Time 1h

Yield 4 filets, 4 serving(s)

Number Of Ingredients 16

2/3 cup sage honey (I used basic clover honey)
2 tablespoons fresh lemon juice
2 tablespoons warm water
1 1/2 teaspoons grated peeled ginger
1 garlic clove, minced
4 (6 ounce) skinless salmon fillets (1 inch thick)
1/4 teaspoon salt
4 cups reduced-sodium chicken broth
3 tablespoons butter
3/4 cup finely chopped onion
1 1/2 cups arborio rice or 1 1/2 cups medium-grain white rice
1/2 cup dry white wine
1/2 cup freshly grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons chopped fresh basil (optional)

Steps:

  • For the Salmon:.
  • Preheat oven to 350º F.
  • In a small bowl, combine honey, juice, water, ginger and garlic.
  • Pour honey mixture into a 9" x 13" x 2" Pyrex baking dish, arrange fish in pan, skinned side up. Let stand 20 minutes. Turn fish over, sprinkle with 1/4 teaspoons salt and bake for 7 minutes.
  • Remove from oven and preheat broiler.
  • Brush fish with honey mixture and broil for 7 minutes, (As you can see, the honey mixture started to burn a bit after about 5 minutes, so I took the fish out and it was perfectly done.) or until fish is browned and flakes easily when tested with a fork or until desired degree of doneness.
  • For the Risotto:.
  • In a medium saucepan, bring the broth to a simmer. Cover the broth and keep hot over low heat.
  • In a large, heavy saucepan, melt 2 Tablespoons of the butter over medium heat. Add the onion and saute until tender but not brown, about 3 minutes.
  • Add the rice and stir to coat with the butter. Add the wine and simmer, until the wine has almost completely evaporated, about 3 minutes.
  • Add 1/2 Cup of the simmering broth and stir until almost completely absorbed, about 2 minutes.
  • Continue cooking the rice, adding the broth 1/2 Cup at a time, stirring constantly and allowing each addition of broth to absorb before adding the next, until the rice is tender but still firm to the bite and the mixture is creamy, about 20 minutes total.
  • Remove from heat. Stir in the Parmesan cheese, the remaining TBS. of butter, salt & pepper and the basil (if so desired).
  • Transfer the risotto to a serving bowl and serve immediately.

HONEY GINGER SALMON

Honey Ginger Salmon image

My friends say this is the best fish they've ever had! Serve with quinoa tossed with some ginger and garlic. I created this recipe as an accompinent to various Asian dishes I was preparing. Can be eaten along side a noodle salad with chopsticks as well.

Provided by Food Snob in Israel

Categories     Lunch/Snacks

Time 30m

Yield 2 serving(s)

Number Of Ingredients 7

2 salmon fillets
3 -4 tablespoons honey
4 garlic cloves, minced
4 tablespoons olive oil
3 -4 tablespoons fresh ginger, minced
salt, to taste
pepper, to taste

Steps:

  • Place Fillets in a large sheet of tin foil.
  • Season fillets with salt and pepper to taste.
  • Drizzle with honey.
  • Sprinkle and/or press garlic and ginger on the fish.
  • Douse in olive oil.
  • Seal the edges of the tin foil around the fish, forming a "pocket" that does not allow for the escape of steam.
  • Cook at 180/375 for 10 minutes and then remove from oven and CAREFULLY open the pouches.
  • Return to the oven to cook as per your tastes for the remainder of the time.
  • I prefer this fish to be "over cooked" and for the honey to take on a carmelized consistancy and the fish to be slightly "tough" and chewy. Though this is also excellent with a soft buttery consistancy fish. You'll know it is done when the fish looses it's transparent color and flakes apart in the center/thickest part with a fork.
  • Batay Avon! Bon Appitete! Happy Eating!

SESAME GINGER SALMON W/ GINGER HONEY GLAZE RECIPE - (4.4/5)

Sesame Ginger Salmon w/ Ginger Honey Glaze Recipe - (4.4/5) image

Provided by á-30692

Number Of Ingredients 18

Salmon Marinade
1 1/2 pounds raw salmon
1/4 cup olive oil
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
2 tablespoons brown sugar
2 tablespoon soy sauce
2 garlic cloves, grated
1 tablespoons freshly grated ginger
1-2 tablespoons toasted sesame seeds
3 green onions, chopped fine (reserve tops for garnish)
Sesame Ginger Honey Glaze
1/4 cup honey
1 teaspoon toasted sesame oil
1 teaspoon soy sauce
1/2 teaspoon freshly grated ginger
1/2 teaspoons toasted sesame seeds
Combine honey, sesame oil, ginger and seeds in a bowl and whisk until smooth. Reserve for glaze

Steps:

  • In a large bowl or baking dish, combine olive oil, sesame oil, soy sauce, garlic, ginger, vinegar, brown sugar and whisk well until combined. Add salmon to the dish or place everything in a ziplock bag, then refrigerate and marinate for 30 minutes. Heat a large skillet on medium-high to high. If you leave the skin on this is the best way to get crispy skin. Add a little grapeseed oil to coat pan. (If skin has been removed it would probably be best to cook the salmon on a wire rack on lined cooking sheet in the oven on broil. Start on the top rack for 4-6 minutes until it browns and caramelizes and move to the middle rack for additional 6 minutes.) Remove salmon with kitchen tongs, shaking off excess marinade, and place on plate. Sprinkle with a little bit of salt and pepper, then place directly in hot pan skin side done. Cook for 6 to 8 minutes, then carefully turn over and cook an additional 6 minutes. Depending on the salmon's thickness (ours was just about an inch thick), until opaque and flaky. Remove and serve immediately with the honey glaze and a sprinkling of toasted sesame seeds and chopped green onion tops.
