SUNNY'S HONEY BBQ OVEN SHORT RIBS

1/4 cup sweet paprika
1 tablespoon onion powder
Kosher salt and freshly ground black pepper
2 teaspoons dry oregano
2 teaspoons garlic powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
6 pounds short-ribs, flanken-cut (about 6 ribs bone-in, cut into 5 to 6-inch strips)
1/2 cup honey

Steps:

  • Heat the oven to 300 degrees F.
  • In a small bowl, combine the paprika, onion powder, 4 teaspoons salt, oregano, garlic powder, cumin, cayenne pepper and a few grinds of black pepper. Rub the mixture all over the ribs and allow it to sit at room temperature for 1 to 2 hours at the most.
  • Place the ribs snugly in an oven dish with the fat side of each rib facing up. Cover tightly with aluminum foil and don't be afraid to top the dish with another heavy dish to ensure the seal! Cook in the oven for 2 1/2 hours, at this point the meat should be falling off the bones. Remove the ribs from the oven and raise the temperature to 425 degrees F.
  • Using a pair of tongs, flip and move the beef around a bit. Drizzle the honey evenly over the top of each rib. Place the ribs back in the oven, this time leaving it uncovered and cook another 10 to 15 minutes.

4 lbs pork baby back ribs
36 ounces beer
3 tablespoons kosher salt
3 tablespoons packed brown sugar
1 tablespoon celery seed
1 tablespoon cayenne pepper
1 1/2 teaspoons black pepper
1 teaspoon liquid smoke (optional)
2/3 cup finely chopped onion
2 -3 cloves garlic, minced
2 tablespoons oil
1 1/2 cups Heinz Chili Sauce
1 cup beer
1/2 cup honey
1/4 cup Worcestershire sauce
2 tablespoons prepared yellow mustard

Steps:

  • Prepare your ribs by rinsing them off and removing the membrane on the back (slide a sharp knife under there to loosen it, then grab it with something dry like a paper towel and pull it off).
  • You may cut your ribs into sections before brining, if desired.
  • Mix together beer, salt, brown sugar, celery seed, cayenne pepper, black pepper and liquid smoke in a saucepan.
  • Heat over low heat, stirring gently until all the salt dissolves; allow to cool.
  • Place rib sections in a large ziplock or resealable bag and pour the cooled brine over; squeeze out as much air as possible and seal the bag.
  • Allow the ribs to brine in this mixture, for 6 hours or overnight, rotating bag occasionally.
  • Prior to cooking, remove ribs from brine and pat dry; discard used brine.
  • Using a drip pan, prepare a grill for indirect cooking.
  • Place the ribs over the drip pan and grill using indirect medium heat (test by placing your hand over the heat- you should be able to keep it there for about 3 seconds).
  • Cover grill and cook for 1 1/2- 1 3/4 hours or until the ribs are tender, and the meat has pulled back from the edges of the bone slightly.
  • Add additional coals during cooking if needed.
  • Baste with honey bbq sauce during the last minutes of cooking, allowing the sauce to set.
  • To make the sauce, cook onion and garlic in oil in a small saucepan until the onions become tender.
  • Add the chili sauce, beer, honey, Worcestershire sauce and mustard to the pan, stirring to mix well.
  • Bring sauce to a boil, then lower heat and simmer for about 20 minutes, stirring occasionally, or until it is as thick as you like it.
  • Use sauce on ribs as a baste; sauce can be prepared ahead.

1/2 cup honey
Water
Worcestershire sauce
1 lemon
2 cloves crushed garlic
1 tsp English mustard

Steps:

  • Ribs
  • Steam the ribs in an oven tray covered in cling film for 2-3 hrs on about 140C.
  • Then remove the cling film and pour over the sauce and bake in a moderate oven for 20-30 minutes.
  • Sauce
  • Bake the tomatoes in a hot oven (220C) for 10-15 minutes, untill they start to brown.
  • Add all ingredients to a sauce pan and simmer for 5 minutes, then place into a blender and blend on high before straining through a sieve. Add water to make a thick sauce.
  • Season to taste with salt pepper and more English mustard as required.

