CHEESY BACON AND HOMINY CASSEROLE
I have been wanting to do something with hominy for awhile now, so at work today while waiting for phone calls, I concocted this recipe. I think it will be very good. Please try it and tell me what you think!

Steps:
- 1. Drain and rinse hominy; set aside.
- 2. Cook bacon and crumble; set aside.
- 3. Peel and slice shallots. Peel and mince garlic.
- 4. In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.
- 5. Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.
- 6. Blend in 1 cup of the cheese and stir until melted.
- 7. Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.
- 8. Remove cover and sprinkle on the crumbled bacon, followed by 1/2 cup cheese.
- 9. Continue baking, uncovered, for 15 minutes or until cheese is melted. Serve immediately.
HOMINY, BACON AND EGGS SCRAMBLE
Quick breakfast dish, with that something extra. I sometimes omit the green pepper or for holidays use both red and green bell peppers.You may use more or less cheese as you prefer.

- Fry bacon in skillet.
- Set bacon aside. Reserve two TBS bacon drippings, turn heat down,.
- Drain hominy, add to skillet along with the green pepper. Allow to cook until pepper is tender, about 5 minutes on med heat.
- Beat eggs and pour over hominy mixture in skillet. Stir until eggs are just set. Crumble bacon and add to mixture. Sprinkle cheese on top.

HOMINY AND BACON
Hominy and bacon in a simmered milk gravy. A great accompaniment to eggs. An old old breakfast side dish served in logging camps and homes in the Pacific Northwest. My Grandmother, who was born in the late 1800s, told me her mother ate this as a child.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain grease from the skillet. Crumble the bacon, and return it to the skillet. Reduce heat to medium, and add hominy and evaporated milk, and cook, stirring often. Let it bubble, but don't let the milk scorch. Cook until thickened, 10 to 15 minutes.
