Honey-Rosemary Wings with Greek Yogurt and Lemon Garlic Dipping Sauce image

Canola oil, for frying
1 dozen chicken wings split at the joint, wing tips removed and discarded
1/2 cup Greek yogurt
3 tablespoons finely chopped fresh chives
1 clove garlic, smashed and minced
Juice of 1/2 lemon
Pinch celery salt
2 to 3 tablespoons butter
2 tablespoons chile-infused honey, such as Mike's Hot Honey
2 cloves garlic, smashed and minced
2 sprigs fresh rosemary, leaves finely chopped
1 lemon, zested and juiced
Crushed red pepper

Steps:

  • For the wings: Heat 3 to 4 inches of oil in a large, high-sided pan until it reaches 375 degrees F on a deep-fry thermometer. Add the wings in batches and cook until golden brown and cooked through, 13 to 15 minutes.
  • For the dipping sauce: Meanwhile, to a bowl, add the Greek yogurt, chives, garlic, lemon juice and celery salt. Stir to combine and taste. Adjust seasoning as needed.
  • For the hot wing sauce: In a saute pan over medium-high heat, melt the butter, and then add the honey and warm through until loose and viscous.
  • In a large bowl, add the garlic, rosemary, lemon zest and juice and crushed red pepper flakes. Pour the honey-butter into the rosemary mixture.
  • As the wings come out of the fryer, toss in the honey-butter sauce. Season to taste. Serve with the Greek yogurt dipping sauce.

Steps:

  • *Makes1 cup of sauce Preheat oven to 350 degrees.
  • Cake Grease and flour a 8" square pan.

2 teaspoons olive oil
1/2 teaspoon grated ginger
1 small garlic clove, grated
1/2 cup walnut halves
1 tablespoon honey
1/2 teaspoon coarse salt
1 1/2 lbs boneless skinless chicken breasts
coarse salt & freshly ground black pepper
1/2 cup all-purpose flour
4 tablespoons olive oil
1 teaspoon grated ginger
1 garlic clove, grated
1/4 cup fresh lemon juice
1/4 cup chicken broth
2 tablespoons honey
1 thinly sliced scallion (about1 tablespoon, green part only)

Steps:

  • To make Walnuts: Place the oil, ginger and garlic in a small skillet. Slowly heat over medium-low until the garlic sizzles. Add the walnuts and honey. Cook on medium heat for about 2 to 3 minutes, adjusting the temperature until the honey boils and sticks to the walnuts and the walnuts turn golden. Sprinkle with the salt, adjusting to taste. Transfer to a side dish or a sheet of aluminum foil. Do not put on paper towels because they will stick.
  • To make Chicken: With a sharp knife, fillet the chicken breasts through the thickest part to make 8 cutlets.
  • Place them on a large piece of plastic wrap, sprinkle with salt and pepper, cover with a second sheet of plastic wrap, and gently but firmly pound the chicken with a meat pounder or the underside of a small, heavy skillet to make fillets of even thickness of 1/4 to 1/3 inch.
  • Spread the flour on a large plate and lightly dredge the cutlets; shake off the excess flour.
  • Heat 3 tablespoons of the olive oil in a large, broad skillet until hot enough to sizzle.
  • Add the cutlets a few at a time and cook for 1 to 2 minutes per side, until lightly browned.
  • As the cutlets are cooked, transfer to a platter and cover with foil to keep warm.
  • Discard the oil in the skillet and let the skillet cool slightly. Add the remaining 1 tablespoon of oil, ginger and garlic to the skillet. Heat and stir over medium-low heat just until the garlic sizzles. Add the lemon juice, chicken broth and honey. Heat, stirring to loosen any browned bits in the skillet, for about 3 minutes, or until the mixture boils and thickens. Pour the sauce over the chicken and sprinkle with the walnuts and the scallions.

