HONEY-DRIZZLED WALNUT AND GARGONZOLA BITES



Honey-Drizzled Walnut and Gargonzola Bites image

Number Of Ingredients 4

12 whole walnuts to yield 24 halves
4 ounces Gorgonzola
3 tablespoons honey
1 cup demerara sugar, for presentation

Steps:

  • Preheat oven to 350 degrees F.
  • Use a sharp knife to pry open walnut shells. Clean out nut and casings. Reserve shells.
  • Place walnut halves on a baking sheet and roast for approximately 5 minutes, or until browned and toasted. Let cool to room temperature.
  • Sandwich 1 teaspoon of cheese between 2 walnut halves. Place mini walnut sandwich upright in a walnut shell. To serve, spread sugar on a plate. Set walnut shells on sugar. Drizzle honey over the top each mini walnut sandwich. Serve immediately.
  • Recommended beverage: Ice wine

1/2 lb unsalted butter
1 c white sugar
1 c brown sugar
3 Tbsp honey
4 eggs
2 Tbsp vanilla
3 c all-purpose flour
1 tsp salt

Steps:

  • 1. Cream butter, sugars and honey. Add eggs and vanilla. Stir in flour and salt just until combined.
  • 2. Cover and chill in refrigerator at least 2 hours.
  • 3. Place a spoonful at a time on a medium hot waffle iron until desired brownish color is achieved (50-55 seconds (+/-).
  • 4. Makes about 3-1/2 dozen.

Number Of Ingredients 9

1 pound unsalted butter, softened
1 pound dark brown sugar (can use light brown if you desire)
1/2 cup canned milk
2 tablespoon vanilla extract
6 egg yolks
6 egg whites-beaten until soft peaks form
6 cups all purpose flour divided-4 c. & 2 c.
1/2 teaspoon salt
1/2 teaspoon baking powder

Steps:

  • Mix butter, sugar and yolks until light and fluffy. Add milk and vanilla extract and beat until incorporated. Mix together the 4 cups of flour, salt and baking powder. Add to butter mixture. Beat egg whites until soft peaks form as for meringue. Add egg whites alternately with the remaining 2 cups of flour. Drop by teaspoon onto hot waffle iron. Remove when light brown. Let cool. I wrap them in wax paper and store in large airtight container.

HONEY MUSTARD CUTLETS

4 thin-cut boneless pork loin chops
Salt and freshly ground black pepper
1/4 cup grainy Dijon mustard
1/4 cup honey
2 tablespoons cider or wine vinegar
1 cup bread crumbs
2 tablespoons freshly chopped thyme leaves
1 lemon, zested
2 tablespoons extra-virgin olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
2 tablespoons orange marmalade or apricot preserves
1 cup chicken stock
2 teaspoons Worcestershire sauce

Steps:

  • Line a baking sheet with a wire rack.
  • Heat the oven to 275 degrees F.
  • Trim the fat from the chops and sandwich each chop between 2 pieces of waxed paper or plastic. Pound the chops to 1/8-inch thickness and season with salt and pepper, to taste.
  • In a shallow dish combine the mustard, honey and vinegar. Add the chops and turn to coat in sticky sauce. On a plate combine the bread crumbs with the thyme and zest of the lemon. Press chops in the crumbs to coat evenly. Heat the extra-virgin olive oil, a couple turns of the pan, in large skillet over medium heat. Cook the cutlets until crisp, 3 to 4 minutes on each side. Arrange the chops on the baking sheet with the rack and put in the oven to keep them crisp. To the skillet, over low heat, add the butter and melt. Whisk in the flour and cook for 1 minute. Stir in the preserves, then whisk in the stock. Cook for a couple of minutes to thicken and season with salt and pepper, to taste. Transfer the chops from the oven to a serving platter and douse with sweet-savory gravy before serving.

6 eggs
¾ cup vegetable oil
1 ½ cups white sugar
2 ½ cups all-purpose flour
2 tablespoons orange extract

Steps:

  • Separate the eggs. Beat the egg whites until stiff peaks have formed.
  • In a separate bowl beat the egg yolks until light and lemon colored. Beat in the sugar, oil, flour and orange extract. Beat for about 10 minutes then fold in the egg whites.
  • On a preheated non-stick waffle iron drop teaspoons of batter. BAKE LIGHTLY. Transfer to racks to cool. Sprinkle with confectioners' sugar.
