8 pods green cardamom, cracked
1 tablespoon fresh ginger, grated
1 cup demerara sugar (raw sugar)
1/2 cup water
1 lime, zest of
1 1/2 ounces lime juice, fresh
sparkling water, club soda or sparkling cider

Steps:

  • In a small, dry pot, toast cardamom over medium heat until fragrant.
  • Remove the pot from the heat. Add ginger, sugar, water, and lime zest. Place back on heat and simmer until sugar is dissolved, about 5 minutes. Cool syrup; strain and discard solids.
  • In a cocktail shaker(or a jar with lid), add 1 oz. syrup (or to taste) and lime juice. Add ice and shake to blend. Divide between two tall glasses, filled with ice.
  • Top with sparkling water, club soda, or sparkling cider. Stir gently and serve immediately.
  • Enjoy!

I'm just beginning to explore the fascinating world of traditional Indian beverages. One of the most refreshing I've discovered to date is panakam, typically made during the Hindi festival Sri Rama Navami. If you can imagine a frosty cold, light, bright ginger beer, you'll have an idea of its taste. I make my version sparkling, and because the traditional jaggery is sometimes hard to come by (and slow to dissolve), I use whatever full-flavored, fine-grain, natural cane sugar I have on hand-muscovado works nicely. This version is also dialed back as far as sweetness goes; some versions I've come across use double or even triple the amount of sugar. Feel free to adjust the sweetness to your liking.

Yield Makes 4 cups/1 liter

Number Of Ingredients 7

1/4 cup/1.25 oz/35 g fine-grain natural cane sugar or muscovado sugar
2 teaspoons ground ginger
1/8 teaspoon ground cardamom
1 tablespoon fresh lime juice
1/8 teaspoon fine-grain sea salt
4 cups/1 liter sparkling water, chilled
Ice cubes

Steps:

  • In a medium pitcher, make a thick paste by stirring together the sugar, ginger, cardamom, lime juice, salt, and a small splash of the sparkling water. Stir until any lumps have dissolved. Add more water, a little at a time, stirring all the while. The mixture will get quite fizzy, so just take it slow. Serve as cold as possible with as many ice cubes wedged into the pitcher as possible.

Number Of Ingredients 6

1 cup minced ginger
1 cup water
1 cup freshly squeezed lime juice
1 cup sugar (to taste)
chilled water or Sprite, to mix
mint leaf, for garnish

Steps:

  • Mix the 1 cup of water with the ginger and squeeze through a strainer to get ginger concentrate.
  • Add sugar and lime juice.
  • Stir until all the sugar is dissolved. (If you like it sweeter you can add more, to taste, at this point.).
  • Pour into bottles and refrigerate. Chill well.
  • When ready to serve, add a teaspoonful of concentrate to chilled water or sprite and mix well.
  • Serve garnished with a mint leaf.
