For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! 2 cans (15 ounces each) tomato sauce
1 can (12 ounces) tomato paste
1 tablespoon Italian seasoning
1 tablespoon dried oregano
1 to 2 teaspoons fennel seed, crushed
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Cool. , Pour into jars or freezer containers, leaving 1/2-in. headspace. Freeze up to 12 months. Thaw frozen sauce in refrigerator before serving.

1/2 teaspoon dried oregano
3 cloves garlic, minced
1 pinch crushed red pepper flakes
One 32-ounce can crushed tomatoes
1 sprig fresh basil

Steps:

  • Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes. Remove the basil.

  • Stir all well. I use a whisk. Let sit for "a couple-two-tree" hours. What could be easier? You can use this for pasta sauce too with some meatballs and sausage. I put the raw meat in and gently simmer it for an hour or so. It gives the sauce a hearty flavor. You gotta try this one!

2 anchovy fillets
3 cloves garlic, minced

  • Mix red pepper flakes, dried oregano, and tomatoes into olive oil mixture. Bring sauce to a simmer and season with salt, sugar, and black pepper. Turn heat to low; simmer sauce until thickened and oil rises to the top, 35 to 40 minutes, stirring occasionally.
  • Stir baking soda into pizza sauce, mixing until thoroughly combined.

1/2 teaspoon yeast
2 cups unbleached all-purpose flour
1/2 teaspoon salt
2 tablespoons olive oil
1 tablespoon garlic, minced
1/2 tablespoon red pepper olive oil (or red pepper flakes)
4 tablespoons sugar (divided)
1 (14 ounce) can diced tomatoes, drained
1 cup prepared tomato sauce (we used Classico Roasted Garlic)
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1/2 teaspoon basil
1/2 teaspoon oregano
1 bay leaf
salt and pepper, to taste

  • Pre-heat your oven to 500 degrees. If you have a baking stone, put it on a rack in the lower-middle part of the oven.
  • In a small bowl or liquid measuring cup, heat the water until it feels barely lukewarm when you test it with your finger (if the water is so hot that you can't leave your finger in it, wait for it to cool down). Add the yeast to the water and use a fork or whisk to stir it into the water. Set this aside for a few minutes and allow the yeast to dissolve.
  • Measure out the flour into a large mixing bowl. Add the salt and use your hand or a whisk to combine.
  • Make a well in the center of the flour and pour in the water-yeast mixture. Use your fingers or a wooden spoon to combine everything together.
  • When it comes together into a cohesive ball, turn it out onto the counter along with any extra flour in the bowl that hasn't yet gotten worked inches.
  • Knead the dough until all the flour is incorporated and the dough is smooth and elastic to the touch--about five minutes.The dough should still feel moist and slightly tacky. If it's sticking to your hands and counter-top like bubble gum, work in more flour one tablespoon at a time until it's smooth and silky.
  • Use a bench scraper to divide the dough in two. Shape each half into a smooth ball. Set aside while preparing sauce.
  • Heat olive oil in a sauce pan over medium heat. Add minced garlic and red pepper olive oil (or a little extra olive oil, plus red pepper flakes).
  • Saute 2 minutes, or until garlic is golden. Add half of the white sugar, and allow to melt (it might start to look clumpy, don't worry and keep going).
  • Add drained tomatoes and the rest of the white sugar. Cook for 2 minutes.
  • Add the rest of the ingredients (prepared sauce, brown sugar, balsamic vinegar, basil, oregano, bay leaf, salt, and pepper). Lower heat to medium-low and simmer for 20 minutes. You can break up the tomatoes with a wooden spoon, or use an immersion blender if you prefer.
  • Work one piece of the dough in your hands and form it into a large disk. Working from the middle of the dough outwards, use the heel of your hand to gently press the dough outward until it's about 1/4 of an inch thick or less. You can also use a rolling pin for this part.
  • Repeat with the second piece of dough (or freeze it for later).
  • Place pizza dough on baking stone or baking sheet with cooking spray.
  • Spoon a few tablespoons of sauce into the center of each pizza and use the back of a spoon to spread it out to the edges. Pile on all of your toppings except the cheese.
  • Bake for about 5 minutes and then rotate the pizza 180-degrees (most ovens have 'hot spots' your pizza will bake unevenly if it's not rotated). Bake for another 3 minutes and then sprinkle the cheese over the top. Bake for another 2-3 minutes until the edges are golden brown and crispy.
  • Remove your pizza from oven and let it cool on a wire rack for a few minutes before cutting.

