GRILLED HAM AND CHEESE
The ultimate Grilled Ham and Cheese Sandwiches served with a simple homemade Honey Mustard Sauce.

Steps:
- Make the honey mustard sauce by combining all ingredients in a bowl and stirring until smooth. Cover and refrigerate until ready to use (can be made in advance).
- Optional: Spread a thin layer of honey mustard sauce on the insides of the bread slices.
- Layer sandwiches with 3 slices of cheese (or more!) and a slice of ham.
- Heat a skillet over medium-low heat. Butter the outsides of the sandwich bread.
- Add the sandwich to the hot skillet and cook for 2-3 minutes, until golden. Flip to the other side and cook for a few more minutes until cheese is melted and bread is golden brown. Serve warm, with honey mustard sauce for dipping.

- Slice rolls in half lengthwise.
- Fill with ham and cheese; set aside.
- In a medium saucepan, combine butter, honey, ground mustard, and poppy seeds.
- Bring to a boil; pour evenly over sandwiches.

- Remove foil; bake at 350° for 20 minutes.

HONEY HAM SANDWICH

- For the biscuits: Preheat the oven to 475 degrees F.
- Sift together the flour and salt into a large bowl. Add the butter and shortening and cut together with a pastry cutter. Gently stir in the buttermilk using a fork. Knead the mixture a few times with your hands until the dough comes together.
- Tip the dough onto a floured surface and roll out to about 1/2 inch thick. Using a 3-inch round cutter, cut out 12 biscuits and transfer to a baking sheet.
- For the topping: Brush the biscuit tops with 2 tablespoons of the melted butter and bake until golden, 13 to 15 minutes. Allow the biscuits to cool slightly, 4 to 5 minutes.
- Meanwhile, whisk together the honey, Dijon, parsley and remaining 8 tablespoons melted butter in a small saucepan over medium heat. Bring to a simmer and remove from the heat.
- For the sandwiches: Preheat the broiler.
- Split the biscuits in half and return to the baking sheet cut-side up. Brush the cut sides with the honey butter. Place 2 halved ham pieces on the bottom of each biscuit and top each with a slice of cheese. Broil until the cheese is melted, 1 to 2 minutes. Carefully remove from the oven and pour over the remaining honey butter. Place the tops on the biscuits and serve.

HOT & MELTY OVEN BAKED HAM & SWISS SANDWICHES
I made 36 of these for our neighborhood Holiday House Hop Party. They were a huge hit last year so I searched for a recipe to present again this year. I bought a good deli ham and had it shaved, I think it's easier to bit into and enjoy. You can use as much ham & cheese as you like. If it fits on the buns, go for it! The buttery mustard sauce is amazing! I do not add the poppy seeds, they look pretty but nobody likes speckled teeth! - On low heat, in a small sauce pan add butter, mustard, poppy seeds, onion flakes & Worcestershire sauce. Heat until butter is melted and onion hydrated, about 5 minutes. Remove from heat & set aside.
- Slice all of the rolls in half and place the bottom halves in a 9x13 baking dish or foil lined baking sheet. Lightly brush butter sauce on bottom half of rolls, you don't need much.
- Divide the shaved ham slices and cheese among all the bottom half of the sliced rolls. Cover with the top half of roll.
- Spoon the buttery mustard sauce over the tops of the sandwiches. Cover with foil and refrigerate until ready to bake.
- Let sit overnight or at least one hour.
- Pre-heated oven to 350°F.
- Bake on the middle oven rack, covered for 10 minutes, remove foil, bake for an additional 5 minutes (total of 15 minutes baking time) until warmed through and the cheese is gooey and melty. Add an additional minute or 2 if needed.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
- Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.