1/4 teaspoon fine sea salt
1 1/4 teaspoons cream of tartar
1 teaspoon pure vanilla extract
1/2 teaspoon lemon juice

1 1/2 cups powdered sugar
1 cup cake flour
Fresh mint sprigs
1 cup plain yogurt
1/4 cup honey

Steps:

  • For the cake: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F.
  • In a large mixing bowl, combine the egg whites, salt and cream of tartar. Using an electric hand mixer, beat on medium speed until frothy. Add the vanilla extract, lemon juice, and lemon zest. Beat on high speed until soft peaks form, about 2 to 4 minutes. Gradually add the sugar and beat until the mixture forms stiff peaks, about 2 minutes longer. 2 tablespoons minced lemon zest
1 teaspoon minced thyme
1 teaspoon coarsely ground black pepper
1 teaspoon kosher salt
2 5-pound ducks with neck, giblets and livers removed
2 tablespoons unsalted butter
2 shallots, sliced
1 clove garlic, sliced
1/2 jalapeno pepper, with seeds, finely chopped
2 tablespoons chopped thyme
2 tablespoons chopped sage
2 tablespoons chopped rosemary
1/4 cup honey
1/3 cup fresh lemon juice
3 tablespoons flour
2 cups veal stock or chicken broth

Steps:

  • In a small bowl, combine lemon zest, 1 teaspoon minced thyme, black pepper and salt. Using your fingers, loosen the skins of the ducks over the breastbones, legs and thighs. Tuck the lemon-pepper mixture evenly beneath the skin, covering each breast, leg and thigh. Tie legs together with kitchen twine.
  • Preheat oven to 425 degrees. Heat a roasting pan in the oven for 10 minutes. Place the prepared ducks on a rack in the roasting pan and cook 1 hour 10 minutes. Remove ducks from pan, and bring to room temperature. Quarter the ducks, trimming off any excess fat. Cover, and refrigerate for up to 24 hours.
  • To prepare the sauce, place the roasting pan over medium-high heat, and add butter, shallots, garlic and jalapeno. Saute until softened, about 2 minutes. Add the thyme, sage and rosemary, and saute 1 minute more. Add honey and lemon juice. Make a paste of flour and 1 tablespoon water; add to pan. Add veal stock or chicken broth, and reduce until sauce lightly coats the back of a spoon, about 5 minutes. Sauce may be cooled and refrigerated for up to 24 hours.
  • To serve, preheat oven to 450 degrees. In a small pan over medium heat, reheat sauce. Heat an ovenproof skillet over high heat, and add duck pieces skin side down. Cook over high heat until skin begins to sizzle, about 1 minute. Reduce heat to low, and crisp duck skin 5 to 7 minutes. Cover with a lid or foil, and reheat in oven for 10 minutes. Transfer to a warm platter, and serve with sauce.

1oz/25g butter
Seasoning

2-3 sprigs of thyme
100ml boiling water
1 teaspoon wholegrain mustard
7floz/200ml pouring cream
2-3 stems of spring onions/scallions

Steps:

  • Heat a large frying pan with a little butter. Season the chicken breasts with a little salt and cayenne pepper (which will give the chicken an added kick) and quickly brown them on both sides and then reduce the heat slightly. Pour in the honey, lemon zest & juice and the boiling water together with the sprigs of thyme. Preheat the oven to 180C/350F/Gas Mark 4. Transfer the chicken with the glaze into the oven and cook for a furthur 15-20 minutes until fully cooked through. It is nice to turn and baste the chicken whilst it is in the oven. Allow the chicken to rest for a few minutes when it comes out of the oven. Return the pan to the heat and allow the lemon and honey mixture to reheat gently. 1 (3 lb) whole chickens
12 medium red potatoes, trimmed around center
12 asparagus spears, trimmed, halved crosswise
3 carrots, cut into sticks
olive oil
paprika, to taste
salt, to taste
pepper, to taste
1/4 cup fresh lemon juice
1 tablespoon honey
2 tablespoons unsalted butter, divided
1/4 cup shallot, sliced
1 tablespoon fresh ginger, minced
1 1/4 cups chicken broth
1/4 cup dry white wine
3 tablespoons fresh lemon juice
3 tablespoons honey
1/4 cup heavy cream
1 teaspoon all-purpose flour
1 lemon, zest of, minced
fresh chives, minced
salt, to taste
cayenne, to taste