1 pound refrigerated pizza dough
2 tablespoons minced garlic (about 2 large cloves)
2 tablespoons grated Parmesan
2 tablespoons chopped fresh parsley
All-purpose flour, for dusting
6 ounces sliced pepperoni
2 1/2 to 3 cups shredded low-moisture mozzarella (about 12 ounces)
Marinara Sauce, for serving, recipe follows
1 tablespoon extra-virgin olive oil
1/4 cup finely diced yellow onion (about 1/2 small onion)
1 teaspoon kosher salt
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons tomato paste
1/2 teaspoon dried oregano
Pinch crushed red pepper
One 26-ounce box chopped tomatoes, such as Pomi

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and lightly grease the foil with olive oil. Remove the pizza dough from the refrigerator and let sit at room temperature for 30 minutes.
  • In a small bowl combine the garlic, Parmesan, parsley and 1/4 cup olive oil. Set aside.
  • Lightly dust a work surface with flour and roll out the pizza dough into a 12-by-14-inch rectangle. Arrange the dough with the 14-inch side parallel to you. With a ruler, mark every 4 inches along the 12-inch side. Cut the dough straight across at the marks to make three 4-inch-wide strips. Brush top of the strips with 1 tablespoon olive oil. Shingle the pepperoni slices over the dough strips. Sprinkle 3/4 to 1 cup of the mozzarella in a line down the center of each strip.
  • Roll up each dough strip into a long log, as you would for cinnamon rolls. It is easiest to begin by folding the bottom of the dough up over the cheese; if there is any cheese sticking out, stuff it back into the roll. Continue rolling the dough over itself until it forms a log with dough on the outside and all of the pepperoni and mozzarella on the inside. Pinch the seams together, then pinch the sides together. Lightly brush the logs all over with olive oil and transfer them, seam-side down, to the prepared baking sheet.
  • Bake until golden brown, 12 minutes. Brush the tops of the logs generously with the garlic mixture and return to the oven for another 3 minutes, until the garlic is very fragrant but not yet browned. Let cool for 10 minutes.
  • Transfer the pepperoni rolls to a cutting board and slice into 1 1/2-inch pieces. Serve immediately with marinara sauce.
  • Heat the olive oil over medium heat in a medium saucepot. Add the onions and salt and saute until softened, 2 minutes. Add the garlic and cook an additional 30 seconds until fragrant but not browned. Stir in the tomato paste, oregano and crushed red pepper; cook 30 seconds to toast the tomato paste and spices. Stir in the chopped tomatoes. Bring the sauce to a boil, reduce the heat to medium low and simmer for 10 minutes, stirring often. Remove from the heat and adjust the seasoning with salt to taste. Keep warm until ready to serve, or cool completely and refrigerate in an airtight container.

1 tablespoon olive oil
1 tablespoon minced garlic (about two or three large cloves)
1 teaspoon dried oregano or 1 tablespoon fresh chopped oregano (if using fresh, add at the end of the cooking time)
2 (14.5 ounce) cans diced tomatoes (undrained) (or 2 pounds diced fresh tomatoes)
1 teaspoon granulated sugar (can substitute honey or agave nectar)
1/2 teaspoon red pepper flakes
1/2 teaspoon kosher salt
Black pepper to taste

Steps:

  • In a medium saucepan over low heat, warm the olive oil.
  • Add the garlic and cook, stirring, for about a minute. If you're using dried oregano, add that along with the garlic. If you're using fresh, add it to the sauce at the end of the cooking time.
  • Increase the heat to medium. Add the tomatoes, sugar, red pepper flakes, salt, and black pepper.
  • Leave over medium heat, stirring occasionally, until boiling. Reduce heat to low for a nice simmer.
  • Gently simmer uncovered for 90 minutes, stirring occasionally.
  • Stir in fresh oregano, if using that instead of dried.
  • Allow the sauce to cool to a safe temperature and then, using an immersion blender or working in batches with a blender, puree sauce.
  • Assemble pizza using your delicious homemade sauce, or refrigerate until ready to use. Keeps well in the fridge for about 4 days. I love to freeze this sauce in individual-pizza portions, too.