This is a personal recipe i came to figure out on my own through trial and error, i am not a huge fan of chewy or hard ribs so i found a way to make the meat extremely tender and everyone i make these ribs for has LOVED them, i hope who ever tries my recipe enjoys them as well! I preffer to use country style ribs without the bone, that way you get more meat for your money. As far as sause i love kraft's honey barbecue sause. You can use a cookie sheet for this but i have found that a baking dish with handles works a lot better and easier with the tinfoil

3 lbs country-style pork ribs, thawed (without the bones)
honey barbecue sauce (your choice of sauce)
2 teaspoons minced onion flakes
2 -3 tablespoons Lawry's Seasoned Salt
1 tablespoon garlic salt
salt and pepper

Steps:

  • 1. In a dish sprinkle salt, pepper, garlic salt, seasoning salt and minced onion flakes all over, then take each slice of rib and rub both sides with the seasoning mixture. Make sure each rib is well coated.
  • 2. Line a baking dish with heavy duty foil and spray with pam, preheat oven to 350 degrees.
  • 3. Place ribs inside the baking dish and inside the oven for 20minutes until meat is browned on both sides. You can flip them over halfway.
  • 4. Take ribs out and brush on honey bbq sauce on top of ribs generously and put back in oven for another 20minutes until sauce is caramelized. Once sauce is caramelized add more sauce to the top of the ribs.
  • 5. Cover the baking dish with foil well to make sure no steam can come out but try not to touch the top of the ribs. Make sure all sides are well sealed and put back into the oven.
  • 6. Turn oven down to 250 degrees so sauce won't burn and let them bake for 2-3 hours. After two hours have passed, pull back a corner of the foil and poke one of the ribs with a fork to check the tenderness of the meat, if you desire them to be even more tender put the tinfoil back over tightly and let them sit for another hour.
  • 7. After ribs are done peel back foil carefully as steam will come out, take out ribs cover with sauce again and they are ready to be served!

2 tablespoons Spanish sweet paprika
1 tablespoon ground cumin
1 teaspoon ground cinnamon

Canola oil, for brushing
16 bone-in 1/3- to 1/2-inch-thick flanken-style American bison short ribs

Orange Honey Chipotle BBQ Sauce, for brushing, recipe follows
2 tablespoons canola oil
1 clove garlic, finely chopped
1 small red onion, finely diced
1/2 cup freshly squeezed orange juice
Finely grated zest of 1 orange
1/2 cup ketchup
1/4 cup clover honey
1/4 cup red wine vinegar
2 tablespoons chipotle in adobo puree
1 tablespoon soy sauce
1 1/2 teaspoons ancho chile powder

Steps:

  • Combine the ancho, paprika, cumin, cinnamon, 2 tablespoons salt and 1 teaspoon pepper in small bowl. Sprinkle both sides of the ribs with salt and pepper, and then rub the spice mix onto the top of the ribs. Put on a baking sheet lined with aluminum or parchment. Let the ribs sit at room temperature for 30 minutes.
  • Heat a charcoal or gas grill to high for direct grilling. Brush the ribs on both sides with oil and grill, spice-side down, until golden brown and slightly charred, about 4 minutes. Flip and grill another 4 minutes. Brush with some of the Orange Honey Chipotle BBQ Sauce during the last minute of grilling. Remove to a platter and brush with more of the sauce.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic and onions and cook until soft, about 2 minutes. Add the orange juice and zest and cook until slightly reduced.
  • Add the ketchup, honey, vinegar, chipotle puree, soy sauce, ancho powder and salt, and bring to a simmer, stirring occasionally and simmer until slightly thickened, about 10 minutes. Remove from the heat and let cool to room temperature.

Please adjust amounts to taste. Double the sauce amount if using more than 3 pounds of beef. Add in a sliced onion also if desired. This will also work well with a small beef blade roast, you might want to brown the roast firstly before adding to the crock pot and double the sauce amount, cook until the roast is fork-tender.

  • Season ribs with salt and pepper, if desired.
  • Place in slow cooker.

  • The last 30 minutes of cooking, mix the cornstarch with the water; add to the sauce in the crock pot, stir and cook until thickened.

