"For a fat-free version, leave out the butter and substitute water for the 2 cups milk in the pudding. Since the mix already includes nonfat dry milk, it will still be creamy and calcium-rich."

DRY MIX:
4 cups nonfat dry milk powder
2-2/3 cups sugar
1-1/3 cups cornstarch
1 to 1-1/3 cups baking cocoa
1/2 teaspoon salt
PUDDING (for each batch):
2 cups milk
1 tablespoon butter
1/2 teaspoon vanilla extract

Steps:

  • For mix, sift together all ingredients. Store in an airtight container or resealable plastic bag. , For pudding, combine 1 cup mix with milk in a saucepan. Bring to a boil, stirring constantly. Stir in butter and vanilla. Pour into individual serving dishes. Serve warm.

I am collecting some recipes for homemade mixes. I got some good ones for cakes, but it seems there are so many others that I really like, and want to include in a cookbook for my family. See if you don't think this homemade mix isn't a great idea!!

1 1/2 c brown sugar
1/3 c granulated sugar
3/4 c non-fat dry milk powder
1 c cornstarch
1/2 tsp salt
2 tsp vanilla powder

Steps:

  • 1. Combine all ingredients and store in container with tight-fitting lid. Makes 3 cups mix, yielding 24 servings of prepared pudding.
  • 2. Stir mix well. For two servings, combine 1/4 cup Butterscotch Pudding Mix, 2 Tbsp. butter, and 1 cup milk in a small saucepan. Heat over low heat, stirring constantly, until mixture boils. Boil gently, stirring constantly, for one minute. Pour into serving dishes and chill until thickened.

3/4 c cocoa powder

YOU'LL NEED:
4 c uncooked medium grain rice, divided
2 c granulated sugar, divided
8 cinnamon sticks
2 tsp teaspoons salt, divided
1 tsp ground vanilla, divided
4 jars and 4 ziploc bags or 8 small zip-lock bags
INSTRUCTIONS TO MAKE 4 PACKAGES OF MIX
1 c rice into each container
1/2 c granulated sugar the second baggie for each mix
2 cinnamon sticks in the second baggie for each mix
1/2 tsp salt in the second baggie for each mix
1/4 tsp ground vanilla in the second baggie for each mix
TO USE THE MIX:
1 3/4 c water
1/4 c and 1 tablespoon butter, divided
3 c milk
1 sugar and spice mix

Steps:

  • 1. TO USE THE MIX: Combine 1 cup rice, 1-3/4 cups water, and 1 tablespoon butter or margarine (optional) in 2- to 3-quart saucepan. Bring to a boil; stir once or twice. Reduce heat; cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed. Add 3 cups milk, 1/4 cup butter and 1 sugar-spice mix. Cook over medium heat until thick and creamy (20 to 25 minutes), stirring frequently. Remove from heat; remove cinnamon sticks. Serve warm or chilled. Sprinkle with ground cinnamon and top with whipped cream, if desired. Makes 6 servings.

1 1/3 cups cornstarch

For Vanilla Instant Pudding Mix:
2 cups granulated sugar
2 cups instant clear jel
1/2 teaspoon salt
For Chocolate Instant Pudding Mix:
2 cups granulated sugar
2 cups instant clear jel
2 cups dutch process cocoa powder
1/2 teaspoon salt
To Prepare Pudding:
2 cups of milk (Whole, 2%, 1% or Fat-free Cow's milk, Goat milk, Coconut, Soy, Almond or Rice milk.)
3/4 cup pudding mix
2 tablespoons pure vanilla extract (for the vanilla) or 2 teaspoons pure vanilla extract (for the chocolate.)

Steps:

  • To Make Vanilla Instant Pudding Mix: Add the granulated sugar, instant clear jel, and salt to the carafe of a blender. Fix the lid firmly in place and blend on high for about 30 seconds, or until the ingredients are completely mixed and finely powdered. Let the contents rest about 5 minutes before transferring to canning jars or airtight containers with tight fitting lids. I use a spoon to transfer the mix to prevent powder going POUF in the air. To Make Chocolate Instant Pudding Mix: Add the granulated sugar, instant clear jel and salt to the carafe of a blender. Fix the lid firmly in place and blend on high for about 30 seconds, or until the ingredients are completely mixed and finely powdered. Let the contents rest about 5 minutes before removing the lid and adding the dutch process cocoa powder. Replace the lid tightly and blend on high for about 15 seconds, or until the mixture is a uniform colour. Let the contents rest about 5 minutes before transferring to canning jars or airtight containers with tight fitting lids. I use a spoon to transfer the mix to prevent powder going POUF in the air. Store the mix in the airtight containers in a cool, dark place for up to a year. A cabinet or basement shelf should work well. To Make Pudding from Either Mix: Pour 2 cups of cold milk into a mixing bowl and add the appropriate amount of vanilla extract. Sprinkle 3/4 of a cup of mix over the top and whisk in thoroughly until thickened. If you are having trouble with clumping, you can either pour the contents into a blender and blend on medium until smooth or use a stick blender to break up the lumps and smooth the mixture. It will be soft set immediately, but improves in flavour and texture if it is allowed to rest (with a piece of plastic wrap directly on the surface) for at least 30 minutes. Notes If the pudding is too soft set, you can add extra pudding mix, 1 tablespoon at a time, until it thickens to your liking.

TO MAKE PUDDING MIX:
8 c non-fat dry milk powder
4 c granulated sugar (fine if you have it)
1 vanilla bean, cut into pieces w/seeds ( i use 1 tablespoon of powdered vanilla)
3 c corn starch
1 tsp salt
TO MAKE PUDDING:
1 c pudding mix
3 c cool water*
1/2 c coconut

Steps:

  • 1. TO MAKE MIX: Measure all ingredients into a large bowl, blend well until thoroughly combined. Measure into 12 separate vacuum seal/ Zip-Loc bags, OR small jars for gifting; placing 1 cup of mix into each bag or container. Seal & Store. If used for a gift, don't forget to attach instructions for making the mix into pudding!
  • 2. TO MAKE PUDDING: Combine all in med. saucepan, Stir constantly over low heat until thickened.
  • 3. *NOTE: It is necessary to start with cool water as opposed to warm or hot, as cornstarch does not dissolve as easily in warm or hot water as it does in cold. So...use cool. It takes a little longer, but you will be happier with the final product in the long run! After everything is dissolved, you can turn up the heat a bit if you want to; just keep stirring to prevent scorching or burning!
