CRISPY WINGS WITH HOT HONEY SAUCE

Steps:
- For the wings: Preheat the oven to 400 degrees F. Line a sheet pan with foil, then place a metal rack on the pan.
- Pat the wings dry with kitchen paper, then sprinkle with the salt, pepper and smoked paprika on both sides. Place them on the rack, making sure they are not touching. Bake for 25 minutes, then pull them out. Use tongs to turn them over, then put them back in the oven and bake until golden brown and cooked through, an additional 20 minutes .
- For the hot honey sauce: Meanwhile, add the honey, barbecue sauce, Louisiana hot sauce, vinegar, jalapenos and serranos to a small pot over low heat. Stir to combine. Bring to a simmer and continue to cook on low until reduced and slightly thickened, about 20 minutes.
- Remove the wings from the oven and turn the oven to broil. One by one, dunk the wings in the sauce. Place them back on the rack and broil for 3 minutes to caramelize.
- For the garnish: Place the wings on a platter and sprinkle over the chopped parsley. Serve with a bowl of ranch dressing for dipping.
CHICKEN WINGS WITH RED HOT HONEY GLAZE AND BLUE CHEESE-CELERY DIPPING SAUCE

- For the wings:
- Heat grill to medium-high.
- Combine the hot sauce, honey and butter in a small saucepan and cook over medium heat until the butter is melted and the mixture comes together, about 5 minutes. Stir in the vinegar and season with salt and pepper. Pour half of the sauce in a bowl and keep the remaining sauce in the pan, warm over low heat.
- Season the wings on both sides with the salt and pepper. Brush the wings with the reserved sauce in the bowl and place on the grill. Grill on each side for 5 minutes or until golden brown and cooked through. Remove wings from the grill and toss with the warm hot sauce. Transfer to a platter and serve with the blue cheese sauce on the side for dipping.
- For the blue cheese-celery dipping sauce:
- Whisk together all ingredients in a medium bowl and season with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.

- Preheat an outdoor grill for medium heat and lightly oil grate.
- Wash the wings well and pat dry with paper towel. Season the meat with cayenne, salt, and pepper.
- Cook the chicken wings on preheated grill until cooked through and juices run clear, 20 to 30 minutes depending on the size of the wings. Brush the wings liberally using 1/2 cup of honey while they are cooking.
- Melt the butter, pour into a large bowl and mix in the remaining 1/2 cup of honey and hot sauce. Remove the wings from the grill and immediately toss them in the hot honey butter sauce to coat. Serve the wings 'wet' or return them to the grill for 1 minute per side to set the sauce.

- In a bowl, combine the flour, 2 teaspoons salt, the onion powder, garlic powder and cayenne pepper. Add the chicken wings and toss to coat.
- Heat 2 inches of vegetable oil in a pot until it registers 350˚ F on a deep-fry thermometer. Working in batches, add the wings and fry until browned, 8 to 12 minutes. Remove with a slotted spoon and drain on a rack set on a baking sheet.
- Whisk the melted butter, hot honey, vinegar and red pepper flakes in a large bowl. Add the wings and toss to coat.

- Mix the paprika with the garlic granules, baking powder, cornflour, 1 tsp sea salt flakes and a good grinding of black pepper. Tip the chicken wings into a large bowl, scatter over half the seasoning mix and toss to coat. Scatter with the rest of the seasoning mix and toss again until completely coated. Cover the wings and keep chilled for at least 2 hrs, or up to 24 hrs.
- Heat the oven to 230C/210C fan/gas 8 and line a large shallow roasting tin with baking parchment. Arrange the wings in a single layer, fleshy-side down, and roast for 20 mins, then turn over and roast for another 25-30 mins until the skin is blistered and crisp.
- Meanwhile, whisk the glaze ingredients together in a small bowl until smooth. Remove the wings from the oven and brush liberally with the glaze, then scatter over the sesame seeds, if using. Roast for another 8-10 mins until the glaze is bubbling and starting to char a little. Serve straight from the roasting tin or pile onto a plate for everyone to dig in.

HOT HONEY BBQ GARLIC WINGS
This was inspired by my favorite sauce from a place called "The Terrace" in Apalachin, NY, they had many different flavored wings. I decided after not finding a recipe similar on-line to make one up on my own. First time and it came out wonderful! The only thing I would change is to add more garlic if you really love garlic. Hope you all enjoy this recipe as much as we did.

