An easy tutorial to show how easy it is to make homemade honey roasted nuts. Honey roasted cashews are great for snacking.

2 cups cashews or nuts
1/4 cup honey
2 tablespoons melted butter
1/8 teaspoon salt

Steps:

  • Preheat the oven to 300 F degrees.
  • In a small microwave-safe bowl, add the butter.
  • Microwave for 25-30 seconds until the butter is melted. Add the honey and stir to mix and soften the honey. Add the salt (to taste.)
  • Pour the honey mixture onto the nuts and toss to coat.
  • Spread parchment paper over the baking sheet and dump the nut mixture into the baking sheet. Use a spoon to spread out the mixture so the nuts are all flat and not bunched up. This will help them bake evenly.
  • Bake for 8 minutes. Remove from the oven, stir the nuts and bake another 5-8 minutes.
  • Remove from the oven and allow to cool.

Yield 1-1/4 pounds.

Number Of Ingredients 7

2 teaspoons plus 10 tablespoons butter, divided
1/2 cup sugar
1/4 cup brown sugar
1 tablespoon light corn syrup
3/4 teaspoon cayenne pepper
1/4 teaspoon salt
2 cups salted cashews

Steps:

  • Line a 15x10x1-in. pan with foil and grease the foil with 2 teaspoons butter; set aside. In a large heavy saucepan, combine the sugar, brown sugar, corn syrup, cayenne, salt and remaining butter. Cook and stir until sugar is dissolved., Add cashews and bring to a boil; cook and stir until a candy thermometer reads 280° (soft-crack stage), about 6 minutes., Immediately pour into prepared pan; spread with a metal spatula. Cool completely. Break into pieces. Store in an airtight container.