300g strong white bread flour , plus extra for dusting
1 tsp instant yeast
1 tbsp olive oil
1 tbsp olive oil , plus a drizzle
2 garlic cloves , crushed
200ml passata
8 mozzarella pearls , halved
small bunch fresh basil

Steps:

  • Tip the flour into a bowl, then stir in the yeast and 1 tsp salt. Make a well in the centre and pour in 200ml warm water (make sure it's not too hot) along with the oil. Stir together with a wooden spoon until you have a soft, fairly wet dough.
  • Tip the dough out onto a lightly floured surface and knead for 5 mins until smooth. Cover with a tea towel and set aside for an hour or so or until the dough has puffed up and doubled in size. You can also leave the rough, unkneaded dough in the bowl, cover with a tea towel and leave in the fridge overnight and the dough will continue to prove on its own.
  • Meanwhile, make the tomato sauce. Put the oil in a small pan and fry the garlic briefly (don't let it brown), then add the passata and simmer everything until the sauce thickens a little. Leave to cool.
  • Once the dough has risen, knead it quickly in the bowl to knock it back, then tip out onto a lightly floured surface and cut into two balls. Roll out each ball into a large teardrop that is very thin and about 25cm across (teardrop shapes fit baking sheets more easily than rounds).
  • Heat oven to 240C/220C fan/ gas 9 with a large baking sheet inside. Lift one of the bases onto another floured baking sheet. Smooth the sauce over the base with the back of a spoon, scatter over half the mozzarella, drizzle with olive oil and season. Put the pizza, still on its baking sheet, on top of the hot sheet in the oven and bake for 8-10 mins until crisp.

I like making this for my hubby because he loves pizza;. unfortunately he gets terrible heartburn whenever he eats it; but he hasn't with this recipe. :), This is done before the pizza delivery would arrive! There is always something to throw on a pizza in your fridge. Top with whatever you like. In my opinion, the more the better; and since it makes 2 - 12 " pizzas put whatever you want on one and make the other one different. I have used this recipe time and time again and my friends/family have secured this one as well. This freezes very well. For freezing instructions, see bottom of directions.

1 (7 g) package active dry yeast
1 cup very warm water (2/3 cold water, 1/3 boiled)
1 teaspoon sugar
1 teaspoon salt
2 tablespoons vegetable oil
2 1/2 cups flour
1 (8 ounce) can tomato sauce (or 1 can of canned tomatoes processed in a food processor)
2 teaspoons dried oregano leaves
1/4 teaspoon salt
1/8 teaspoon instant minced garlic

1/4 cup cream
1/4 cup grated parmesan cheese
mozzarella cheese (to your taste)

Steps:

  • Preheat oven to 425F degrees.
  • Put flour in large bowl with yeast, sugar, salt; stir together.
  • Stir in vegetable oil and mix well.
  • Add water to the flour mixture and beat vigorously 20 strokes; let rest 5 minutes.
  • Divide dough into 2 parts; toss or roll to shape and place on a pizza pan.
  • In a large saucepan combine tomato sauce, oregano, salt, garlic and pepper; bring to a low boil then simmer for about 10 minutes.
  • Remove sauce from heat and stir in cream.
  • Divide sauce between both pizzas to your own desired amounts.
  • Sprinkle parmesan cheese over top and add other toppings BUT NOT mozzarella cheese.
  • Bake pizza in hot 425F oven for about 15 minutes.
  • Add mozzarella cheese and bake for 10 minutes longer.
  • To Freeze: Make pizza as the above directions including baking. Once cooled wrap thickly in plastic wrap, then wrap in foil, seal tightly and I like to wrap once again in plastic wrap. Will last for 3 months in the freezer. To reheat; totally unwrap frozen pizza and put on a pizza pan with holes in it or directly on the rack of the oven (if you use direct racks place foil underneath to prevent overspills). Bake 425F for 10-15 minutes. If you have loads of toppings it could take another 5 minutes or so. Watch it after the 10-15 minutes.

