A chipotle sauce gives these oven-roasted ribs a smoky flavor. Once they're tender, finish them on the grill with a honey glaze.

1/4 cup minced canned chipotle chiles in adobo
1/2 cup honey
1/4 cup mustard powder
Coarse salt and ground pepper
2 racks pork spare ribs (2 1/2 pounds each)
Vegetable oil, for grates
Lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees. In a small bowl, combine chipotles, 1/4 cup honey, mustard powder, 3 tablespoons salt, and 2 teaspoons pepper.
  • Place a large double layer of foil on a large rimmed baking sheet. Place ribs on top and rub with chipotle mixture. Wrap ribs tightly in foil and bake on sheet until meat is fork-tender, 2 to 2 1/2 hours.
  • Heat grill to medium-high; clean and lightly oil hot grates. Remove ribs from foil, letting excess liquid drip off. Brush ribs with 1/4 cup honey and grill until lightly charred, 2 to 3 minutes per side. Cut between bones to separate ribs and serve with lemon wedges.

2 tablespoons ancho chile powder
2 tablespoons Spanish sweet paprika
1 tablespoon ground cumin
1 teaspoon ground cinnamon
Kosher salt and freshly ground black pepper
Canola oil, for brushing
16 bone-in 1/3- to 1/2-inch-thick flanken-style American bison short ribs
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Orange Honey Chipotle BBQ Sauce, for brushing, recipe follows
2 tablespoons canola oil
1 clove garlic, finely chopped
1 small red onion, finely diced
1/2 cup freshly squeezed orange juice
Finely grated zest of 1 orange
1/2 cup ketchup
1/4 cup clover honey
1/4 cup red wine vinegar
2 tablespoons chipotle in adobo puree
1 tablespoon soy sauce
1 1/2 teaspoons ancho chile powder
1 teaspoon kosher salt

Steps:

  • Combine the ancho, paprika, cumin, cinnamon, 2 tablespoons salt and 1 teaspoon pepper in small bowl. Sprinkle both sides of the ribs with salt and pepper, and then rub the spice mix onto the top of the ribs. Put on a baking sheet lined with aluminum or parchment. Let the ribs sit at room temperature for 30 minutes.
  • Heat a charcoal or gas grill to high for direct grilling. Brush the ribs on both sides with oil and grill, spice-side down, until golden brown and slightly charred, about 4 minutes. Flip and grill another 4 minutes. Brush with some of the Orange Honey Chipotle BBQ Sauce during the last minute of grilling. Remove to a platter and brush with more of the sauce.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic and onions and cook until soft, about 2 minutes. Add the orange juice and zest and cook until slightly reduced.
  • Add the ketchup, honey, vinegar, chipotle puree, soy sauce, ancho powder and salt, and bring to a simmer, stirring occasionally and simmer until slightly thickened, about 10 minutes. Remove from the heat and let cool to room temperature.

BARBECUE SAUCE:
3 cups ketchup
2 bottles (11.2 ounces each) Guinness beer
2 cups barbecue sauce
2/3 cup honey
1 small onion, chopped
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons chopped chipotle peppers in adobo sauce
4 teaspoons ground chipotle pepper
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper

Steps:

  • Wrap ribs in large pieces of heavy-duty foil; seal edges of foil. Grill, covered, over indirect medium heat for 1 to 1-1/2 hours or until tender., In a large saucepan, combine sauce ingredients; bring to a boil. Reduce heat; simmer, uncovered, for about 45 minutes or until thickened, stirring occasionally., Carefully remove ribs from foil. Place over direct heat; baste with some of the sauce. Grill, covered, over medium heat for about 30 minutes or until browned, turning once and basting occasionally with additional sauce. Serve with remaining sauce.

3 lb. pork baby back ribs
1/4 cup dry mustard
2 tsp. ground black pepper
1/4 cup honey
1/4 cup plus 2 Tbsp. KRAFT Spicy Honey Barbecue Sauce
1 lime, halved

Steps:

  • Heat oven to 400ºF.
  • Place half the ribs in single layer on large sheet of heavy-duty foil. Mix mustard, pepper and honey; rub half evenly onto both sides of ribs. Bring up foil sides. Double fold top and both ends to seal packet. Repeat to make second packet. Place packets on baking sheet and bake 2 hours or until ribs are done.
  • Heat grill to medium-high heat. Remove ribs from foil; discard foil. Brush ribs with barbecue sauce; grill 2 to 3 min. on each side or until lightly charred, turning occasionally. Serve with lime halves.

