EASY CUCUMBER PARTY SANDWICHES



Easy Cucumber Party Sandwiches image

These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

1 (8 ounce) package whipped cream cheese with chives
½ cup sour cream
½ cup mayonnaise
1 (1 ounce) package ranch dressing mix (such as Hidden Valley Ranch®)
1 ½ teaspoons dried dill weed
1 (1 pound) loaf thinly sliced white bread
1 cucumber, thinly sliced
¼ cup snipped fresh dill leaves, or as needed

Steps:

  • Mix cream cheese, sour cream, mayonnaise, ranch dressing mix, and dried dill in a bowl until creamy and smooth.
  • Cut crusts from bread slices; cut sliced bread into decorative shapes (such as rounds or flowers) with cookie cutters. Spread each piece of bread with cream cheese mixture and top with a cucumber slice. Top each canape with a few fresh dill leaves.

2 cucumbers, thinly sliced
1/2 onion, sliced
1/2 cup ranch dressing
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dill (optional)

Steps:

  • After slicing cucumbers, add salt and pepper. Add onions, dressing and dill.
  • Marinate for at least 30 minutes before serving.
  • Enjoy!

4 large cucumbers, sliced
salt and ground black pepper to taste
½ cup half-and-half
½ cup sour cream
½ cup mayonnaise
5 large green onions, thinly sliced

1 ½ tablespoons white sugar
1 tablespoon dried dill weed
1 teaspoon celery salt
2 teaspoons lime juice

Steps:

  • Arrange cucumber slices in a large bowl, generously seasoning each layer of cucumber with salt and pepper. Cover bowl with plastic wrap and refrigerate for 3 hours.
  • Drain liquid from cucumbers. Gently press cucumber slices with paper towel to absorb any remaining liquid.
  • Stir half-and-half, sour cream, mayonnaise, green onions, ranch dressing mix, sugar, dill, celery salt, and lime juice together in a small bowl; pour over cucumber slices and gently stir to coat.

MIXED-BEAN CRUDITE WITH CUCUMBER RANCH DRESSING



Mixed-Bean Crudite with Cucumber Ranch Dressing image

1 teaspoon salt
1/4 pound snow peas
1/4 pound sugar snap peas
1/4 pound wax beans
1/4 pound purple beans
1/4 pound haricots verts
1 medium cucumber, peeled and halved lengthwise
1 tablespoon finely chopped shallot
3/4 cup sour cream
1/4 cup buttermilk
1/4 cup mayonnaise
3 1/2 tablespoons fresh lemon juice, about 1 lemon
3 1/2 tablespoons coarse salt
3 tablespoons each finely chopped fresh flat-leaf parsley and fresh chives

Steps:

  • Bring a large pot of water to a vigorous boil. Add about a teaspoon of salt.
  • Snap off the ends of all the beans, leaving the tail on if desired
  • Cook beans and peas in separate batches, starting with the snow peas and ending with the haricots verts, just until color is brightened and they are crisp-tender. They should bend without snapping but not be at all limp, 30 to 60 seconds. Remove with a slotted spoon and immediately plunge into an ice-water bath.
  • Once beans have cooled completely, drain in a colander, shaking to remove as much excess water as possible. Spread them on a clean kitchen towel and gently pat away remaining moisture. Loosely wrap vegetables in the towel and chill for up to 2 hours.
  • To make dressing: Grate cucumber on the large holes of a box grater.
  • In medium bowl, mix together cucumber shallot, sour cream, buttermilk, and mayonnaise. Add fresh lemon juice, salt, parsley, chives, and cayenne pepper. Season with more salt and cayenne, if desired.
  • Arrange vegetables on a platter and serve with dressing for dipping.

1 medium cucumber, peeled, halved lengthwise, seeded and grated on large holes of box grater
1 tablespoon shallot, finely chopped (or green onion)
3/4 cup light sour cream
1/4 cup low-fat buttermilk
1/4 cup mayonnaise
1 -3 tablespoon fresh lemon juice
1 1/4 teaspoons salt
1/2-1 teaspoon sugar (optional)
1 pinch cayenne pepper
1 -3 tablespoon flat leaf parsley, finely chopped
2 -3 tablespoons fresh scallions, finely chopped (or chives)
1/2-1 tablespoon fresh dill (or 1/2 tsp. dried) (optional)

Steps:

  • Stir together cucumber, shallot, sour cream, buttermilk, mayonnaise, lemon juice, salt, sugar, cayenne, parsley, scallions and dill, if using, in a bowl. Add additional salt and cayenne if needed.
  • The dressing can be refrigerated in an airtight container for up to 3 days. Enjoy!
