12 baby lamb chops
Olive oil
Salt and freshly ground pepper
Glaze, recipe follows
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons prepared horseradish, drained
3 tablespoons finely chopped fresh mint
Salt and pepper

Steps:

  • Preheat grill to high. Brush chops on both sides with olive oil and season with salt and pepper. Grill for 2 to 3 minutes on both sides for medium-rare doneness. Remove from grill and brush with the glaze.
  • Whisk ingredients together in a medium bowl and season with salt and pepper to taste.

Asparagus and Tomato Skewers with Honey Mustard-Horseradish Sauce image

1/4 cup Dijon mustard
1/4 cup clover honey
3 tablespoons prepared horseradish, drained
2 tablespoons finely chopped fresh mint leaves
Salt and freshly ground black pepper
1 pint cherry tomatoes on the vine
Wooden skewers soaked in water
1 pound asparagus, trimmed
Olive oil

Steps:

  • Preheat the grill. Whisk together the mustard, honey, horseradish and mint in a bowl and season with salt and pepper, to taste. Let sit at room temperature for at least 15 minutes to allow the flavors to meld.
  • Thread the tomatoes onto skewers and put them into a large bowl. Add the asparagus and drizzle with a little oil. Season with salt and pepper, to taste. Put the tomatoes on the grill and cook until charred on both sides. Grill the asparagus for about 2 minutes per side. Put the vegetables on a platter and drizzle them with the mustard sauce. Serve hot or at room temperature.

3 tablespoons olive oil
3 slices country bread, crusts removed and cut into 1/8-inch dice
Salt and freshly ground pepper
1/2 pound slab bacon cut into 1/2-inch lardons
2 shallots, thinly sliced
2 cloves garlic, finely sliced
1/4 cup white wine vinegar
8 cups frisee, washed, dried and cut into bite sized pieces
4 poached eggs
4 (3 to 4-ounce) filet mignon
Kosher salt
2 teaspoons ancho chile powder
2 teaspoons coarsely ground black pepper
1 tablespoon plus 1 teaspoon olive oil
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon freshly grated horseradish or prepared (drained)
1 tablespoon finely chopped fresh mint

Steps:

  • Heat oil in a large saute pan over medium high heat. Add the bread cubes and season with salt and pepper. Cook until golden brown and place on a plate lined with paper towels. Heat a medium saute pan over high heat. Add the bacon and cook until golden brown. Remove bacon with a slotted spoon to a plate lined with paper towels. Add the shallots and garlic to the pan and cook until soft. Add the vinegar and cook for 30 seconds. Season with salt and pepper to taste. Place the frisee, croutons, and bacon in a bowl add the vinaigrette and toss to coat. Divide the salad onto 4 plates and top with a poached egg.
  • Season filet with salt on both sides. Sprinkle 1 side of each filet with 1/2 teaspoon of the ancho chile powder and 1/2 teaspoon of the coarsely ground black pepper. Heat the olive oil in a large saute pan over high heat until almost smoking. Place the filet, pepper-side down in the pan and saute for 2 to 3 minutes or until a crust forms. Turn the filet over, reduce heat to medium and continue cooking until desired doneness, 2 to 3 minutes for medium-rare. Let rest 2 to 3 minutes before serving, spoon 1 tablespoon of the sauce over each steak.
  • Combine all ingredients in a small bowl and season with salt to taste.

4 scallions, sliced
2 tablespoons sunflower seeds
1 apple, peeled and diced small-ish
1/4 cup raisins
1/2 cup reduced-fat mayonnaise
1/4 cup nonfat plain yogurt
1 tablespoon lemon juice, fresh (actually juice of one lemon)
2 tablespoons prepared horseradish
2 tablespoons honey (less if you don't have a sweet tooth like we have!)
1 tablespoon Dijon mustard (I use my homemade Dijon, which is really hot ( you might want to try a little more than a tablespoon)

Steps:

  • Combine salad ingredients in a large bowl.
  • In a small bowl, combine dressing ingredients; whisk until well blended.
  • Mix dressing with salad ingredients and refrigerate an hour or two before serving.

