CRUNCHY SLAW WITH SEARED TUNA AND HONEY-SESAME-GINGER SAUCE



Crunchy Slaw with Seared Tuna and Honey-Sesame-Ginger Sauce image

1/2 cup shredded red cabbage
1/2 cup shredded green cabbage
1/2 cup chopped green onions
1/2 cup roughly chopped fresh cilantro
1/4 cup shredded carrots
1 red bell pepper, julienned
Three 1 1/2-inch-thick tuna steaks
Sunflower oil, for the tuna
1/4 cup rice wine vinegar
1 1/2 tablespoons minced garlic
1 1/2 tablespoons grated ginger
1 1/2 tablespoons toasted sesame oil
1 1/2 tablespoons soy sauce or coconut aminos
1 1/2 tablespoons sriracha or any Asian chili paste
1 1/2 tablespoons honey
1 1/2 tablespoons olive oil
2 tablespoons roasted cashews, crushed or roughly chopped
1 tablespoon toasted sunflower seeds
1 teaspoon ground Aleppo pepper
1 lime, cut into wedges

Steps:

  • Mix together the red and green cabbage, green onions, cilantro, carrots and bell pepper in a large bowl. Toss to combine.
  • Rub the tuna with sunflower oil. Over medium-high heat, heat a large skillet. Add the tuna and cook 3 minutes per side to sear so that it is rare in the center and golden brown on the outside.
  • Meanwhile, for the dressing, add the rice wine vinegar, garlic, ginger, toasted sesame oil, soy sauce, sriracha, honey and olive oil to a small bowl. Mix to combine. Drizzle on the salad and toss gently to combine. Plate on a platter.
  • Slice the tuna into 1/2-inch slices and top the salad with the tuna. Sprinkle with the cashews, sunflower seeds and Aleppo pepper. Squeeze over a wedge of lime and serve the remaining lime wedges on the side.

Easy, great tasting tuna coated with sesame seeds, and quickly seared. This tuna is served rare, so be sure to use a good quality fresh tuna.

¼ cup soy sauce
1 tablespoon mirin (Japanese sweet wine)
1 tablespoon honey
2 tablespoons sesame oil
1 tablespoon rice wine vinegar
4 (6 ounce) tuna steaks
½ cup sesame seeds
wasabi paste
1 tablespoon olive oil

Steps:

  • In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.
  • Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.
  • Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.

This recipe is served at a seafood restaurant in Royal Oak, Michigan. The sesame covered tuna is done medium rare inside (almost like sushi) and has a fantastic soy miso dressing drizzled over the top. One of the best seafood dishes I love!

¾ cup sesame seeds, divided
½ teaspoon seasoning salt
1 teaspoon ground white pepper
1 teaspoon onion powder
1 tablespoon wasabi powder
1 teaspoon coarse kosher salt
1 cup all-purpose flour
2 eggs
3 fluid ounces milk
2 (4 ounce) tuna steaks (about 3/4 inch thick)
2 tablespoons vegetable oil
1 (1.12 ounce) package miso soup mix
1 tablespoon soy sauce

Steps:

  • In a shallow bowl, mix together 1/2 cup of sesame seeds, seasoning salt, white pepper, onion powder, wasabi powder, kosher salt and flour; set aside. In a separate bowl, mix together the eggs and milk.
  • Dip tuna steaks in the egg mixture, then dredge in the flour mixture until well coated on both sides. Press on as many extra sesame seeds as possible, so it is well coated. Heat the vegetable oil in a large heavy skillet over medium-high heat. Fry tuna steaks for 2 minutes per side, and immediately remove from heat. The inside of the fish should still be red.
  • To make the soy miso dressing, mix together the miso soup mix and soy sauce. Heat in a small saucepan or microwave, and drizzle over steaks.

4 tablespoons balsamic vinegar
2 green onions (white and light-green part), finely chopped
2 tablespoons coarsely grated ginger
1 1/2 pounds thick tuna steak
4 tablespoons sesame seeds
1 tablespoon oil

Steps:

  • Mix vinegar and 2 tablespoons water with green onion and ginger in a bowl. Place tuna in mixture, and marinate about an hour.
  • To cook, remove tuna from marinade; set marinade aside. Press sesame seeds into both sides of tuna. Heat nonstick pan to medium, and add oil. Quickly sear tuna on both sides, just a couple of minutes -- seeds brown quickly. Remove tuna from pan, pour in reserved marinade, and bring to a boil. Pour over tuna, and serve.
