Garlic Rosemary Pasta image

Number Of Ingredients 13

1 pound vegetable of choice
2 tablespoon Olive Oil
1/2 teaspoons Salt
4 tablespoons Unsalted Butter
1 tablespoon Unsalted Butter (see cooking notes)
1 Large Yellow Onion
1.5 cups Chicken Broth
1.5 tablespoons Chopped Fresh Rosemary Leaves
1 pound Pasta
1/4 cup Grated Parmasan
1/2 cup Grated Parmasan (toping to serve)
1/4 tablespoon Salt Black Pepper (to taste)
7 cloves Garlic Cloves

Steps:

  • Chop Onion and Garlic
  • Cut vegetables into edible pieces, brush with olive oil sprinkle with salt and pepper, bake at 400 degrees till tender, about 7 to 12 minutes, shaking midway. Move to aside.
  • In a large pan add butter, Garlic and Onions, cook until nicely brown. Cook til nicely brown.
  • Add broth and chopped rosemary. Increase heat and reduce by half.
  • Bring a pot to temperature and cook pasta till tender.
  • Add Pasta and t tablespoons of cooking water to butter mixture.
  • Add cheese, tablespoon of butter and vegitable.
  • Gently toss and season to taste with salt and freshly ground pepper.
  • Serve and enjoy.