- In medium sauce pan melt butter and add rest of the ingredients, simmer on med to low heat while preparing the wings. Stirring often.
- If you like crispy wings, deep fry as directed on package.
- Or you can bake them in oven at 375 degrees for 1/2 hr (Skin side up) Drain grease, turn wings over, baste with some of the sauce. Bake for 15 minutes. Turn wings over again, baste with sauce, bake an additional 15 minutes.
- Place wings in bowl and pour sauce over them and enjoy!
- We always serve with celery and bleu cheese dressing.

- 1. Cook wings to desired crispness. I do mine in air fryer at 400 for 60 minutes. In saucepan, mix together the hot sauce and corn starch, then add remaining ingredients. Cook over med heat until heated through and thickens just a little.

I had several goals for this recipe... I wanted crisp wings without deep frying, I wanted them without a lot of waiting, and I wanted a different kind of sauce. It took several tries, and the patience of my food testers, but I finally got what I was after... So, you ready... Let's get into the kitchen.

- PREP/PREPARE
- Chef's Note: My first goal was to figure out a way to crisp the skin of the chicken wings, so I turned to my old friend, baking powder. Baking powder and salt will draw moisture out of whatever they are applied to. The common method was to coat the wings in baking soda and salt, and then let them sit in the fridge overnight. The two problems with that method is: I didn't want to wait that long, and when they were baked and sauced, my testers said they tasted WAY too salty. I solved the problem by mixing all-purpose flour with the baking powder, and using just a pinch of salt. As to the overnight stay in the fridge, I solved that using a two-step cooking process.
- THE WINGS
- Gather your Ingredients (mise en place).
- Place a rack in the middle position, and preheat the oven to 250f (120c).
- Mix the flour, baking powder, and salt in a small bowl.
- Thoroughly dry off the chicken wings, and add to a large bowl.
- Sprinkle the dry ingredients on top of the chicken, and toss to combine.
- Lay the chicken wings on a parchment-lined baking sheet, fitted with a rack.
- Chef's Tip: Make sure you give them some space.
- Place in the preheated oven and slow bake for 30 minutes.
- After thirty minutes, increase the temperature to 430f (220c), and continue to bake until they are nice and brown, about 35 - 45 minutes.
- Chef's Note: The low-and-slow baking begins to cook the wings, and will give the baking powder and salt a chance to do their thing of drawing moisture out of the skin. The final blast of heat will finish cooking the wings, and make the skin nice and crispy.
- THE SAUCE
- Chef's Note: While the wings are happily baking away, make the sauce.
- Gather your ingredients (mise en place).
- Add all the ingredients into a small saucepan.
- Place the pan over medium heat, and bring up to a simmer.
- Allow the sauce to lightly simmer while the wings are baking.
- Chef's Note: Occasionally stir the sauce, and do not let it get to the boil, or it will burn.
- THE ASSEMBLY
- Remove wings from the oven and place into a large bowl.
- Toss with two or three tablespoons of the sauce.
- Chef's Note: I don't want these wings dripping in sauce, I want just enough to coat them.
- PLATE/PRESENT
- Plate the wings, sprinkle on some toasted sesame seeds, and serve with the additional sauce. Enjoy.
- Keep the faith, and keep cooking.
HONEY HOT WINGS
These are some great hot wings that are not too spicy and a little sweet after taste. I like my wings a little crispy and these came out perfect. Great for any entertaining event and perfect with some good beer!!!!!

- 1. Take your wings and thaw them out in water for about 10 minutes. Pat them dry so there is no excess water.
- 2. Heat your deep fryer to 375 degrees. If your's doesn't go quite that high adjust your cooking time up a couple minutes. Make sure you watch them though.
- 3. Add 1 cup of floor and a teaspoon of pepper into a bowl.
- 4. Dredge each wing in floor and shake off excess flour.
- 5. Drop wings into fryer and set timer for 13 minutes.
- 6. Mix together 1/2 cup Frank's Red Hot Sauce, 1/3 cup melted butter, 1 table spoon honey, and 1 teaspoon of black pepper in a sauce pan on low.
- 7. (Optional) add a little Cornstarch powder to thicken sauce to likening. Careful and only add a little each time and mix. Too much will be clumpy.
- 8. Once wings are cooked put them on a plate with a paper towel to collect excess oil.
- 9. Pour sauce in a large bowl that you preferably have a lid for or you can use a plate. Put your wings in the bowl with the sauce. Shake the wings until coated well.
- 10. Ready to Eat!
- The sauce could work for a couple dozen of wings if you want to make more. You could add red chili flakes if you want them hotter. If you are cooking with a batch larger then a dozen consider that in your cooking time, and perhaps let them cook a little longer if you want them crispy.
