1/4 lb bacon
20 ounces yellow hominy
6 eggs
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook the bacon in a frying pan until crisp. Remove bacon and drain all but 2 Tb of bacon grease.
  • Drain the can of hominy and add to the bacon drippings. Fry over medium heat until hominy is lightly brown.
  • Beat together the eggs, salt and pepper. Add to hominy and cook, stirring frequently, until eggs are done.
  • Crumble bacon over the top and serve.
  • Try shredded cheese melted over the top too, if you want to.

3/4 cup sliced fresh mushrooms
2 tablespoons chopped onions
4 eggs
1/4 cup milk
6 slices ready to serve Canadian bacon, cut into 1/4-inch pieces
black pepper (optional)
1/2 cup shredded swiss cheese
2 cups fresh baby spinach leaves
2 tablespoons chopped tomatoes

Steps:

  • Spray large skillet with cooking spray.
  • Add mushrooms and onions to skillet; cook and stir on medium heat 5 minutes or until vegetables are crisp-tender.
  • Beat eggs and milk with wire whisk until well blended. Add to vegetable mixture; stir until well blended. Cook 2 minutes or until egg mixture begins to set but top is still moist, stirring occasionally.
  • Stir in Canadian bacon; continue cooking 2 minutes or until egg mixture is set and no visible liquid remains, stirring occasionally.
  • Season with pepper to taste; sprinkle with cheese.
  • Place 1/2 cup of the spinach on each of 4 salad plates; top evenly with the egg mixture. Sprinkle with tomatoes.

1 can(s) white hominy, drained
2 Tbsp butter, cold
4 eggs
1 c leek or white onion {chopped}
2 clove garlic {crushed}
1/4 tsp achiote {ground}
1/4 c milk, 2%
2 tsp cilanto {finely chopped}
salt and pepper {to taste}
SERVE WITH COFFEE AND MEXICIAN CORN BREAD

Steps:

  • 1. Preparation: 1.Heat the butter over medium heat in a large sauté pan, add the chopped leek or onions, crushed garlic, achiote and salt to make a refrito, cook until the leeks are soft, about 5 minutes.
  • 2. 2.Add the mote or hominy, stir in well and cook for another 2 minutes.
  • 3. 3.Add the milk and cook until the milk is almost all absorbed by the hominy.
  • 4. 4.Whisk the eggs and add them to the hominy, stir well and cook for about 3-5 minutes.
  • 5. 5.Stir in the chives and cilantro and add additional salt if needed.
  • 6. 6.Serve accompanied by queso fresco slices and hot black coffee.

1 (14 ounce) can yellow hominy or 1 (14 ounce) can white hominy
6 eggs, beaten
1/2 small onion, diced fine
3/4 cup shredded monterey jack cheese or 3/4 cup Fontina cheese
2 tablespoons chopped cilantro
salt & pepper
1 teaspoon canola oil
1 achiote, seed

Steps:

  • Rinse hominy & drain.
  • Heat skillet on med-high heat. Add oil & achiote seed. When oil colors, removed and discard achiote seed.
  • Combine all ingredients and pour into skillet.
  • Stir occasionally and cook until eggs are done.
  • This can be served with salsa on top. I like to serve this with sliced tomatoes on the side.

  • In a large pan, fry the bacon pieces until browned and crisp.
