1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
2 cans (28 ounces each) Italian crushed tomatoes
1 tablespoon Italian seasoning
1 to 2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large saucepan, heat oil over medium heat. Add onion; cook and stir until softened, 3-4 minutes. Add garlic; cook 1 minute longer. Add tomatoes, Italian seasoning, salt, pepper and sugar; bring to a boil. Reduce heat; simmer, covered, 10 minutes.

Extra-virgin olive oil
1 pound refrigerated pizza dough
2 tablespoons minced garlic (about 2 large cloves)
2 tablespoons grated Parmesan
2 tablespoons chopped fresh parsley
All-purpose flour, for dusting
6 ounces sliced pepperoni
2 1/2 to 3 cups shredded low-moisture mozzarella (about 12 ounces)
Marinara Sauce, for serving, recipe follows
1 tablespoon extra-virgin olive oil
1/4 cup finely diced yellow onion (about 1/2 small onion)
1 teaspoon kosher salt
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons tomato paste
1/2 teaspoon dried oregano
Pinch crushed red pepper
One 26-ounce box chopped tomatoes, such as Pomi

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and lightly grease the foil with olive oil. Remove the pizza dough from the refrigerator and let sit at room temperature for 30 minutes.
  • In a small bowl combine the garlic, Parmesan, parsley and 1/4 cup olive oil. Set aside.
  • Lightly dust a work surface with flour and roll out the pizza dough into a 12-by-14-inch rectangle. Arrange the dough with the 14-inch side parallel to you. With a ruler, mark every 4 inches along the 12-inch side. Cut the dough straight across at the marks to make three 4-inch-wide strips. Brush top of the strips with 1 tablespoon olive oil. Shingle the pepperoni slices over the dough strips. Sprinkle 3/4 to 1 cup of the mozzarella in a line down the center of each strip.
  • Roll up each dough strip into a long log, as you would for cinnamon rolls. It is easiest to begin by folding the bottom of the dough up over the cheese; if there is any cheese sticking out, stuff it back into the roll. Continue rolling the dough over itself until it forms a log with dough on the outside and all of the pepperoni and mozzarella on the inside. Pinch the seams together, then pinch the sides together. Lightly brush the logs all over with olive oil and transfer them, seam-side down, to the prepared baking sheet.
  • Bake until golden brown, 12 minutes. Brush the tops of the logs generously with the garlic mixture and return to the oven for another 3 minutes, until the garlic is very fragrant but not yet browned. Let cool for 10 minutes.
  • Transfer the pepperoni rolls to a cutting board and slice into 1 1/2-inch pieces. Serve immediately with marinara sauce.
  • Heat the olive oil over medium heat in a medium saucepot. Add the onions and salt and saute until softened, 2 minutes. Add the garlic and cook an additional 30 seconds until fragrant but not browned. Stir in the tomato paste, oregano and crushed red pepper; cook 30 seconds to toast the tomato paste and spices. Stir in the chopped tomatoes. Bring the sauce to a boil, reduce the heat to medium low and simmer for 10 minutes, stirring often. Remove from the heat and adjust the seasoning with salt to taste. Keep warm until ready to serve, or cool completely and refrigerate in an airtight container.

2 cups fresh basil, washed and de-stemmed
3 tablespoons dried basil
2 fresh onions, chopped
3 tablespoons dried onion powder
6 fresh tomatoes
16 ounces 100% tomato juice (nothing added, just tomatoes)
6 garlic cloves
3 tablespoons dried oregano
3 tablespoons dried rosemary
2 tablespoons dried marjoram
2 tablespoons dried thyme
2 ounces red wine vinegar
8 ounces stewed tomatoes
8 ounces chicken stock
3 cups flour
6 tablespoons extra virgin olive oil
cracked black pepper

Steps:

  • Start with the onions and saute them in 3 tblsp olive oil on a medium heat till translucent, then add the fresh basil and turn down the heat while continuing to stir. Keep cooking the fresh basil to bring out the flavor, but still stirring the onions in the same pan. The basil leaves should be wilted and soft, but not burned. Then, add 3 oz of chicken stock and simmer till most of the liquid has burned off. Set aside.
  • Using a food mill (which can be purchased at specialty kitchen supply stores) separate the seeds and skin from the fresh tomatoes, then with a wooden spoon, stir in all of the dry spices. Then, stir in the onions, olive oil, stewed tomatoes, and fresh Basil mixture. You want to marinate all of this in the refrigerator for a couple of hours. The acids will be infused with the herbs the longer it sits in the refrigerator. Meanwhile, start in on the garlic.
  • Peel off the top layers from the garlic cloves and wrap each one in foil, place in a roasting pan. Roast the garlic under the broiler or a 425F oven for 20 minute Let cool and then unwrap. In a bowl, mash down the garlic with a fork, or potato masher, till it forms a paste, then in a blender with 1 cup of chicken stock, puree the roasted garlic paste till it liquifies. You are now ready to season the Marinara with garlic puree while it cooks.
  • Take the marinated tomatoes and seasonings from the refrigerator and place in a large stock pot or sauce pan. Simmer on a low heat, stirring and gradually adding the red wine vinegar, tomato juice, and remainder of the chicken stock, add in the garlic puree and keep simmering till it comes to a slight boil. After the first boil, is when you add in the flour depending on how thick you want the consistency to be. This Marinara usually simmers 45min to 1 hour, but you can also use a crock pot on low to keep it going longer, if desired. Stir in cracked black pepper to taste.

