⅓ cup olive oil
3 tablespoons lime juice
1 bunch fresh cilantro, stems chopped off
2 teaspoons chipotle pepper in adobo sauce
¼ teaspoon salt
1 tablespoon olive oil
2 tablespoons honey
1 teaspoon Mccormick® ground cumin
1 teaspoon McCormick® Paprika
1 teaspoon garlic powder
1 lime, zested
¾ teaspoon salt
½ teaspoon pepper
1 lb shrimp, peeled and deveined
1 corn, cob
5 oz baby greens, mixed
1 cup grape tomato
½ cup radish, quatered
avocado, half, cubed
1 scallion, thinly sliced

Steps:

  • Dressing: Place all the ingredients in a food processor. Process for about 1 minute until emulsified. Set aside.
  • In a large bowl, mix together olive oil, honey, McCormick® ground cumin, paprika, garlic powder, lime zest, salt, and pepper. Add shrimp and toss to coat. Thread shrimp onto soaked bamboo skewers.
  • Heat grill or grill pan to medium-high heat. Place shrimp skewers and the corn on the grill and close the lid. Grill for 4 minutes, then flip skewers. Grill for 3 minutes on the second side, then take the skewers off the grill. Rotate corn to get light grill marks. (Corn will take about 5 minutes longer than the shrimp.) Take the corn off the grill.
  • Pull the shrimp off the skewers. Slice corn off the cob.
  • Assemble the salad: On a platter, arrange the mixed baby greens. Scatter the tomatoes, radishes, and avocado on top. Add the shrimp and corn. Scatter sliced scallion over the salad. Drizzle with the dressing. Serve!

2 tablespoons olive oil
2 tablespoons balsamic vinegar
3 tablespoons honey
1/4 cup fresh lime juice (1 lime)
1/4 teaspoon salt (adjust to taste)
1 teaspoon pepper (adjust to taste)
1 teaspoon garlic powder (adjust to taste)
1 1/2 teaspoons butter, softened
1 1/2 teaspoons flour
3/4 lb large raw shrimp, deveined & shelled

Steps:

  • Combine olive oil, vinegar, honey, lime juice, salt, pepper and garlic together to make marinade. Marinate shrimp for about 30 minutes or more if desired, then drain marinade into a cup and save to make glaze after cooking shrimp.
  • Heat grill pan to medium, grill shrimp for a total of 3 minutes, turning over once. Remove shrimp from pan and cover to keep warm.
  • Blend butter and flour together and add to juices in pan. Add saved marinade to pan also and heat till thickened stirring to prevent lumps, about a minute or two. Cover shrimp with glaze or serve separately over white rice.
  • Makes two servings.

6 thin slices pancetta
18 uncooked large shrimp, peeled and deveined
1/4 cup honey

  • Heat oil in a large skillet over medium-high heat.

Steps:

  • For the honey chipotle lime sauce: In a food processor, puree all the ingredients until combined and add to a saucepan to heat through over medium heat.
  • For the shrimp: While the sauce is reducing, combine the flour with the salt, pepper, cayenne and chili powder and stir to combine. Add the shrimp in batches to the flour and toss gently to coat evenly.
  • Preheat a couple inches canola oil to 350 degrees F in a deep skillet and add the shrimp. Cook until golden brown, turning as needed, 3 to 4 minutes. Work in batches to avoid crowding. Remove from the oil and drain on a paper towel-lined plate.
  • Divide and add the rice noodles to the bottom of 2 martini glasses. Top the noodles with 3 lime wheels each and set aside until service.
  • Add the shrimp to the reduced sauce and toss gently to coat evenly. Remove from the sauce with a slotted spoon or tongs and place in the prepared martini glasses. Garnish with Mango Jicama Salsa, chile threads, lotus chips and a lime wedge, if desired. Serve immediately.
  • Toss the jicama, mango, onions and jalapeno gently in a bowl with the remaining ingredients and refrigerate for 20 to 30 minutes.

The vegetables are what I had on hand, so feel free to adjust the veggies to what you like to use. Time includes only 1 hour of marinading.

1/3 cup honey
2 teaspoons light soy sauce
2 tablespoons cajun seasoning

1/2 lb sugar snap pea, ends trimmed and cut in half if large
2 cups shredded cabbage

  • Mix the marinade ingredients together in a bowl.
  • Place the shrimp in a sealable container and pour half the marinade over them.

  • Add vegetables to wok and cook, stirring occasionally, for 8-10 minutes, until vegetables are tender.

2 pounds (454 g) raw shrimps, peeled and deveined
1 teaspoon coarse sea salt
2 tablespoons raw honey
juice of 2 limes + 1 lime
1/2 cup tequila
1 medium onion, finely minced
1/4 teaspoon ground cumin
1/4 teaspoon ground chipotle (optional)
2 avocados, diced
1/2 head of red cabbage, thinly sliced
~~ For the slaw dressing ~~
1/4 cup (60 ml) freshly squeezed lime juice [about 2-3 limes]
1 teaspoon of Dijon mustard
sea salt and pepper to taste
1/2 cup light, neutral oil, such as grapeseed
~~ For the chipotle crema ~~
1 cup (250 ml) sour cream or créme fraîche [low fat can be used]
1 to 2 pieces of chipotle chiles in adobo sauce [canned]
~~ For assembly ~~

  • Wash, peel, devein, and dry raw shrimps. Season with salt.

