2 lbs sea scallops
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
2 tablespoons margarine
2 tablespoons honey
2 tablespoons lemon juice
1 shallot, chopped
1 garlic clove, minced

Steps:

  • Sprinkle scallops with salt and pepper. Brush with olive oil. Thread onto 4 skewers.
  • Grill, covered with grill lid, on a lightly greased grill rack over medium heat 4 to 6 minutes on each side or until opaque in center.
  • Combine margarine, honey, lemon juice, shallots, and garlic in a small saucepan over medium heat 5 to 10 minutes. Serve with scallops.

From Simply Seafood by Vicki Emmons. Haven't made this yet but it sounds delicious. You'll need a ramekin or small baking dish for easch portion. I can see adding scallions as a garnish.

2 lbs scallops
1 cup plain breadcrumbs, can use cracker crumbs
1/4 cup butter
3 tablespoons honey
1/4 cup vegetable oil

Steps:

  • Cut scallops in half or into quarters, depending on their size.
  • Dry well with paper towels.
  • Melt the butter with the honey and set aside.
  • Roll the scallops in the bread or cracker crumbs and divide them equally into 4-6 individual greased ramekins or small baking dishes.
  • Whisk the oil into the honey-butter blend and drizzle evenly over each portion of scallops.
  • Bake for 10-15 minutes at 475 degrees F.

Another transfer from epicurious for safe-keeping. Sounds delicious, and how can you go wrong with scallops and peaches? The salsa is also apparently quite tasty with mangoes....

1 3/4 cups peeled peaches, diced
1/4 cup red bell pepper, diced
1/4 cup green onion, chopped
3 tablespoons fresh lime juice
2 tablespoons fresh cilantro, chopped
1 tablespoon seeded jalapeno chile, minced
2 teaspoons peeled fresh ginger, minced
1 garlic clove, minced
2 tablespoons soy sauce
2 teaspoons oriental sesame oil
16 large sea scallops
2 tablespoons honey
fresh cilantro leaves

Steps:

  • Mix peaches, red bell pepper, green onions, 2 tablespoons lime juice, chopped cilantro, jalapeƱo, 1 teaspoon ginger, and garlic in small bowl to blend. Season with salt and pepper (this is the salsa, so you can make ahead and chill in the fridge).
  • Mix soy sauce, sesame oil, and remaining ginger in medium bowl to blend.
  • Add scallops and stir to coat. Let stand 30 minutes at room temperature, turning occasionally.
  • Prepare barbecue (I used my Foreman grill here, too!). Combine honey and remaining 1 tablespoon lime juice in another small bowl. Thread 4 scallops on each of 4 wooden skewers, dampened first to prevent burning.
  • Sprinkle with salt and pepper. Grill scallops until just opaque in centers, brushing occasionally with honey glaze, about 2 minutes per side.
  • Spoon salsa into center of platter. Remove scallops from skewers and arrange atop salsa. Sprinkle with cilantro leaves and serve.
