HOMINY AND CHEESE CASSEROLE
This hominy casserole uses reduced fat and fat free ingredients, and still has a load of flavor!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a medium skillet with cooking spray and place over medium heat. Add the diced onion and garlic; cook and stir until the onions are soft and translucent. Reduce the heat to medium-low and mix in the green chiles; cook for 1 minute. Stir in the cream cheese until fully melted. Remove the skillet from the heat.
- Place the Cheddar, hominy, and cream cheese mixture in a 2 quart casserole; stir until well combined.
- Bake in preheated oven for 35 minutes. Cool for 5 minutes before serving.

I love hominy, but many people these days don't seem to even know what it is, and often a lot of folks think they don't like it. Well, after they taste it served this way, there's a very good chance they'll change their minds. :)

- Preheat oven to 350 degrees F.
- Mix all ingredients except for the crushed corn chips.
- Pour into a 2-quart casserole and cover with the crushed chips.
- Bake at 350 degrees for 35 minutes.
HOMINY & CHEESE CASSEROLE
Some people in this day & age do not even know what hominy is. This is a good casserole to start to learn of this good taste. This dish goes well with just about any meat. One of my favorites is with baked chicken. This dish can be doubled or tripled real easy.