Steps:

  • Preheat oven to 425°F with rack in lower third of oven so vertical chicken will not touch top of oven.
  • Place removable insert from angel food cake pan (or use commercial roasting stand) in a 10" shallow pan (like a deep dish pie plate).
  • Prepare chicken, trimming off all fat.
  • Rub the chicken with oil, season with paprika, salt and pepper inside and out.
  • Prop chicken, with legs down, on the tube of the cake pan insert, or vertical roaster.
  • Toss prepared vegetables with oil, salt and pepper; keeping asparagus separate from potatoes and carrots.
  • Arrange potatoes and carrots around the base of the chicken, then roast for 30 minutes.
  • For the basting liquid, combine honey and lemon juice.
  • After the chicken has roasted 30 minutes, brush it with some of the mixture.
  • Add asparagus to pan, then roast 15 more minutes.
  • Baste a second time, then roast chicken until it reached an internal temperature of 170 degrees in the thigh, about 15 more minutes.
  • Allow chicken to rest 15 minutes before carving.
  • While chicken is resting, prepare the sauce.
  • In a saucepan over medium heat, sauté shallots and ginger in 1 TBS unsalted butter, cooking till soft.
  • Add broth, wine, lemon juice, and honey.
  • Simmer 15 minutes, or until reduced by half.
  • Strain into a clean saucepan.
  • Whisk in cream; bring to a boil.
  • Mash 1 TBS unsalted butter and flour together.
  • Add butter and flour mixture to finish the sauce and cook until slightly thickened.
  • Stir in lemon zest, chives, and seasoning just before serving.
  • Serve sauce over chicken and veggies.

1/4 cup "Mel Ploy" Sweet Chili Sauce
1 teaspoon fish sauce
1 cup honey
1 tablespoon soy sauce
1 tablespoon of each minced cilantro leaves, basil and mint
1 tablespoon lime juice
½ stalks lemon grass -- crushed whole

  • Heat heavy sauce pan until hot. Add oil, stir fry ginger, chili and garlic until almost brown. Add black bean and saute for one minute until all the three ingredients flavor is transfered into oil Add brown sugar and cook until sugar and previous three ingredients are well combined and oil separats. Add honey, chili sauce then bring to a boil. Cook for 10 minutes in low heat until all the spice flavor transfer to the liquid. Add lime juice and herb mixture. Cook for another 5 minutes. Thicken with cornstarch and water mixture. Adjust sweetness by using brown sugar. This sauce does not stay in the cooler. I t contain enough sugar and salt to saty over room temperature for two weeks. Fry 4 ounces squid in tempura batter, place on top of rice crepe, drizzle with sauce. Sprinkle with cashew then serve

1 large egg, lightly beaten
4 cups crushed cornflakes
Canola oil, for frying

Steps:

  • To make the dipping sauce: In a small bowl, whisk together the honey and lemon juice.
  • Season the chicken with the 1 teaspoon salt and pepper. Place the egg and cornflakes in separate bowls. Coat each chicken nugget with the egg, letting the excess egg drip back into the bowl. Coat the nuggets with the cornflakes. Set aside on a plate.
  • Heat 1/2 inch of canola oil to 375°F in a deep skillet. Fry the nuggets, turning once, for 3 to 4 minutes per side, or until golden and cooked through. Transfer the nuggets to a paper towel-lined plate to drain. Season immediately with additional salt (if using) and serve accompanied by the honey-lemon dipping sauce.