1 medium onion, chopped

1 cup all-purpose flour
4 large eggs, lightly beaten
2 large eggplants, sliced into 1/4-inch-thick rounds
1/4 cup vegetable oil, plus more if needed

3 cups coarsely grated mozzarella cheese (12 ounces)
3/4 cup finely grated Pecorino Romano or Parmesan cheese (1 1/2 ounces)

Steps:

  • Bread and fry the eggplant: Combine breadcrumbs, pecorino Romano, 1/2 teaspoon salt, and some pepper. Put flour, eggs, and breadcrumb mixture in 3 separate dishes. Dredge eggplant in flour, shaking off excess. Dip in egg, letting excess drip off. Dredge in breadcrumbs to coat. Let stand for 30 minutes.
  • Heat oil in large straight-sided skillet over medium-high heat. (Oil is ready when a breadcrumb sizzles when dropped in.) Working in batches, fry eggplant until golden, about 2 minutes per side. Transfer to a paper-towel-lined baking sheet. (If oil gets too dirty, discard, and heat an additional 1/4 cup.)
  • Assemble the dish: Preheat oven to 375 degrees. Spread 1/2 cup marinara sauce in the bottom of a 9-by-13-inch baking dish. Arrange a layer of eggplant on top, overlapping slightly. Top with 1 cup sauce. Sprinkle with 1 cup mozzarella and 1/4 cup pecorino Romano. Repeat twice to form layers with eggplant, sauce, then cheeses. Cover with foil. Bake until bubbling, about 30 minutes. Uncover, and bake until cheese melts, about 5 minutes more.

1 Prego spaghetti sauce (I use their Four Cheese marinara sauce, or your favorite jarred sauce)
1 (4 ounce) can sliced mushrooms (drained)
1 (14 1/2 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1/8 teaspoon oregano
1/8 teaspoon bay leaf
1/8 teaspoon basil
1 pinch garlic salt
1/2 teaspoon sugar

30 -35 fresh roma tomatoes
2 tablespoons olive oil

1 tablespoon oregano
1/4 cup sugar

  • Blanch and peel the tomatoes.
  • With a blender, blend the tomatoes on a low setting for a couple of seconds Set the tomato puree aside.

  • Add the tomato puree, basil, oregano, sugar, salt, and pepper.
  • Bring the sauce to a boil, then simmer for about 2 hours.

1/4 cup grated yellow onion

Pinch crushed red pepper flakes
One 28-ounce can crushed tomatoes
8 fresh basil leaves, chopped
1 bay leaf
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • In a large skillet, combine the oil, onion, garlic and red pepper over medium heat. Cook, stirring, 3 to 4 minutes. Add the tomatoes, basil, bay leaf, salt and pepper. Bring to a low simmer and then reduce heat to low. Cover and cook about 15 minutes, stirring occasionally. Discard the bay leaf.

8 fresh garlic cloves, finely minced (or more to taste)
1/3 cup fresh basil
1 sprig fresh thyme leaves or 1/2 teaspoon dried thyme
1 sprig fresh oregano or 1 teaspoon dried oregano
2 bay leaves (remove when done)
2 sprigs fresh parsley or 1 teaspoon dried parsley
1 teaspoon sea salt
1 carrot
1 zucchini (chopped)
1 eggplant (chopped)
5 lbs roma tomatoes

Steps:

  • Place all ingredients in a large crockpot.
  • cook overnight on low.
  • Remove sprigs of herbs
  • Next morningpuree all in a food processor.
  • Use fresh or store in the fridge up to 1 week, or can it according to your canner's instructions for tomato products.
  • I freeze this sauce in 1 qt freezer bags.

I use this recipe for alot of different things--I add Italian, basil,& thyme seasoning for a rich speghetti sauce and just italian for pizza sauce. GREAT all purpose recipe.

9(14.5oz) can(s) stewed tomatoes (italian if prefered)
4 1/2(6oz) can(s) tomato paste
1 cup(s) chopped fresh parsley
2 tablespoon(s) chopped fresh parsley
4 1/2 clove(s) garlic, minced
1 tablespoon(s) dried oregano
1-1/2 teaspoon(s) dried oregano
1 tablespoon(s) salt
1-1/2 teaspoon(s) salt
1 teaspoon(s) black pepper
1-2/3 cup(s) olive oil
1-1/2 cup(s) finely diced onion
2-1/4 cup(s) white wine--(this adds to orginal flavor)

Steps:

  • In a food processor place Italian tomatoes & 1/2 tomato paste, then add chopped parsley, minced garlic, oregano, salt, and pepper. Blend until smooth.
  • In a large skillet over medium heat saute the finely chopped onion in olive oil for 3 minutes. Add the blended tomato sauce with remaining sauce and white wine.
  • Simmer for 40 minutes, stirring occasionally. When almost finished get your jars and taps ready.
  • Pour into hot clean jars and seal--use a hot bath for 10 minutes. Take out and turn upside down for 3 minutes and turn upright until cooled--these shoud pop pretty quickly after you turn and they start to cool!
  • I add Italian, basil,& thyme seasoning for a rich speghetti sauce and just italian for pizza sauce.
