When I was a young girl, this was my oldest sister's Sunday dinner. The tradition has continued, as I make this dish twice a month and my four daughters serve their families with this favorite dish. 1/4 cup butter, melted
1/4 cup orange juice
1/4 cup honey
1/2 teaspoon salt
1 broiler/fryer chicken (3 to 4 pounds), cut up

Steps:

  • In a shallow bowl, combine the butter, orange juice, honey and salt. Remove 1/3 cup and set aside for basting. Dip chicken pieces in remaining butter mixture; place in a well-greased 13x9-in. baking dish. , Bake, uncovered, at 350° for 1 hour or until juices run clear, basting occasionally with reserved butter mixture.,

Honey-Glazed Baked Chicken Quarters image

Put the chicken in the oven for its initial baking right after you come home from work. The sweet-and-sour glaze is quickly prepared and a special family or company dinner can be on the table in a little over an hour. From the California Culinary Academy.

1/3 c flour
1 tsp garlic salt
1 dash(es) freshly ground pepper
3 1/2 lb whole chicken, quartered
6 Tbsp butter
1/4 c honey
3 Tbsp lemon juice
2 Tbsp soy sauce
1 dash(es) ground ginger

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Mix flour, garlic salt, and pepper, then coat chicken quarters thoroughly.
  • 3. Put 2 tablespoons of the butter in a shallow baking dish just large enough to hold the chicken in a single layer; put dish in oven to melt butter while oven preheats.
  • 4. Arrange chicken, skin side down, in melted butter. Bake, uncovered, 30 minutes.
  • 5. Meanwhile, melt remaining 4 tablespoons butter with honey, lemon juice, soy sauce, and ginger. After 30 minutes remove chicken from oven, turn skin side up, and cover with butter mixture. Continue baking, brushing occasionally with butter-honey sauce, until chicken is tender and richly browned (30 to 40 minutes more).
  • 6. Serve immediately.

Every time I make this baked chicken, whether it is just my husband and myself, or friends and family over, they simply rave about how good it tastes. Hope you all feel the same way.

1/2 cup(s) flour
1 teaspoon(s) salt
1/2 teaspoon(s) cayenne pepper
1 - fryer chicken cut up
1 1/2 cup(s) butter, melted
1/4 cup(s) packed brown sugar
1/4 cup(s) honey
1/4 cup(s) lemon juice
1 1/2 teaspoon(s) curry powder

Steps:

  • In a bowl, combine flour, salt and cayenne pepper. Add chicken pieces and dredge to coat.
  • Pour 4 tablespoons of butter into a 13"x9"x2" baking pan. Place chicken in pan turning pieces over once to coat.
  • Bake, uncovered at 350 degrees for 30 minutes.
  • Combine brown sugar, honey, lemon juice, curry powder and remaining butter and pour over chicken and bake 30 more minutes or until chicken is tender. Baste several times with pan drippings.