  • In a small bowl or cruet, combine the sour cream, lime juice, lime zest, oil, honey and taco seasoning. Stir or shake to combine. Place in the refrigerator to chill while you prepare the rest of the salad. Place the shrimp in a container with a lid. Sprinkle the taco seasoning over the shrimp. Place the lid on the container. Shake to coat. Heat olive oil in a frying pan over a medium flame. Add shrimp to the pan, making sure they lie flat and do not over lap. 1/4 cup KRAFT Real Mayo
2 Tbsp. hot pepper sauce
1/2 cup KRAFT Zesty Italian Dressing
3 Tbsp. honey
Juice from 1 large lime
1 lb. uncooked medium shrimp, peeled, deveined
2 ears corn on the cob, husked
6 corn tortillas (6 inch)
1 cup matchlike jicama sticks
1 cup finely shredded romaine lettuce
1 plum tomato, seeded, chopped
3 radishes, cut in half, then sliced

Steps:

  • Heat grill to medium-high heat.
  • Mix mayo and hot sauce; refrigerate until ready to use. Mix dressing, honey and lime juice. Pour 1/4 cup over shrimp in large bowl; toss to coat. Let stand 15 min. to marinate. Meanwhile, grill corn 15 min. or until tender, turning occasionally. Remove corn from grill; set aside.
  • Drain shrimp; discard marinade. Thread shrimp onto skewers. Grill 5 min. or until shrimp turn pink, turning after 2 min. and brushing with 2 Tbsp. of the remaining dressing mixture for the last 1 min.
  • Grill tortillas 3 min. or until lightly toasted on both sides, turning frequently. Brush with 2 Tbsp. of the remaining dressing mixture; grill 1 min. or until brushed side becomes glossy.
  • Cut kernels from corn; place in large bowl. Remove shrimp from skewers; add to corn. Add jicama, lettuce, tomatoes, radishes and remaining dressing mixture; mix lightly.

1 1/2 pounds shrimp, peeled and de-veined
2 eggs
1/3 cup soy sauce
2 tablespoons rice vinegar
1/2 cup panko breadcrumbs
2 tablespoons butter
1/3 cup honey
1/3 cup soy sauce
2 teaspoons minced garlic
juice of 1 lime (about 1 tablespoon)
1 teaspoon sriracha sauce
2 tablespoons cold water + 1 tablespoon corn starch
lime zest and cilantro, for topping

Steps:

  • In a medium bowl whisk together eggs, soy sauce and rice vinegar. Add shrimp and stir to combine. Cover and chill for 15 minutes.
  • Dip the shrimp in the panko crumbs to coat as thoroughly as you can, then arrange in a single layer on a greased baking sheet. Spray shrimp with cooking spray.
  • Bake at 400 degrees for 10-15 minutes until golden.
  • While shrimp is baking, prepare the sauce. In a medium sauce pan melt butter over medium high heat. Stir in honey, soy sauce, garlic, sriracha, and lime juice. Bring to a boil.
  • In a small bowl whisk together water and corn starch until dissolved. Pour into sauce pan, stir until thickened. remove from heat.
  • Once shrimp are cooked and golden, toss them in the sauce (or pour sauce over shrimp, turning to coat as necessary). Top with lime zest and chopped cilantro. Serve immediately.

1/4 cup honey

1 red bell pepper, sliced

Steps:

  • 1. Heat oil in a large skillet over medium-high heat. 2. Add shrimp, salt, pepper, 1 teaspoon of garlic, honey and lime juice. Mix well. Cook for 2 minutes, or until bottom of shrimp turns pink and opaque. 3. Flip the shrimp and cook an additional 2 minutes or until shrimp are fully pink and there are no gray bits. 1 pound shrimp, peeled and deveined
1 - 2 tablespoon taco seasoning
1 tablespoon olive oil
6 - 8 cups mixed lettuce leaves
1 yellow pepper, deseeded and cut into strips
½ half cup red onion, diced
1 avocado, cut into bite-size pieces
2 jalapeno peppers, deseeded and cut into bite-size pieces
1-pint cherry tomatoes
1 cup of shredded cheese
Dressing Ingredients:
¼ cup of sour cream
juice and zest of one lime
3 tablespoons olive oil
3 tablespoons honey
2 - 3 teaspoons taco seasoning mix

Steps:

  • In a small bowl or cruet, combine the sour cream, lime juice, lime zest, oil, honey, and taco seasoning. Stir or shake to combine. Place in the refrigerator to chill while you prepare the rest of the salad.
  • Place the shrimp in a container with a lid. Sprinkle the taco seasoning over the shrimp. Place the lid on the container. Shake to coat.
  • Heat olive oil in a frying pan over a medium flame. Add shrimp to the pan, making sure they lie flat and do not overlap. Cook for 3 minutes, or until the side touching the pan starts to turn pink. Flip the shrimp and cook for another 3 minutes. Remove the pan from the heat and allow the shrimp to cool.
  • In a large bowl combine lettuce, peppers, onion, avocado, and tomatoes. Add shrimp and cheese.
  • Just before serving, pour dressing over the salad and toss.
