HAMBURGER CASSEROLE WITH RICE



Hamburger Casserole with Rice image

This creamy, cheesy Hamburger Casserole with Rice is an old-fashioned, easy dinner with just 15 minutes of prep! Perfect for busy weeknights!

Number Of Ingredients 14

1 lb. ground beef
1 small onion, diced (or about 1 cup of frozen pre-diced onion for a shortcut)
1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
1 (10.5 ounce) can condensed cream of celery soup, NOT diluted
1 ¼ cups milk
½ teaspoon salt
½ teaspoon dried chives
¼ teaspoon black pepper
¼ teaspoon garlic powder
4 cups cooked rice ((I use 2 packages (8.8 oz each) of Uncle Ben's Ready Rice microwaved according to package instructions))
2 cups frozen mixed vegetables, thawed ((I use a 10-ounce package))
1 cup grated cheddar cheese
1 cup crushed Corn Flakes cereal ((about 1 ¾ c. whole cereal before crushing))
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
  • In a separate bowl, stir together condensed soups, milk, salt, chives, pepper and garlic powder.
  • Add cooked rice, soup mixture and vegetables to the cooked beef. Stir to combine. Transfer to prepared baking dish. Sprinkle cheese over top.
  • In a small bowl, toss together Corn Flakes crumbs and melted butter. Sprinkle over top of the casserole.
  • Bake, uncovered, at 350 degrees F for 30 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving.

This ground beef casserole with rice is the perfect casserole for using whatever you have lying around in your fridge.

1 pound lean ground beef
1 medium green bell pepper, diced
1 medium tomato, chopped
4 tablespoons Worcestershire sauce
1 (28 ounce) can diced tomatoes, undrained
1 tablespoon minced onion
1 teaspoon minced garlic
1 teaspoon dried oregano
1 teaspoon dried basil
salt and ground black pepper to taste
2 cups cooked rice
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell pepper, tomato, and Worcestershire sauce. Cook and stir until pepper has slightly softened, about 5 minutes. Strain 1/2 of the liquid from the canned diced tomatoes into the mixture.
  • Stir diced tomatoes, onion, garlic, oregano, basil, salt, and pepper into the ground beef mixture. Simmer until some of the liquid has reduced, about 10 minutes. Add rice and mix well. Transfer to a casserole dish and sprinkle Cheddar cheese on top.
  • Bake in the preheated oven until filling is heated through and cheese is melted, about 45 minutes.

My grandma used to make this and it was always a hit. She uses American cheese, but I make it with mozzarella. Very easy and yummy!

1 pound ground beef
1 (10.75 ounce) can cream of mushroom soup
1 (14.5 ounce) can diced tomatoes with juice
½ cup long grain white rice
¾ cup shredded mozzarella cheese
salt and pepper to taste

Steps:

  • Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Drain off grease, and stir in the cream of mushroom soup, tomatoes, and uncooked rice. Cover, and simmer over low heat, stirring occasionally, until rice is cooked, about 15 minutes.
  • Preheat the oven's broiler. When the rice is done cooking, transfer the contents of the skillet to a casserole dish. Cover with a layer of cheese.
  • Broil until the cheese is melted and toasty. Season with salt and pepper to taste, and enjoy!

There are just some dishes that once you have tasted the first bite, take you back to childhood in a snap. My Grandfather would use a combination of breakfast sausage and ground beef while my mom always used a full pound of ground beef. Either way, this is a wonderful dish. It would surprise me to hear if anyone had any leftover for lunch the next day.

1 pound(s) ground beef ( you can be creative and use different ground meats)
3 cup(s) cooked, white long grained rice
1 medium onion, finely chopped
2 cup(s) shredded, sharp cheddar cheese ( you can be creative and use what cheeses you have on hand)
- salt and pepper to taste

Steps:

  • On medium heat cook ground beef and onion until ground beef is browned and onion is translucent. Drain grease and salt and pepper to taste. (Season a little heavier than normal - to season the rice)
  • Preheat oven to 350 degrees. In a large mixing bowl combine ground beef mixture, cooked rice, and 1 1/2 cups shredded cheese. Pour mixture in a greased 2 quart casserole dish.
  • Top with remaining 1/2 cup shredded cheese. Bake 20 minutes until cheese is melted and casserole is piping hot.
  • This is perfect with a side salad, or your favorite steamed green veggie.
