2 tablespoons butter
1 tablespoon finely chopped ginger
2 tablespoons honey
4 carrots, peeled and thinly sliced
1/4 cup water
Salt and pepper

Steps:

  • In a small saucepan, melt butter and stir in ginger. Add honey and stir to dissolve. Stir in carrots and toss to coat. Pour in water and cover to steam. Stir occasionally and cook 8 minutes or until tender. Season to taste.

1/2 cup golden raisins
3 tablespoons honey
2 tablespoons butter

Steps:

  • Place carrots in a large saucepan; add water to cover. Bring to a boil. Cook, covered, 6-8 minutes or until crisp-tender. Drain and return to pan., Add raisins, honey, butter, lemon juice, ginger and salt; cook and stir 4-5 minutes longer or until carrots are tender. Just before serving, sprinkle with almonds.

Slow-Roasted Chicken with Honey-Glazed Carrots and Ginger image

1 (3 1/2-4-lb.) chicken
Kosher salt
1 head of garlic, halved crosswise, plus 4 cloves, thinly sliced
1 1/2 lb. carrots, scrubbed, cut in half
8 small shallots, peeled
1 (2") piece ginger, unpeeled, thinly sliced
2 Tbsp. unsalted butter
1 Tbsp. honey
2 Tbsp. extra-virgin olive oil
1 tsp. crushed red pepper flakes
1/4 cup fresh lime juice

Steps:

  • Preheat oven to 250°F. Season chicken generously with salt inside and out. Place head of garlic inside cavity; tie legs together if desired. Let sit at least 5 minutes or chill, uncovered, up to 2 days.
  • Combine carrots, shallots, ginger, butter, and honey in a large Dutch oven or other heavy pot; season lightly with salt. Place chicken on top, nestling into vegetables so lid will sit tight. Cover; bake until an instant-read thermometer inserted into the thickest part of breast registers 155°F, about 2 hours. Uncover and let rest 30 minutes.
  • Meanwhile, cook oil and sliced garlic in a small saucepan over medium until garlic is lightly browned, 6-8 minutes. Add red pepper flakes and let cool. Stir in lime juice; season dressing with salt.
  • Increase oven temperature to 450°F. Place chicken on a rimmed baking sheet and roast until skin is browned and crisp, 10-14 minutes.
  • Meanwhile, place pot over medium-high heat; bring juices to a simmer. Cook, reducing heat as needed, until vegetables are glazed, 10-12 minutes. Keep warm over low heat until chicken is done.
  • Serve chicken on top of vegetables with dressing drizzled over.

3 pounds carrots, cut into 3- by 1/2-inch sticks
3 tablespoons honey
2 tablespoons unsalted butter
1 tablespoon finely chopped peeled fresh gingerroot

Steps:

  • In a kettle cover carrots with salted water by 2 inches and boil, uncovered, until tender, about 10 minutes.
  • While carrots are cooking, cook honey, butter, and gingerroot over moderate heat, stirring, until butter is melted.
  • Drain carrots well and in a bowl toss with honey glaze and salt and pepper to taste.

A delicious glaze over boiled carrots. Makes a simple veggie a little special. The carrots can be steamed or microwaved until cooked. The glaze is prepared separately and poured over the cooked carrots to coat. You can either slice your carrots or use whole baby carrots, If you're not a ginger fan then you can use garlic in place of the ginger. If you have an Italian style dish the garlic can be a good substitute for the ginger called for in this recipe

500 g carrots, peeled and sliced
2 tablespoons butter
1/2 teaspoon ginger, minced (can substitute with bottled ginger or garlic if you prefer)
3 tablespoons honey
1 tablespoon sesame seeds, toasted -see directions
1 pinch salt
1 pinch pepper

Steps:

  • Peel and slice carrots. Boil approx 10 minutes until cooked (or cook to your preference). Strain and set aside. Keep the carrots warm.
  • Meanwhile -- add the sesame seeds to a hot non-stick frypan. There is no need to add any oil. Toss sesame seeds until toasted. Remove from the heat and set aside.
  • Melt the butter in the hot frypan. Add ginger and cook for one minute. Remove from heat.
  • Add the honey, sesame seeds and a pinch of salt and pepper. Stir to soften.
  • Pour the glaze over the cooked carrots.

This is an excellent orange/ginger glazed recipe. I have been making this recipe for over 15 years and it is always a big hit.

1 1/2 lbs fresh baby carrots
4 tablespoons butter
4 tablespoons liquid honey
2 teaspoons grated fresh gingerroot
1/4 cup frozen concentrated orange juice
1 teaspoon lemon juice, freshly squeezed
1 1/2 teaspoons tapioca starch or 1 1/2 teaspoons cornstarch
1/4 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • Wash and trim carrots.
  • In a medium size saucepan, add carrots, salt and cover with water and bring to boil.
  • Reduce heat, cover and cook until carrots are almost tender; about 10 minutes.
  • To a large frying pan, add butter, honey and grated ginger and cook for 1 minute, stirring a few times.
  • Add cooked carrots and stir well to coat.
  • Cover and cook carrots on medium-high heat until carrots are glazed and glossy, about 3 to 4 minutes, stirring occasionally.
  • In a small mixing bowl, mix together orange juice, lemon juice and tapioca starch.
  • Add to frying pan along with salt and pepper.
  • Continue to cook stirring constantly until sauce thickens slightly; about 3 minutes.
  • Serve with your dinner.

6 cups water
3 lbs young fresh baby carrots, with tops trimmed to 2 inches (peeled or scrubbed, or 3 pounds packaged baby carrots)
2 tablespoons margarine or 2 tablespoons butter
2 tablespoons honey
4 teaspoons fresh ginger, minced
1/4 teaspoon salt

Steps:

  • Line a baking sheet with paper towels.
  • In a 12- or 14-inch heavy skillet bring water to boiling, add carrots.
  • Return to boiling; reduce heat.
  • Cover and simmer about 10 to 12 minutes or until carrots are just tender and drain.
  • (I prefer to use my Cuisinart Turbo Convection Steamer ).
  • Carefully turn out onto prepared baking sheet.
  • (When green tops are left on carrots during cooking, they become very fragile. As the carrots cook, some of the tops may come off.).
  • Pat dry with additional paper towels.
  • To glaze carrots, in the same heavy skillet combine margarine, honey, ginger, and salt.
  • Stir constantly over medium heat until margarine is melted.
  • Carefully add carrots.
  • Toss gently for 2 to 3 minutes or until carrots are thoroughly coated with glaze and heated through completely.
  • To serve, arrange carrots in a shallow bowl or on a platter; drizzle with remaining glaze from pan.

2 tablespoons butter
6 shallots, quartered, root end intact, about 1 cup
1 tablespoon minced peeled fresh ginger
1 1/2 lbs carrots, peeled, diagonally cut into 1-inch chunks
1/4 cup honey
1/4 cup orange juice
1/2 teaspoon salt
1/4 teaspoon dried ancho chile powder or 1/8 teaspoon cayenne pepper
1 tablespoon chopped fresh parsley

Steps:

  • In large nonstick skillet over medium-high heat melt butter. Add shallots and ginger; cook until just tender, 2 minutes.
  • Stir in carrots; cook 3 minutes. Stir in honey, orange juice, salt and chile pepper. Increase heat to high; bring to boil.
  • Reduce heat to medium-low; cover. Simmer, stirring once, 15 minutes.
  • Uncover. Increase heat to medium; cook until carrots are glazed and tender, 5 minutes. Transfer to serving dish. Sprinkle with parsley.
