- Bring the water, white sugar, and brown sugar to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and stir in the maple extract; simmer 3 minutes longer.

PEGGI'S OLD FASHIONED HOMEMADE MAPLE SYRUP
I make this syrup all the time now & have for the past 20 years. We like it better than storebought. Hope you do as well. I have it pictured here in my antique "Big Chief" syrup bottle.

- 1. Place all but maple flavoring in a medium saucepan, start to cook over medium heat but, turn temperature down just when it reaches a boil.
- 2. Simmer just 7 minutes and remove from heat.
- 3. Cool slightly and add maple flavoring.
- 4. Once cool enough, place in an old syrup bottle, Mrs. Butterworths size works really well. Glass is better.
PERFECT PANCAKES WITH HOMEMADE MAPLE SYRUP
These are the absolutely BEST pancakes. I know we all have our basic recipes. But I truly think the cake flour is what makes these so good.

- Mix together dry ingredients in large bowl. Mix together milk, eggs, and vanilla in a separate bowl. Add wet ingredients to dry ingredients, stirring very gently until just combined. Melt butter (I let this cool slightly) and add it to the batter, stirring gently to combine.
- Cook on a greased skillet over medium-low heat until golden brown.
- What makes these even better is using Homemade Maple Syrup: Boil for 8 minutes in a saucepan, 3 cups sugar, 1 1/2 cups water, 1/2 tsp. maple extract, and 1 tsp. vanilla extract. Tastes delicious, then I just store in an old syrup container I saved.

HOMEMADE MAPLE SYRUP COOKIES
These are faintly sweet, with a hint of maple syrup flavoring. You can add a small extra amount of maple syrup for more flavoring. Got this recipe while shopping at Amish Acres here in Indiana.

- Preheat oven to 350 degrees.
- Dissolve baking soda in the milk in a small bowl, and set aside.
- In a large bowl, mix the egg, shortening, syrup, flour, baking powder, salt, and vanilla in that order until fluffy and combined.
- The dough will be very thick, and sticky. Add the soda mixture and mix well until fully blended.
- Drop the dough by rounded teaspoonfuls 2 inches apart on an ungreased baking sheet.
- Bake until the cookies are set, and are honey brown about 10-12 minutes.
- Let the cookies cool for a couple minutes, then remove from baking sheet.
- The cookies will remain soft when stored in an airtight container.