MEATBALLS
3 Tbsp olive oil
4 clove garlic minced
1 large onion diced
1 tsp salt
1/2 tsp pepper
1 c matzo meal
2 large eggs
1 c water
1/2 c parsley finely chopped
1 lb each ground lamb and ground beef
SAUCE
1/2 c each olive oil lemon juice and honey
1/2 tsp each salt and turmeric
4 large egg yolks

Steps:

  • 1. For the meatballs. In a skillet add the oil and get it hot. Saute the onions and garlic until onions are translucent but not browned. Remove from heat and let cool a bit.
  • 2. In a bowl mix together matzo meal, eggs, water , parsley and black pepper to form a paste and let sit for about 15 minutes. Mix the paste with the onions and garlic. Add the ground lamb and beef and mix well. Shape into balls.
  • 3. Preheat oven 400 degrees. line baking sheet with parchment paper. Place meatballs on sheet and bake about 40 minutes.
  • 4. To make the sauce use a double boiler or metal bowl over boiling water and whisk the olive oil, lemon juice, honey, salt, turmeric and egg yolks together. Whisk until thickened about 7 minutes. Serve over meatballs

FISH FILLET WITH HONEY LEMON SAUCE

The combination of honey and lemon makes this fish taste deliciously different. This is best if grilled over charcoal but if you are not quite fond of charcoal grilling like me then you can grill it on pan with almost the same taste.

500 g fish fillets, sliced
1 stalk green onion, sliced into 2 inches length
1/2 cup raisins
2 tablespoons olive oil
1 1/2 tablespoons honey
4 tablespoons soy sauce
1/2 teaspoon sugar
2 tablespoons lemon juice
1/4 teaspoon ginger powder
cooking spray
3 tablespoons lemon juice
1 teaspoon salt

Steps:

  • Marinate fish fillets for at least 1 hour. Drain.
  • Grease the non-stick frying pan with the cooking spray.
  • Heat and grill the fish fillet until lightly brown, turn and grill the other side. (To avoid sticking, spray the pan again when turning over the fishes). Continue grilling until done. Transfer to a dish and set aside.
  • Combine all the remaining ingredients except the green onions.
  • Heat the mixture in a skillet for 1 minute. Stir in the green onions. Turn off the heat.
  • Pour the mixture over the grilled fishes and serve.

I make this in a flash, easy! I usually serve with fish. Can be served anytime with any dish. Two methods of cooking.The dipping sauce is also very easy. If you mix the dipping sauce with peanut butter, kids like it for breakfast.

1 cup self rising flour
1 cup flour
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
2 teaspoons baking soda
1 teaspoon salt or 1 teaspoon salt substitute
1 teaspoon white vinegar
1 cup milk or 1 cup non-dairy milk substitute
1/2 cup butter or 1/2 cup margarine
1 cup honey, warmed
1 tablespoon lemon juice
3 dashes angostura aromatic bitters (optional)

Steps:

  • In medium mixing bowl, mix with spoon, self rising flour, regular flour, sugar, baking soda and salt. Mix well.
  • In large measuring cup, add milk and vinegar. Set aside, five minutes, or use 1 cup buttermilk.
  • Add buttermilk mixture to dry ingredients.
  • Mix in all the dry ingredients.
  • Turn out on a floured board or counter and roll out with a rolling pin that has been floured or sprinkle flour on the top of the dough and pat out with your fingertips until 12x14-inch.
  • Cut in 2-inch strips, then cut three strips together across at an angle. Do this until you have at least 36 or more little "dough fingers" or 14 to 18 bread sticks. The length can be 2 to 4 inches.
  • In medium frying pan, portion the butter or margarine in 4 amounts.
  • Add to frying pan on medium heat. Add 9 to 10 dough fingers and fry on each side. You may have to turn the heat down a little after the pan gets hot. Place on paper toweled plate and keep warm in 250°F oven if desired.
  • Or, preheat oven 400* spray Pam on baking pan and bake 12-14 minutes.Last 3-4 minutes of baking brush on melted butter or margarine.
  • Right before serving warm the honey, add lemon juice, stir, then the bitters if desired.
  • Note: You may use buttermilk in place of the vinegar and milk.

  • Combine honey, lemon juice, garlic, parsley, lemon peel and cayenne in a small saucepan; mix well. Heat until mixture begins to simmer; do not boil. Remove from heat.
