Yield Makes 6 appetizer servings

Number Of Ingredients 10

1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
3 bacon slices, cut crosswise into 1/2-inch pieces
1/4 cup honey
1/4 cup dry white wine
2 large sweet yellow onions (about 1 1/2 pounds), cut into 1/4-inch-thick rounds
Nonstick vegetable oil spray
3/4 cup crème fraîche
1/2 teaspoon fine sea salt
1/8 teaspoon freshly grated nutmeg
1 teaspoon fresh thyme leaves

Steps:

  • Position rack in top third of oven and preheat to 375°F. Using lightly floured rolling pin, roll out puff pastry on lightly floured surface to 14x10-inch rectangle. Fold 1/2 inch of pastry edges in toward center on all sides, forming 13 x 9-inch rectangle. Transfer pastry to large rimmed baking sheet. Press firmly on pastry edges with fork to form rim. Chill crust.
  • Cook bacon in small skillet over medium heat until brown and crisp. Transfer to paper towels to drain. Reserve 1 tablespoon bacon drippings from skillet.
  • Whisk honey, wine, and reserved 1 tablespoon bacon drippings in large bowl. Add onions; toss to coat. Coat another large rimmed baking sheet with nonstick spray. Spread onion mixture in even layer on sheet. Roast 30 minutes. Turn onions over, allowing rings to separate. Roast until onions are caramelized, turning often for even browning, 30 to 45 minutes. Remove from oven; cool onions slightly.
  • Increase oven temperature to 400°F. Mix crème fraîche, sea salt, 1/4 teaspoon black pepper, and nutmeg in small bowl. Using offset spatula, spread crème fraîche over crust to folded edge. Arrange onions atop crème fraîche. Sprinkle with bacon. bake tart until crust is light golden brown and topping is bubbling, 20 to 25 minutes. Sprinkle with thyme and serve.

1 sheet frozen puff pastry, thawed
3 bacon slices cut into 1/2" pieces
1/2 cup honey
1/2 cup dry white wine
2 Tbs fresh Thyme, coarsely chopped, divided
Pam or other non-stick cooking spray oil
2 large or 3 medium sweet onions, sliced into 1/4' thick rounds
2 large or 3 medium apples, peeled, halved, cored, sliced into 1/4" thick wedges
3/4 cup creme fraiche
1/2 tsp fine sea salt
1/4 tsp black pepper
1/8 tsp nutmeg, freshly grated

Steps:

  • 1. Place 1 rack in top third and 1 rack in bottom third of oven, preheat over to 425 degrees F. Spray all baking sheets with cooking oil spray. 2. Roll puff pastry sheet on lightly floured surface to 14"x10". Fold 1/2" of pastry edges in toward center on all sides, forming 13"x9" rectangle. Transfer to rimmed baking sheet. Press firmly on pastry edges with fork to form rim. Chill crust. 3. Cook bacon in small skillet until brown and crisp. Transfer to paper towel to drain. Reserve 2 Tbs bacon drippings from skillet. 4. Whisk honey, wine, and 2 Tbs bacon drippings in small bowl. 5. Place sliced onions in large bowl, add 1/4 cup honey wine mixture, toss to coat. Add 1/2 Tbs chopped Thyme, toss to coat. Spread onions in single layer on second baking sheet coated with spray oil. 6. Repeat with sliced apples on third sheet. 7. Place onions on top rack and roast for 10 minutes. 8. Reduce oven to 400 degrees. Places apples on bottom rack and roast onions and apples for 20 minutes. 9. Remove both sheets from oven, stir each. Drizzle remaining honey wine mix over both and stir again. Reverse position of sheets and roast 20 minutes longer. Remove from oven and cool slightly. 10. Mix creme fraiche, sea salt, black pepper and nutmeg in small bowl. Spread on chilled crust up to folded edge. 11. Gently mix onions and apples together in large bowl. Spoon onion & apple mixture evenly atop creme fraiche on crust. Sprinkle with bacon. 12. Move rack to middle of oven. Bake tart in 400 degree oven until crust is golden brown and topping is bubbling, about 20-25 minutes. Remove from oven. 13. Sprinkle with remaining 1 Tbs of chopped Thyme. Serve.