1/2 cup ancho chili powder
1/4 cup Spanish paprika
1/4 cup freshly ground black pepper
1/4 cup dry mustard
1/4 cup kosher salt
1/4 cup ground coriander
2 tablespoons dried oregano
2 tablespoons ground cumin
1 1/2 tablespoons chile de arbol
1/4 cup canola oil
2 racks country ribs, 12 ribs each, membrane removed
1 1/2 cups clover honey
3 heaping tablespoons chipotle in adobo puree
Parsley sprigs, for garnish
Clover honey, to taste
Chipotle in adobo, pureed, to taste
Salt and pepper

Steps:

  • Combine all spices in a small bowl.
  • Brush both sides of the racks with oil and liberally rub with the spice mixture. Wrap in plastic and refrigerate for at least 12 hours. Remove the ribs from the refrigerator 45 minutes before smoking to allow them to come to room temperature.
  • Stuff several sheets of newspaper in the bottom of a charcoal chimney. Fill the chimney to the top with charcoal briquettes. Remove top rack from the barbecue. Put the chimney on the lower barbecue rack. Light the newspaper and let the charcoal burn until the ash is gray, about 20 minutes.
  • Open bottom barbecue vent. Turn out the hot charcoal onto 1 half of bottom rack. Using a metal spatula, spread charcoal to cover approximately 1/3 of rack and scatter half of the soaked wood chips over the charcoal. Put a loaf pan with water onto the coals.
  • Put the top rack on the barbecue. Put the ribs, rub side down, on the grill over indirect heat. Coals should be off to 1 side. Slowly cook the ribs until tender, adding more charcoal if needed, about 1 1/2 hours.
  • Chipotle Honey Glaze:
  • Whisk all of the ingredients together in a small bowl.
  • Begin brushing the glaze on the ribs during the last 30 minutes of cooking.
  • Put the ribs on a baking sheet; brush with a little more of the glaze and let stand 10 minutes. Transfer the ribs to a cutting board and cut between the bones to separate the ribs. Arrange the ribs on a serving platter and serve.

1 (7-ounce) can chipotles in adobo sauce
3 pounds country style pork ribs, bone in

  • In a food processor, combine honey, ketchup, ginger, and 5 chipotles with adobo sauce. Blend until smooth. Taste and add remaining chipotles, or more honey, if desired. If sauce is too thick, thin with a little water or apple juice. Pour half of the sauce over the pork and reserve the rest. Marinate for at least 4 and up to 24 hours.
  • Prepare a grill or grill pan. Grill the pork ribs until cooked to desired doneness. A little charring on the pork is desired. Remove pork from heat and slather with remaining sauce.

2 large slabs of beef ribs cut the ribs off each seperate, this is to season better
2 Tbsp in a shaker add two tabelspoons of each seasoning garlic powder, montreal steak seasoning, chipotle powder, goya adobo powder, black pepper.

2 Tbsp lime juice
2 clove garlic
1/2 c chopped onion
1/4 c cilantro, fresh
2 large chipotle chilies in adobo sauce; can b efound in latin american food markets
2 Tbsp chipotle dobe juice from the can
1/2 tsp ground cumin
1/4 c olive oil
1 large tomato seeded & chopped
1 Tbsp honey or a tad bit more
1/2 tsp salt to taste

Steps:

  • 1. Season your ribs liberly on all sides and set aside for a while
  • 2. Next in the blender add everything for the sauce except the olive oil. Blend all the other ingredients to a smooth sauce. If somewhat pasty add a little water and blend again. Next in a saute pan heat the oil; when shimmering add the contents of the blender and with a wooden spoon saute and cook your sauce for about five minutes. Taste to see if seasoning is ok. Now baste your ribs with this sauce best to use a pastry brush and baste all over.
  • 3. After putting chipotle sauce all over the ribs put under the broiler for about 5 minutes on each side. Ribs should be deep golden brown outside and medium rare inside. If you like your meat medium well then leave an additional 2 minutes in the broiler. Enjoy
  • 4. I use the left over chipotle sauce to sauce the ribs up after broiling. I serve with a rice dish and a salad. P.S. You can adjust your sauce with more honey if you like a sweeter sauce. Enjoy