One 16-ounce jar cherry peppers, drained
2 cloves garlic, minced
3 tablespoons honey
3 tablespoons cider vinegar
2 tablespoons olive oil
Pinch salt
1 cup whole-grain mustard
1/4 cup yellow mustard
1/2 cup honey
2 tablespoons prepared horseradish
1/4 cup poppy seeds
1/4 cup sesame seeds
1/4 cup dried garlic
1/4 cup dried onion
1 tablespoon coarse sea salt
2 teaspoons cracked black pepper
4 links smoked sausage or kielbasa (about 2 pounds)
1 package puff pastry (2 sheets)
1 egg, lightly scrambled

Steps:

  • For the relish: Add the cherry peppers, garlic, honey, cider vinegar, olive oil and salt to the bowl of a food processor. Pulse to combine. (Makes 2 cups.)
  • For the mustard: Add the whole-grain mustard, yellow mustard, honey and horseradish to a small bowl. Stir to combine. (Makes 2 cups.)
  • For the everything spice: Add the poppy seeds, sesame seeds, dried garlic, dried onion, salt and pepper to a small bowl. Stir to combine. (Makes 1 cup.)
  • For the pigs-in-a-blanket: Preheat the oven to 400 degrees F.
  • Cut each piece of puff pastry in half, and roll each half around a sausage link, using a bit of egg wash to adhere. Place the piggies seam-side down, brush with egg wash, and sprinkle each with 1 teaspoon of the everything spice. Transfer to a parchment-lined baking sheet and bake until golden and puffy, 15 to 20 minutes.

2 cups dry white wine
1 cup chopped onion
2 minced garlic cloves
2 tablespoons honey
4 ounces dry mustard
2 tablespoons prepared horseradish
1 tablespoon olive oil
1 1/2 teaspoons salt

Steps:

  • Combine wine, onion, garlic and honey in a medium saucepan.
  • Bring to a simmer; simmer 5 minutes.
  • Remove from heat.
  • Strain into a 4 cup measuring cup with a pouring spout.
  • Cool slightly.
  • Combine dry mustard, horseradish, olive oil and salt in a small saucepan.
  • Slowly whisk in the wine mixture until smooth.
  • Heat over medium-low heat, stirring constantly until thickened (about 15 minutes).

BONELESS PORK WITH HORSERADISH HONEY MUSTARD SAUCE

2 boneless pork chops about 3/4" thick
MARINADE:
1 1/2 Tbsp mc cormick grill mates brown sugar bourbon seasoning
1 1/2 Tbsp mc cormick grill mates kicken' chicken seasoning
2 Tbsp raspberry wine vinegar (you can substitute white wine, or apple cider vinegar)
1/4 c olive oil
2 Tbsp water
COATING:
1/4 c all purpose flour
1 egg, slightly beaten mixed with 1/4 cup milk
1/2 c pretzels, crushed to about the sized of finely chopped pecans
HORSERADISH HONEY MUSTARD SAUCE:
2 Tbsp all purpose flour
1 chicken bouillon cube dissolved in 1/2 cup of water
4 Tbsp horseradish mustard
2 Tbsp honey
salt and pepper to taste

Steps:

  • 1. Mix the ingredients for the marinade and pour over chops in a ziplock bag or plastic storage container. Refrigerate overnight.
  • 2. In a medium non stick skillet on medium low heat add 3 Tablespoons olive oil.
  • 3. Remove chops from marinade and coat with flour.
  • 4. Dip floured chops into milk/egg mixture.
  • 5. Roll in pretzel pieces until evenly coated.
  • 6. Place chops in heated skillet and saute until golden. Turn chops and cook until internal temperature reaches about 145 (ish) degrees about 7 minutes. Don't worry if it's a couple degrees below - the chop will continue to cook when you pull it off the heat. It will be tender, juicy perfection!
  • 7. Remove chops and keep warm in the oven while you prepare your sauce.
  • 8. Add flour to skillet you cooked your chops in. Add additional oil if needed 2 Tablespoons. Stir with a wooden spoon to combine flour and oil. Cook for 3 minutes.
  • 9. Add dissolved bouillon and water to skillet along with mustard and honey. Cook until thickened. Taste and add salt and pepper as desired.
