Delicious, chewy Oatmeal Craisin Cookies are easy-to-make and full of fantastic flavors that are sure to make them a new favorite! Loaded with molasses, cinnamon, vanilla, and old fashioned oats that all combine to make the perfect cookie!

1 cup butter ((softened, at room temperature))
1 cup light brown sugar ((packed - or dark brown sugar))
1/4 cup sugar
2 large eggs ((at room temperature))
2 Tbsp molasses
1 Tbsp vanilla extract
1 tsp baking soda
1 tsp ground cinnamon
1 tsp dried orange peel
1/2 tsp salt
1 2/3 cups all-purpose flour
3 cups old-fashioned rolled oats
1 1/2 cups craisins ((or dried cranberries))

Steps:

  • In a large bowl or the bowl of your stand mixer cream together the cup of softened butter with 1 cup packed light brown sugar and 1/4 cup sugar until smooth.
  • Add the 2 large eggs, 2 tablespoons molasses, and 1 tablespoon vanilla extract then mix into the creamed butter and sugar (use 1 tablespoon of your all-purpose flour if desired to keep the wet mixture from looking curdled).
  • Stir in the 1 teaspoon baking soda, 1 teaspoon cinnamon, 1 teaspoon dried orange peel, and 1/2 teaspoon of salt.
  • Mix in the 1 2/3 cups all-purpose flour until all of the flour has been incorporated into the wet ingredients.
  • Fold in the 3 cups of old-fashioned rolled oats and 1 1/2 cups of craisins or dried cranberries. Your dough will still be sticky once everything is combined.
  • Chill the dough for at least 30 minutes before baking, an hour is optimal.
  • Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet(s) with parchment paper or a silicone baking mat.
  • Portion out roughly 1/2 tablespoon bits of the dough and roll them into 1-inch balls (use more dough to get the right size dough balls as needed). Place the dough onto your prepared baking sheets leaving about 2 inches of spacing for the cookies to spread.
  • Bake at 350 degrees F (175 degrees C) with the baking sheet in the center of the middle oven rack. My smaller cookies baked for 10 minutes, larger will take 12-15 minutes. Remove from the oven when the edges are slightly golden and the center of the cookie still looks under-cooked.
  • Allow the baked cookies to cool for 5 minutes on the baking sheet before transferring them to a wire cooling rack to cool completely.

3 tablespoons butter, room temperature
1/2 cup brown sugar
1/4 cup honey
1 egg
1 tablespoon water
1/2 cup whole wheat flour (all-purpose is good too)
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups rolled oats (aka oatmeal)
chocolate chips (optional) or chopped nuts, etc (optional)

Steps:

  • Preheat oven to 350 degrees F. Spray a cookie sheet with nonstick cooking spray (just for convenience :]).
  • Using a mixer with the paddle attachment, mix together the butter, brown sugar, honey, egg and water thoroughly.
  • Sift together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix. Add any additional ingredients you've chosen.
  • Drop by heaping teaspoonfuls onto the cookie sheet. Bake 12 to 15 minutes. Cool on a wire rack.

1 ¼ cups quick oats
1 cup white whole wheat flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon kosher salt
½ cup honey
¼ cup unsweetened applesauce
4 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon vanilla extract
⅓ cup dark chocolate chips
¼ cup chopped walnuts

Steps:

  • Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
  • Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
  • Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
  • When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
  • Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
  • Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
  • Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.

2 c all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1 c unsalted butter (room temp)
1 1/2 c brown sugar (i use dark, but light is fine), packed
1 Tbsp honey
1 tsp orange extract
2 large eggs
3/4 c craisins (dried, sweetened cranberries)
1/2 - 3/4 c mini cinnamon chips (i use hershey's)
2 c oats, quick cooking (not instant)
1/2 c chopped walnuts; or any nut you prefer (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium sized bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Set aside.
  • 3. In a large bowl, cream together the butter and sugar until fluffy.
  • 4. Add the honey and orange extract. Beat until fluffy.
  • 5. Add the eggs, one at a time, and beat until fully incorporated.
  • 6. Mix in the craisins, cinnamon chips, oats and nuts (if desired).
  • 7. Add flour mixture and mix well.
  • 8. Roll into 1 inch balls and place on ungreased cookie sheets. Bake for 13-15 minutes, or until lightly browned around the edges.
  • 9. Place cookies on wire rack until completely cooled.

1/2 cup honey
1 large egg
1/4 cup smooth unsalted almond butter

1 cup whole-wheat pastry flour (or 1/2 cup each all-purpose and whole-wheat flour)
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

1/2 cup raisins

Steps:

  • Preheat the oven to 350 degrees F. Mist 2 baking sheets with cooking spray. Beat the butter, canola oil, honey, egg, almond butter and vanilla extract in a large bowl with a mixer until combined.
  • In another bowl, whisk the dry milk, flour, baking soda, cinnamon and salt. Add the flour mixture to the butter mixture and stir to combine. Stir in the oats and raisins.
  • Scoop tablespoonfuls of batter about 2 inches apart onto the prepared baking sheets. Bake until golden, about 12 minutes. Let the cookies cool 2 minutes on the baking sheets, then transfer to a rack to cool completely. Store in a loosely covered container for up to 3 days.

2 cups whole wheat flour
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
½ cup butter (melted)
½ cup coconut oil (melted)
2 large eggs
⅞ cup honey
1½ Tablespoons molasses
1 Tablespoon vanilla extract
3 Tablespoons milk
3 cups old fashioned oats
1 cup raisins

Steps:

  • Preheat oven to 320 degrees F. Lightly spray cookie sheet with non-stick cooking spray or use a baking liner. Set sheet aside.
  • In a large bowl, mix together flour, salt, cinnamon, baking powder, and baking soda. Add in butter, oil, eggs, honey, molasses, vanilla, and milk and stir until all combined.
  • Fold in oats and raisins.
  • Drop heaping tablespoonfuls (these cookies work best if they are a little bit bigger . . . I found that if they are smaller, they burn easily) onto prepared baking sheet.
  • Bake for 8-10 minutes or until cookies are slightly golden. Keep in mind that honey bakes faster than sugar, which is why you cook these at a lower temperature that most cookies. Be sure to not overcook them or they will be crispy (unless you like cookies that way!).