3 lb country-style pork ribs - i always double the recipe
1/2 tsp garlic salt
1/2 tsp pepper
1 c ketchup
1/2 c packed brown sugar
1/2 c honey
1/4 c spicy brown mustard
2 - 3 Tbsp worcestershire sauce
1 - 1/2 tsp teaspoons liquid smoke, optional

Steps:

  • 1. Place ribs in a large kettle or Dutch oven; sprinkle with garlic salt and pepper. Add enough water to cover; bring to a boil. Reduce heat; cover and simmer for 1 hour or until juices run clear and ribs are tender; drain. Combine the remaining ingredients. Grill ribs, uncovered, over medium heat for 10-12 minutes, basting with sauce and turning occasionally.
  • 2. If I use the oven method. Boil the ribs for 15 minutes; and then place ribs in a 10x15 pan and ladle most of the sauce over the ribs and bake at 350'F for 30-40 min. uncovered.

Steps:

  • Directions Heat oven to 300 F. Combine paprika, garlic powder, onion powder, salt, pepper and chili powder in a bowl and rub each rib generously with the mixture. Place ribs in a roasting pan, cover with aluminum foil, and put in the oven to roast for 3-4 hours. Remove ribs, remove aluminum foil, and sauce generously with Sweet Baby Ray's Honey Barbecue Sauce. Place under broiler for a few minutes, until sauce starts to bubble. Remove and serve with parsley garnish.

1 shaker of Weber Grill mates - Kick'n Chicken Seasoning (Even though made for chicken is good for giving pretty much anything a nice kick to it without an intense bite) Or...
Mix the following in equal amounts ... One tbsp Dehydrated onion, Dehydrated garlic, Red Pepper, Orange peel, , Dehydrated red peppers, and a tsp of sugar & salt.
1 jar or bottle of Sweet Baby Rays or Fat Jacks Hickory & honey BBQ sauce. Or whatever you prefer but those 2 are the best.
A few limes (to squeeze the fresh juice on the ribs.)
4-6lbs of Boneless Country Style Ribs

Steps:

  • Get out your thawed ribs, mix together the lime juice, seasoning and bbq sauce You want a decent amount because you will use half in the begining and half towards the end. Set the ribs on your pan or whatever you are using. Slather the mixture on the ribs leaving half of your bowl full on the side. Now set your oven at 375 and cook for 1 1/2 to 2 1/2 hours whichever you feel more comfortable with. Take the ribs out and put the rest of the mixture on the ribs and put back in for a half hour to 45 minutes. Then take out and serve with your favorite side dish.

I had seen a variation of this recipe on the Food Network's Alton Brown show "Good Eats" but didn't like the taste when finished; so I worked on it for about a month to get what the entire family enjoys. This can be left marinading for days in the fridge as well. You can also use short ribs, or the country style as well.

1 cup brown sugar (can be dark or light or even mixed)
2 tablespoons kosher salt
2 teaspoons black pepper
1 teaspoon thyme
1 teaspoon cumin

1 tablespoon cayenne pepper
1 1/2 cups honey
2 tablespoons Worcestershire sauce
1 tablespoon liquid, from jalapeno pepper jar
1 teaspoon liquid smoke
1/2 cup white wine vinegar

  • Line a 6x9 baking dish with aluminum foil.
  • Combine the sugar, salt, pepper, and spices.
  • Rub the mix into the meat and set aside.
  • Mix the 1 cup of Honey, Vinegar, Worcestershire, jalapeño, and liquid smoke in a microwave safe bowl. Heat in the microwave bowl for one minute.
  • Drizzle the mixture over the ribs and cover with a sheet of foil. At this point you can refrigerate this up to two days.
  • When ready to cook, insert the baking dish into a cold stove then turn the temperature to 200 deg F and let cook for 4 hours.
  • When the meat thermometer reads 165 remove the top layer of foil and drizzle the remaining honey over the ribs and sprinkle with a dash of kosher salt. Turn the oven to broil and cook the ribs till the honey bubbles slightly.

  • Cut ribs into 2-rib sections; place in Dutch oven or stockpot.
  • Add enough water to completely cover ribs. Stir in remaining ingredients except barbecue sauce; cover with lid. Bring to boil; simmer on medium-low heat 20 min. Drain.
