This is one of my husband's favorite meals. I serve it with rice pilaf, salad and grilled garlic bread. -Tracey Miller, Aiken, South Carolina

Number Of Ingredients 10

2/3 cup reduced-sodium soy sauce
2/3 cup honey
1/2 cup canola oil
1 tablespoon prepared horseradish
2 teaspoons steak seasoning
2 garlic cloves, minced
2 pounds boneless skinless chicken breasts, cut into 1-1/2-inch cubes
1 large sweet red pepper, cut into 1-1/2-inch chunks
1 large green pepper, cut into 1-1/2-inch chunks
1 large onion, cut into 1-1/2-inch wedges

Steps:

  • In a small bowl, combine the first six ingredients. Pour 1 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 5-6 hours. Cover and refrigerate remaining marinade., Drain and discard marinade. On six metal or soaked wooden skewers, alternately thread chicken and vegetables. Grill, covered, over medium heat for 5-7 minutes on each side or until chicken juices run clear, basting frequently with reserved marinade.

Honey chicken kabobs with veggies. You can marinate overnight and make these kabobs for an outdoor barbecue as a tasty alternative to the usual barbecue fare! Fresh mushrooms and cherry tomatoes can also be used. (This can also be done in the broiler.)

¼ cup vegetable oil
⅓ cup honey
⅓ cup soy sauce
¼ teaspoon ground black pepper
8 skinless, boneless chicken breast halves - cut into 1 inch cubes
2 cloves garlic
5 small onions, cut into 2 inch pieces
2 red bell peppers, cut into 2 inch pieces

Steps:

  • In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
  • Preheat the grill for high heat.
  • Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
  • Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

skewers
2 red bell peppers, cut into 2 in slices
8 chicken breast halves, skinless and boneless, cubed
1/3 c honey
1/3 c soy sauce
1/4 c vegetable oil
5 small onions, cut into 2 pieces
2 clove garlic
1/4 tsp pepper

Steps:

  • 1. Whisk oil, honey, soy sauce, and pepper. Before adding mix to chicken, reserve small amount to brush on kabobs while cooking. Place chicken, garlic, onions and peppers in bowl. Marinade for 2 hours.
  • 2. Preheat grill for high heat.
  • 3. If using wooden skewers, soak in water for 1 hour to prevent burning.
  • 4. Drain marinade from chicken and vegetables; discard marinade. Thread on skewers.
  • 5. Cook for 12-15 minutes. Lightly oil grill, turn and brush with reserved marinade frequently.

Another recipe I found in TOH magazine by Tracey Miller. I am always searching for recipes to cook on the grill and this is a great one!!! She suggests serving it with rice pilaf, salad and garlic bread which is what we do. Time doesn't include marinading time, which is 5-6 hours.

1/4 cup honey
1/4 cup balsamic vinegar
1/4 cup minced fresh rosemary
2 tablespoons olive oil
6 bone-in skinless chicken breast halves (7 ounces each)
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the honey, vinegar, rosemary and oil. Pour half of the marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate for 2 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from chicken. Place chicken bone side down in a 13-in. x 9-in. baking pan. Sprinkle with salt and pepper., Bake, uncovered, at 350° for 55-65 minutes or until a thermometer reaches 170°, basting occasionally with reserved marinade.
