425 degree oven and back 30-45 minutes - depending on how much you have. Based the chicken breast with the pan juices. Use a folk to test the potatoes to be cooked soft enough and taste the green beans for tenderness. The chicken should have an internal temperature of 165 degrees. Allow the chicken to rest for 5-10 minutes. Spoon juices over the top and serve.
HONEY-BALSAMIC PORK TENDERLOIN W/ ROASTED TOMATOES AND MASHED POTATOES

- Pork preparation 1. Whisk together vinegar, (2 Tbsp) honey, (2 Tbsp) oil, mustard, and thyme in a large zip-top plastic bag. 2. Add pork, seal, and turn to coat. 3. Marinate 30 min. in refrigerator. 4. Preheat oven to 400 degrees. 5. Remove pork from marinade and place in rimmed baking sheet lined with foil; brush lightly with marinade. 6. MOROCCAN CHICKEN WITH TOMATOES AND HONEY

- Heat the oil and butter in a large casserole. Add the chicken pieces and cook over a medium heat for about 3 minutes until the chicken is lightly browned. Add the onion, garlic, cinnamon, ginger, tomatoes and seasoning, and heat gently until the tomatoes begin to bubble. - Heat oven to 200C/fan 180C/gas 6. Halve the tomatoes and put them, cut side up, in a single layer in a large ovenproof dish or baking tray. Tuck a sliver of garlic into each tomato half and scatter over thyme leaves. Drizzle with the oil, season generously, then bake for 30-40 mins or until the tomatoes are soft and juicy. Leave to cool. Can be roasted and chilled up to 3 days ahead. Bring to room temperature before serving.
- To serve, carefully lift the tomatoes onto a serving plate and pour over some of the juices from the roasting dish. Whisk together the honey, vinegar, mustard and a little seasoning to make a dressing, drizzle over the tomatoes and scatter with a few more thyme leaves.

- Heat 2 T oil in a large pan or pot. Add the chicken, tomatoes, ginger, cinnamon and saffron or turmeric.
- Cover, and cook over low heat, stirring from time to time, for 1 hour.
- Set oven at 400 deg F/200 deg Celsius.
- Remove chicken from pot, and roast in oven to brown slightly.
- Meanwhile, cook the sauce in the pot, uncovered, to thicken slightly. It should be like a sizzling cream. Stir all the time.
- Then add the honey and stir in well.
- Remove chicken from the oven, and return chicken to the pot. If the sauce is a nice consistency, turn heat very low so it does not reduce further.
- Heat the leftover 1 T oil in a separate pan and add the almonds. Cook for a few moments only (it burns easily, so stir it) Then add the sesame seeds, and cook briefly as well, until lightly toasted.
- Serve the chicken hot, covered with the sauce and sprinkled with the toasted nuts.

MOROCCAN CHICKEN TAGINE WITH TOMATOES AND HONEY
Cinnamon and honey are surprisingly delicious additions to this Moroccan tagine of chicken and tomatoes. The chicken is stewed until tender with lots of tomatoes, which reduce to a thick, sweet puree. A garnish of toasted sesame seeds and fried almonds add nutty contrast. Moroccan tagines are traditionally served with Moroccan bread for scooping up the meat and sauce. Serves 4.

- Peel, seed and chop the tomatoes. Place them in a heavy, wide pot along with the butter, grated onion, garlic, cilantro, and spices. Stir to mix, then add the chicken.
- Cover and bring the chicken to a rapid simmer. Continue cooking, covered, for about an hour or until the chicken is very tender. Turn the chicken occasionally while it cooks.
- When the chicken is tender, carefully transfer it to a plate. Add the honey and ground cinnamon to the pot, and reduce the tomatoes to a thick, sweet puree. Stir frequently and adjust the heat to prevent the sauce from burning.
- Return the chicken to the pot to reheat gently for five to ten minutes, turning the meat once or twice.
- Arrange the chicken on a platter and cover with the sauce. Garnish with the sesame seeds and fried almonds, and serve.
JALAPENO HONEY MUSTARD WITH SUN DRIED TOMATOES
This is a recipe I clipped from a California newspaper back in 1993. Its very spicy and so good. If you like hot mustard I think you will like this one. You maight want to try the recipe with the smaller amount of jalapenos the first time. You can always add a chopped pepper later if you like it hotter. Also it is probably a good idea to warn friends to go slowly at first if you give this as a gift. It is surprisingly spicy.

- In a saucepan stir together dry mustard and flour. Whisk in water. Let stand for 10 minutes. Stir in mustard seeds, vinegar, honey, and salt. Turn heat on to medium and bring this mixture to a simmer. Whisk constantly. Cook for 2 minutes after simmering is noticable. Remove from heat.
- Stir in jalapeno and tomatoes. Mix well. Total amount of mustard is about 3 1/2 cups so have 3-4 pint jars ready. Pour into sterile jars. Store in refrigerator. Use within 8-10 weeks. NOTE: Nice for gifting but be sure to label it and indicate when it should be used and how to store it. I also give this recipe and the one to make the chicken dish in the link below. This is only for friends who like HOT STUFF, though. :)
