Had a few cans of hominy and came up with this dish. Bonus is, it is quick to prepare. Good for vegetarians too!

2 (15.5 ounce) cans white or yellow hominy, rinsed and drained
1 (16 ounce) can diced tomatoes
1 (4.5 ounce) can diced green chiles
1 teaspoon ground cumin
1 clove minced garlic
chopped fresh cilantro
salt and pepper to taste
½ cup shredded Monterey Jack cheese

Steps:

  • In a saucepan over medium heat, stir together hominy, tomatoes, green chiles, cumin, and garlic. Cook about 7 minutes. Stir in cilantro. Remove from heat, divide into bowls, and top with cheese.

3/4 lb ground beef
2 stalks celery, sliced
2 cloves garlic, minced
2 medium onions, chopped
1 tablespoon vegetable oil
1 (3 ounce) can chopped mild green chilies
1 (8 ounce) can tomato sauce
1 teaspoon celery salt
1/4 teaspoon cumin
1/4 teaspoon chili powder, to taste
pepper, to taste
2 (16 ounce) cans white hominy, drained
1/2 cup grated cheddar cheese

Steps:

  • Saute the meat, celery, garlic, and onions in oil until onions are slightly soft.
  • Add the chiles, tomato sauce, celery salt, cumin, chili powder, and pepper, and simmer for 5 minutes.
  • Add drained hominy to the meat mixture and cook until hominy absorbs the color of the sauce.
  • Place in serving bowl and top with grated cheddar.
  • Makes 6 to 8 servings.

2 teaspoons ground cumin
1 teaspoon paprika
1 (49.5 fluid ounce) can chicken broth
1 (29 ounce) can hominy, undrained
4 cooked skinless, boneless chicken thighs, chopped
1 (14.5 ounce) can diced tomatoes in juice
1 (14.5 ounce) can water
6 green onions, sliced
1 lime, juiced, or to taste
1 dash hot sauce, or to taste
1 cup chopped fresh cilantro

Steps:

  • Heat oil in a large pot over medium heat; stir cumin and paprika into hot oil until fragrant, about 1 minute. Add broth, hominy, chicken, diced tomatoes and juice, water, green onions, lime juice, and hot sauce to seasoned oil; bring to a boil. Reduce heat and simmer until flavors have blended, about 15 minutes. Garnish soup with cilantro just before serving.

1 boneless beef chuck roast (3 to 4 pounds), cut into 1-inch pieces
1 can (15-1/2 ounces) hominy, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 large sweet red pepper, finely chopped
1/2 cup chopped onion
1 can (4 ounces) chopped green chiles
2 garlic cloves, minced
1 tablespoon paprika
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups frozen corn

Steps:

4 cans (15-1/2 ounces each) hominy, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
3/4 pound bacon strips, diced
1 large onion, chopped
1 medium green pepper, chopped

Steps:

  • In a 5-qt. slow cooker, combine the hominy, tomatoes and tomato sauce. , In a large skillet, cook bacon until crisp; remove with a slotted spoon to paper towels. Drain drippings from pan, reserving 1 tablespoon. , In the same skillet, saute onion and green pepper in drippings until tender. Stir onion mixture and bacon into hominy mixture. Cover and cook on low until heated through, 6-8 hours.

1 teaspoon cumin seeds
2 tablespoons olive oil
1 cup finely chopped white onion
1 large fresh Anaheim chili,* stemmed, seeded, chopped (about 1/2 cup)
2 garlic cloves, minced
1 dried New Mexico chili,** stemmed, seeded, torn into small pieces
1 teaspoon dried Mexican oregano
4 cups low-salt chicken broth
1 14- to 15-ounce can golden hominy, drained
1 14- to 15-ounce can diced tomatoes in juice
1/3 cup finely crushed tostadas caseras or corn chips
1 to 2 tablespoons fresh lime juice

Steps:

  • Toast cumin seeds in heavy small saucepan over medium heat until beginning to darken in color, stirring often, about 3 minutes. Cool 10 minutes. Enclose in plastic bag and crush with hammer or mallet.
  • Heat oil in heavy large saucepan over medium-high heat. Add onion, Anaheim chili, and garlic. Sauté until onion is translucent, about 5 minutes. Add New Mexico chili, oregano, and cumin seeds. Stir 2 minutes longer. Add broth, hominy, tomatoes with juices, and tostadas caseras. Bring soup to boil; reduce heat to medium-low, cover, and simmer until dried chili is very soft and flavors blend, about 45 minutes. Season soup with salt and pepper, then lime juice to taste. (Can be made 1 day ahead. Chill uncovered until cold, then cover and keep chilled. Rewarm soup before serving.) Ladle soup into bowls.
