Kalua Pork with Cabbage is a Hawaiian dish often served at Luaus. This version is made in the slow cooker and tastes just like authentic shredded Kalua Pig.

3-4 pound pork roast
1-2 Tbsp Kosher salt
1/3 c. liquid smoke
1 c. water
1/2 head cabbage (coarsely chopped)

Steps:

  • Rub pork generously with salt and pour on liquid smoke.
  • Place in Crock Pot or Slow Cooker.
  • Add water. Cover and cook on low for 8-10 hours.
  • Shred pork and serve.
  • An hour before serving, carefully lift pork out of the slow cooker (do not drain out juices)and place cabbage in the bottom of the slow cooker.
  • Place pork on top of the cabbage, place lid back on, and cook for another hour.

7 bacon strips, divided
1 boneless pork shoulder butt roast (3 to 4 pounds), well trimmed
1 tablespoon coarse sea salt
1 medium head cabbage (about 2 pounds), coarsely chopped

Steps:

  • Line bottom of a 6-qt. slow cooker with 4 bacon strips. Sprinkle all sides of roast with salt; place in slow cooker. Arrange remaining bacon over top of roast., Cook, covered, on low 8-10 hours or until pork is tender. Add cabbage, spreading cabbage around roast. Cook, covered, 1 to 1-1/4 hours longer or until cabbage is tender. , Remove pork to a serving bowl; shred pork with 2 forks. Using a slotted spoon, add cabbage to pork and toss to combine. If desired, skim fat from some of the cooking juices; stir juices into pork mixture or serve on the side.

1 boneless pork shoulder roast (5 to 6 pounds)
1 tablespoon liquid smoke
4 teaspoons sea salt (preferably Hawaiian Alaea Sea Salt)
Hot cooked rice, optional

Steps:

  • Pierce pork with a fork; rub with liquid smoke and salt. Place pork in a 6-qt. slow cooker. Cook, covered, on low until pork is tender, 8-10 hours. , Remove roast; shred with 2 forks. Strain cooking juices; skim fat. Return pork to slow cooker. Stir in enough cooking juices to moisten; heat through. If desired, serve with rice. Freeze option: Freeze cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

2.67 lbs. lean pork tenderloin
2 tbsp. olive oil
2 tsp. liquid smoke
1 tbsp. salt (or more, Hawaiian is best)
1/2 cup water
4 garlic cloves (whole and unpeeled, optional)
6 cups green cabbage, cut into 2 inch chunks

Steps:

  • Rub the pork all over with the olive oil, salt, and liquid smoke. Pour the water (broth) in the slow cooker and place the pork on top.
  • Cook on low for 8-10 hours. Add the cabbage in the last 2 hours of cooking. Shred pork with two forks before serving.