1 tablespoon olive oil
½ cup chopped onion (large chunks)
5 cloves garlic, halved
salt and ground black pepper to taste
1 (28 ounce) can tomato puree
1 ½ cups red wine
⅛ cup chopped fresh basil
⅛ cup chopped fresh oregano
1 tablespoon butter
1 tablespoon white sugar

Steps:

  • Heat oil in a skillet over medium heat; stir in onion and garlic. Season with salt and pepper. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Add tomato puree, red wine, basil, and oregano. Increase heat a touch and bring to a simmer. Cook until sauce reaches desired consistency, 1 1/2 to 2 hours. Stir in butter and sugar; simmer for 10 more minutes. Remove from heat, allow to cool, and refrigerate 8 hours to overnight.
  • For a smooth sauce, remove onion and garlic pieces before spreading sauce on pizza crust. For a chunky sauce, use as is.

2½ cups flour
2¾ tsp. baking powder
¾ tsp. salt
3 tbs. olive oil
½ cup water
½ cup milk
for the sauce:
3 long hot italian peppers - remove seeds and slice
3 red bell peppers - sliced
4 cloves of garlic - chopped
1 sweet onion - sliced
2 cups dried apricots - chopped
28 oz. can of crushed tomatoes
¼ cup red wine
½ cup fresh basil - chopped
½ tsp. red pepper flakes
1 tsp. salt
1 tsp. dried oregano
2 tablespoons olive oil
8 oz. shredded mozzarella or your favorite shredded cheese
romano or parmesan cheese - for grating
cornmeal
more olive oil (for drizzling)

Steps:

  • 1. Dough: Combine the flour, baking powder and salt. Make a well add the water and olive oil. Stir with a fork. Make another well and slowly add the milk; stirring with a fork. If dough is too dry add a touch more water. Try to get it just right. Form into ball. Dust a little flour on a clean surface and knead the dough for 3-4 minutes. Dough should feel soft and springy. Gently roll out the dough.
  • 2. For the Sauce: Heat a cast iron frying pan with the olive oil. Add the sliced peppers, onions, garlic and apricots. Sauté until the onions are clear and the peppers become slightly charred and soften. Add the crushed tomatoes, wine and seasonings. Simmer the sauce on low while preparing the dough. Dust the pizza pan with cornmeal. Roll out the dough to loosely fit the pizza pan. Top with the sauce, shredded cheese, grated cheese and a tablespoon or two of olive oil.
  • 3. Preheat Oven 375 degrees: Bake the pizza until it is golden and beautiful; about 20-25 minutes.

The sauce for this pizza came about when we decided we wanted to try and emulate the white garlic sauce you can get on Papa Murphy's pizza.

1 1/2 cups all-purpose flour (can substitute 1/2 cup whole wheat flour for white)
1/4 ounce yeast (2 1/4 tsp)
1/4 teaspoon salt
2/3-3/4 cup warm water
3 tablespoons alfredo sauce
1 medium garlic clove, minced

Steps:

  • Preheat your oven to 425.
  • Using your favorite dough preparation method (hand, mixer, machine), mix the dough and knead until smooth and elastic. Cover and let stand for 10-15 minutes.
  • While the dough is resting, prep your toppings and mix the garlic sauce. You can use whatever flavor alfredo you prefer, but garlic alfredo gives it that extra little bit of sauce-y goodness.
  • Lightly grease a pizza pan or cookie sheet and spread your dough around by pressing out with your fingers. Or, you could do the fancy flippy flying thing. But I've got low ceilings, so I just press it out -- The pizza can be made into any shape you want. I like to fill the whole cookie sheet, creating a thin crust. My wife prefers crafting a med-thin crusted circle.
  • Spread your prepared garlic sauce on the crust, top with cheese, followed by toppings of your choice (I've been going with ham, black olives, and mushrooms while my wife favors a veggie blend of red onions, olives, mushrooms and bell peppers). Sprinkle a little more cheese over the toppings then straight to the oven.
  • Bake for 20-25 minutes until the cheese is melted and bubbling and the crust is just starting to brown. If you prefer a less crispy crust, lower the temperature to 400 but keep the cooking time the same.
  • Note: If you want your sauce to be extra garlicky, mix it the night before and let it sit in a sealed container in the fridge overnight.
